Sweeeeeeeeet!

Hi hi!

Getting to know the hospital today was exciting. It’s one of North Carolina’s biggest and everyone who I tell that I’m going to be working there raises their eyebrows and says “Wow, you are going to learn SO MUCH.” I’m not exactly sure what they mean, but I think I’m going to see a wide variety of patients.

In fact, as I was finishing my lunch today I heard a really loud noise and there was a helicopter taking off just above me from the rooftop. I hope whoever was in it will be OK :(

But before clinical starts, I’ve got more fun in corporate wellness!

I ate my yogurt for a snack around 4PM but never got to that Larabar. I’m going to have it tomorrow!!

I came home and found Matt knee-deep in gnocchi!!!

Those would be Cinnamony Sweet Potato Whole Wheat Gnocchi!!

Sassy Sweets (the NC Sweet Potato Blog) is doing their Bloggers Recipe Challenge again this year. Remember last year I entered my Nutty Vanilla Sweet Potato and Kale Soup and was one of the $100 winners? They are doing it again and this is my entry! Not exactly the “quickest” recipe, but certainly delicious and creative! Actually, I gotta give most of the props to Matt – he invented and executed it! I’m just the talent ;)

The kale was maple scented and lightly steamed.

I have no idea what the nutritional information on these gnocchi are, but I bet they are more calorie-dense than one might think. I’d recommend serving them with a fresh veggie :)

I do think that the giveaway method was a genius idea!!
And the gnocchi sounds fabulous… I’ve found that kale and sweet potatoes go amazingly together! The sweet of the potato balances out the kale. YUM!

What a gnocchi guy he is!

I worked in a large medical area here in Boston and the first time I saw the copter land on the pad, it was incredible how powerful that machine is. We would see them land about 5x a day! Scary to think of all the trauma that is involved in the landings though.

What an interesting take on gnocchi! I hate how the actual flavor of pasta can be so bland sometimes, but it sounds like this pasta is anything but! I never thought of subbing sweet potatoes for regular potatoes into gnocchi dough.

The gnocchi sound amazing! I’ve actually never had gnocchi but if it’s like pasta, it should be good :)

My mom just started working in a hospital and she says there IS a lot you learn from working with different patients. I can’t wait to start clinical rotations :)

I do love that giveaway method! aaaand I LOVE the idea of those gnocci!! I have been toying with the idea of making sweet potato gnocci for a while…sooo…I think I will have to soon. These look unbelievable.

Your clinical rotation sounds awesome! I’ve heard that the clinical rotation offers the most experience in many dietetic internships. :D

I tried making gnocchi with the leftover mashed potatoes from Thanksgiving (back in November not recently haha). I didn’t add nearly enough flour though so it was ooey gooey. Still fun to make though….for the first 5 minutes….before my hands were covered in dough hehe.

Actually I have to be realllllllly careful what I say on the blog :( I can’t even speak anonymously about patients because if their family were to read and know the case I’m talking about, it could technically be tracked back. I know it’s a bummer because I’d like to share lots of things, but I’ll have to be pretty vague.

That gnocchi looks delicious! Gnocchi is my fave. :)

I hear you on the unhealthy choices at the hospital cafeteria (there’s a McDonald’s at the Vanderbilt University hospital?!?) but, unfortunately, I feel like a cafeteria has to have at least a few “less healthy” options or else lots of people will complain and fewer people will eat there. They changed the cafeteria at my company’s corporate headquarters to an all-healthy one, and the employees there grouse and complain about it all the time and I hear it isn’t busy at all. I, who work at a different location, would LOVE that cafeteria and am super jealous! They’re just mad they took away their burgers and fries. :)

Hi Kath! I have been reading your blog for months now and never comment, but decided to today because of this post. I made your Nutty Vanilla Sweet Potato + Kale soup TONIGHT actually and it was fantastic, and super easy! My first try at kale also and loved it. I really enjoy reading your blog — a friend suggested I read it because she said you reminded her of me because of your love of oatmeal, nutrition, and a husband named Matt! My morning oatmeal has gotten much more creative and I have made several of your recipes (and some of Matt’s bread recipes, since I am obsessed with bread)! Keep up the good as I will continue reading as long as you continue writing!

sweet potatoes (or yams as we call ‘em)
and kale are two superfood staples
in my house.
my dad wants to give these a try,
but he’s on a strict NO SAT. FAT diet -
do you know what would substitute the butter best?

Yes, I would just sautee in cooking spray. Or just some oil and no butter. The butter was more for flavor and is totally optional.

I love ssweet potato skin! My mum always leaves it which I think is mad cos it’s one of the best bits IMHO!!

ah gnocchi…..thank you so much for posting the recipe, i am going to make this tonight.

i loved helicopters when i was little. i always wished i had some kind of disease or got into some kind of terrific accident so that i could ride in them.

I love gnocchi. Plus, since it’s sweet potato and whole wheat based, you’re getting even more nutrients in! A much superior gnocchi to the standard semolina flour and white potato version!

I spent quite a bit of time at that hospital two summers ago when my dad was in a car accident. I was pleasantly surprised by the variety of choices in the cafeteria as well! Not that I’ve spent much time in hospitals, but I didn’t expect for there to be such an array of food.
