I have been multitasking out the wazoo this morning and have gotten so much completed! And just in time for a walk before lunch. It was glorious out there, and I took Fit Pregnancy with me. What a helpful magazine! So many topics I’m interested in. And lots promoting exercise, which made me feel proud because I was out doing it while I was reading about the benefits!
I also got really excited about making a superfoods nutritious lunch! My old eating habits are creeping back, bit by bit. So glad!
I made it home just in time for my stomach to growl and lunch to be assembled in 5 minutes flat.
The entrée was a “quesadilla” made from a whole wheat tortilla, leftover frittata slices and smashed avocado. Something about my pregnancy palate LOVES tortillas with egg and avocado. And to be honest, bread doesn’t taste as good to me as it used to.
Side dishes included the most amazing champagne mango (why didn’t I buy more than one!?) and some organic strawberries.
Juice-spiked water to sip
My afternoon is filling up fast – and I have yet to SHOWER! A very important part of every day.

i was just thinking “i should buy a mango today.”
What a cool plate! And I’m loving having strawberries come back into season – sooo good!
Oh wow, what a colourful lunch! I’ve been going crazy with the egg and avo combo as well. Gorgeous lunchtime photography today Kath – the bright colours look awesome!
Wow, that mango is so bright and colorful! Your lunch looks delicious. I’m impressed that you can walk and read a magazine at the same time – I’m positive I would trip and completely wipe out, haha.
what a COOL dish!! i love the unique shape of it and color. good choice on the mango! i need to buy some… i love the stuff.
your superfoods lunch looks sooooo good! and I need to buy some mango, I keep seeing it on blogs and it’s my favorite fruit! Also, I love listening to my Marathon Training Academy podcasts while I’m running! It makes me feel so productive, and awesome for running! haha
I love how vibrant your dish looks! It looks super yummy and nutritious!
That gingko leaf plate is so pretty. And can you please explain to me what the heck a champagne mango is? I’ve heard a few bloggirls mention them lately, but I’m clueless. How are they different from regular mangoes?
I don’t really know the technicality of it – it tastes like a regular mango to me! They are a bit smaller though and maybe sweeter?
[I think most people prefer them]
I’ve been all about Mangos lately! I need to pick up some more because they taste good on just about everything. Love them on turkey burgers and sandwiches!
I love your plate! The shape and color is beautiful!
I like how vibrant your lunch is. Yummy!
I have been craving mangoes bad lately but the ones here right now are very sad looking. I bought one last weekend and thought it might be okay but as soon as I cut it open – all brown! Yuck!
Your mango looks delicious! I love it when they are perfectly ripe. Unfortunately, I seem to be good at picking the ones that aren’t quite so tasty.
I want your lunch!!
I love eggs and avocado no matter what!
I was just looking at the mango in my fruit basket going “I REALLY need to use this!” Thanks for the kick to either eat it like you did or cut it up and freeze it for smoothies!
Mango season is just creeping up in Mumbai- excited after seeing the pics above
Looks so delicious and so colorful!
I love that green plate! A fritata quesadilla sounds so delish – def want to recreate this one!
I think champagne mangoes are on sale this Friday at Whole Foods in C-Ville!
These photos are amazing! The colors! The plate! I just love it all….
Good luck with your nutrition talk this evening.
Champagne mangoes are the BEST! I remember discovering them in Massachusetts in August 2008 (yes, the memory is that strong, haha).
Every time I see a mom with a little boy lately I think of you
Love your green plate!
Cool plate Kath! I love how you refer to the Mommy Palate! Too cute!
love those champagne mangos from whole foods!!
Love the plate!! I have the worst luck with mangos, I’ve lost track of the times I’ve cut one open only to find it either isn’t ripe or is rotting
you are just so creative with leftovers! never would think eggs to be good in leftover form, but i think anything smushed between a tortilla with lots of cheese is bound to be delicious!
how did you slice up your mango so nicely? every time i try to do it i end up with bizarre little pieces because I can never figure out where the core is and how to make sure i get all the good fruit!
I use a serrated knife to peel off the skin. Then I slice off the cheeks. And then the edges. I have a video about it, although I no longer use a peeler and use the knife instead (cleaner cuts)

What a glorious lunch! Fab colors. Please send your good weather this way!
Everything about this lunch looks wonderful! But especially the mango!
Quesa-less-dilla? Love it
That champagne mango is about the most gorgeous fresh mango I’ve seen in year(s)! Wow!!
Where did you find it? I need it. Whatever mango you get, will not be the same mango I get, all the way from your area to San Diego (and locally grown mangoes are still a bit away here) but omg I want that mango!
Whole Foods!
I LOVE that plate! So fun!
Champaigne mangos? Why have I never heard of these before?’
Yup, bathing is a little important
I might not be expecting but your lunch sounds sort of amazing..!
Ooh, I forgot to get mango today and that looks incredible. Actually that lunch looks really good.
LOVE that last pic. Gorgeous food and setting!!
gorgeous lunch! tons of color… looking more like your ‘regular’ meals every day!
Hmm, mango. But I’m on vacation, so maybe I’ll have to take mango ice cream instead.
Lunch looks yummy!
I got my daughter a subscription to Fit Pregnancy when she was pregnant last year. She loved it, too.
I wish I liked mango! It always looks so refreshing.
Also? That “quesadilla” looks SO good! Eggs make such a great lunch.
Wow your lunch looks fantastic! All I can think about now is wanting a mango
yours looks 100 times better than the ones I have had recently.
I loved avocadoes during my first pregnancy. However, I got sick on one during this pregnancy, and can only eat avocadoes in smoothies. They are so good for the baby and I, and I wish I could eat them in other things, and not just smoothies. Oh well

We LOVE champagne mangoes! I need to go to Sam’s to see if they have them. I want to devour your lunch, the pictures are gorgeous. I did have mango and strawberries today, but I don’t know if they were as delicious as yours look. We have leftover Mexican tortilla casserole and carne asada tamale casserole that will be topped with homemade guac and avocado. Fit Pregnancy is a very informative magazine. Is bread becoming too filling or does it taste different than it did before? Thanks for being honest about everything, that’s one reason I love your blog!
It tastes too….savory!? Once I’m eating it it’s good, but it’s the thought of it that is less appealing. It hasn’t been too much of an aversion, as I’ve had a handful of sandwiches in the past few months, but just something about it plain that isn’t ideal
I’m confused, were you reading the magazine while walking outside? That sounds dangerous!
Yeah!!! I just use peripheral vision and walk on sidewalks
The photos JUMP off the page. Medley of colors!
They have had great champagne mangos at Costco lately. 6 mangos in a cute little clamshell.
I’ve never thought of eggs and avacado…do they go very well together? Or is it just a pregnancy craving?
They do!
I’m 7 weeks preg and have been wondering if it’s too early to buy Fit Pregnancy – I’ve always been excited to get to the point where I can read that mag! Would you say it applies to the early parts of first trimester, or advise to wait until I’m farther along to start reading?
I had almost the exact same lunch today
Nope! They have first tri info in there too, and it’s never too early to learn about the second tri in advance.
where in the world can you get those awesome jars?!
We got them at the Lagunitas brewery in California, but they might be online somewhere too?
i like that you are still getting the champagne in your diet while being preggo
Hahaha
Oh that looks soooooo good! Minus the mango…something about them makes my mouth all dry. I tend to avoid them…love the strawberries though. Can’t wait to go picking!
I’ve heard that the skin has a chemical in it in the poison ivy family…maybe you are mildly allergic?
I wouldn’t be surprised…I live in a house full of food allergies! I have heard about the relationship between fruits and trees…thanks for the tip!
I love he gingko leaf shaped plate!
Oh, that looks so delicious and colorful. I love that plate, too.
I’m glad you are starting to feel like yourself again.
Strawberries have been making up my side dishes half of the time lately, I love them! But they go fast. Too fast! haha
I lived on tortillas, eggs and avocados while pregnant. For some reason they tasted better than ever. I just bought Organic Strawberries yesterday and for once they tasted really good. At this time of year it’s really hit or miss on finding good ones. They still don’t compare to summer strawberries, though!
GINKGO!! I took a plant identification class in college. We pretty much just walked around campus learning the names (Latin and English) and our profs pet peeve was the misspelling of ginkgo. Your plate always makes me think of that.
I just showered a little bit ago myself. And that mango LOOKS good – I should buy one!
I love the plating! It looks beautiful!
It’s so interesting how your palate changes during pregnancy, and while breastfeeding (for me)..
That quesadilla looks FANTASTIC
Hope it tasted just as good!!!
Your plate is bursting with color, it looks deliciously beautiful!!! SUPER plate
