Hi hi!
Getting to know the hospital today was exciting. It’s one of North Carolina’s biggest and everyone who I tell that I’m going to be working there raises their eyebrows and says “Wow, you are going to learn SO MUCH.” I’m not exactly sure what they mean, but I think I’m going to see a wide variety of patients.
In fact, as I was finishing my lunch today I heard a really loud noise and there was a helicopter taking off just above me from the rooftop. I hope whoever was in it will be OK
But before clinical starts, I’ve got more fun in corporate wellness!
I ate my yogurt for a snack around 4PM but never got to that Larabar. I’m going to have it tomorrow!!
I came home and found Matt knee-deep in gnocchi!!!
Those would be Cinnamony Sweet Potato Whole Wheat Gnocchi!!
Sassy Sweets (the NC Sweet Potato Blog) is doing their Bloggers Recipe Challenge again this year. Remember last year I entered my Nutty Vanilla Sweet Potato and Kale Soup and was one of the $100 winners? They are doing it again and this is my entry! Not exactly the “quickest” recipe, but certainly delicious and creative! Actually, I gotta give most of the props to Matt – he invented and executed it! I’m just the talent
For all the details of the recipe: Sweet Potato Gnocchi.
My afternoon snack was the sweet, sweet SKIN!
And now for the main event -
The kale was maple scented and lightly steamed.
I have no idea what the nutritional information on these gnocchi are, but I bet they are more calorie-dense than one might think. I’d recommend serving them with a fresh veggie
Siggi’s Winners!
Blindly picked!! I’m not sure how many Twitter entries there were, but I got 290 emails! (Thanks to those of you who wrote personal emails – wish I had time to read them all!)
Winners are @CEgoodner and Natalie!! Guys, please email me to Katheats at Gmail dot com with your mailing address!
[PS. I thought the giveaway method worked great!]

I do think that the giveaway method was a genius idea!!
And the gnocchi sounds fabulous… I’ve found that kale and sweet potatoes go amazingly together! The sweet of the potato balances out the kale. YUM!
What a gnocchi guy he is!
I worked in a large medical area here in Boston and the first time I saw the copter land on the pad, it was incredible how powerful that machine is. We would see them land about 5x a day! Scary to think of all the trauma that is involved in the landings though.
What an interesting take on gnocchi! I hate how the actual flavor of pasta can be so bland sometimes, but it sounds like this pasta is anything but! I never thought of subbing sweet potatoes for regular potatoes into gnocchi dough.
Sweet potato gnocchi sounds divine! Enjoy the night!
The gnocchi sound amazing! I’ve actually never had gnocchi but if it’s like pasta, it should be good
My mom just started working in a hospital and she says there IS a lot you learn from working with different patients. I can’t wait to start clinical rotations
I do love that giveaway method! aaaand I LOVE the idea of those gnocci!! I have been toying with the idea of making sweet potato gnocci for a while…sooo…I think I will have to soon. These look unbelievable.
Love, love LOVE gnocchi! Sweet potato gnocchi sounds like a lovely idea.
Your clinical rotation sounds awesome! I’ve heard that the clinical rotation offers the most experience in many dietetic internships.
Oh the gnocchi looks amazing! Congrats to you guys for developing the recipe. I hope you win!
My family loves to make gnocci and as a joke everyone got gnocci rollers for Christmas. I’ll have to introduce this recipe while I’m home this weekend!!
Thank you thank you thannnnk you! I have been searching for a whole wheat sweet potato gnocchi forever!
I’m so jealous of all the hands on learning you’re getting right now! I’ve pondered going back to school but I don’t think that’s going to happen. Guess I’ll just have to live vicariously through you ;> Ya’ll are always so creative for dinner! I’m like, whatever’s easy and quick!
OMG love gnocchi and sweet potato gnocchi sounds delish!!
That dinner looks awesome! And I’m glad the giveaway method worked out, but it means that readers don’t get to see all the entries’ responses–that’s a large part of the fun for me. I’m a little sad it’s gone…
Yes, I hate that too. But at least you can on Twitter!?
it boggles my mind that people make homemade gnocchi! awesome!
I tried making gnocchi with the leftover mashed potatoes from Thanksgiving (back in November not recently haha). I didn’t add nearly enough flour though so it was ooey gooey. Still fun to make though….for the first 5 minutes….before my hands were covered in dough hehe.
Great job, Matt! Wow!
Great idea on the gnocchi. I like the mix of sweet potatoes and whole wheat.
What a great looking dinner!
I’m so glad you’re feeling good about the hospital! That will make all the difference in your rotation!
That sounds so delicious. I’m glad the hospital seems great–I predict lots of stories.
Actually I have to be realllllllly careful what I say on the blog
I can’t even speak anonymously about patients because if their family were to read and know the case I’m talking about, it could technically be tracked back. I know it’s a bummer because I’d like to share lots of things, but I’ll have to be pretty vague.
Your gnocchi looks delicious!!
mm. looks good!
I love sweet potato gnocchi, it’s SO good!
oh my goodness that gnocchi looks AMAZING!!!!!
Cool! Will you be in the ICU? that would be awesome.
I can’t wait to try that gnocchi idea! I’m so glad you’re liking NC! It’s a great state! And that’s coming from a Carolina girl, born and bred!
I’ve lived here my whole life too!
That gnocchi looks awesome! I’m definitely giving it a try when I have some time! No worries about keeping the confidentiality at the hospital! We all understand – just enjoy your time there!!!
That gnocchi looks delicious! Gnocchi is my fave.
I hear you on the unhealthy choices at the hospital cafeteria (there’s a McDonald’s at the Vanderbilt University hospital?!?) but, unfortunately, I feel like a cafeteria has to have at least a few “less healthy” options or else lots of people will complain and fewer people will eat there. They changed the cafeteria at my company’s corporate headquarters to an all-healthy one, and the employees there grouse and complain about it all the time and I hear it isn’t busy at all. I, who work at a different location, would LOVE that cafeteria and am super jealous! They’re just mad they took away their burgers and fries.
That gnochi looks and sounds so good!!! I’ve always wanted to try to make it, nothing beats homemade gnocchi!
Fabulous foods, of course! Enjoy Gossip Girl!
Ooooh, that gnocchi looks so good!!! SO funny that you ate the skin as a snack
yum, i’d love to make gnocci sometime soon! i have a feeling the real homemade deal probably tastes a lot better that the store-bought stuff
That kale looks perfect! Love that your hubby is so handy in the kitchen! Mine is worthless!!!
I bet the gnocchi would taste good with a hint of maple as well!
The gnocchi looks amazing! I love the flavor combinations you chose. And thanks for the detailed instructions!
Hi Kath! I have been reading your blog for months now and never comment, but decided to today because of this post. I made your Nutty Vanilla Sweet Potato + Kale soup TONIGHT actually and it was fantastic, and super easy! My first try at kale also and loved it. I really enjoy reading your blog — a friend suggested I read it because she said you reminded her of me because of your love of oatmeal, nutrition, and a husband named Matt! My morning oatmeal has gotten much more creative and I have made several of your recipes (and some of Matt’s bread recipes, since I am obsessed with bread)! Keep up the good as I will continue reading as long as you continue writing!
Thanks!
I loooooooove gnocchi! Sweet potato gnocchi sounds and looks fabulous.
Jenn
kath those gnocchi sound AMAZING!!!
sweet potatoes (or yams as we call ‘em)
and kale are two superfood staples
in my house.
my dad wants to give these a try,
but he’s on a strict NO SAT. FAT diet -
do you know what would substitute the butter best?
Yes, I would just sautee in cooking spray. Or just some oil and no butter. The butter was more for flavor and is totally optional.
Aww, it looks like the kale is hugging the gnocchi!!
Hope Gossip Girl was good – it’ll be ages before we get that season in Australia…
I love ssweet potato skin! My mum always leaves it which I think is mad cos it’s one of the best bits IMHO!!
I’m glad you’re enjoying your rotation so much; it’ll probably fly by!
ah gnocchi…..thank you so much for posting the recipe, i am going to make this tonight.
i loved helicopters when i was little. i always wished i had some kind of disease or got into some kind of terrific accident so that i could ride in them.
à bientôt
the paris food blague
That gnocchi looks awesome!
I also eat the skin from sweet potatoes and people seem to think it is weird. I like it
Those sweet potato gnocchi look wonderful! Cinnamon sounds like the perfect touch. Best of luck with the entry!
Mmm I love gnocchi. I made a whole wheat sweet potato version a few weeks ago and I really liked the sweetness of them! Looks like a fabulous dinner. Have a great day!
Mmm those gnocchi sounds wonderful!!!! YUM!
I love gnocchi. Plus, since it’s sweet potato and whole wheat based, you’re getting even more nutrients in! A much superior gnocchi to the standard semolina flour and white potato version!
I spent quite a bit of time at that hospital two summers ago when my dad was in a car accident. I was pleasantly surprised by the variety of choices in the cafeteria as well! Not that I’ve spent much time in hospitals, but I didn’t expect for there to be such an array of food.
