It’s been a super productive morning around here!!

Presentation finished (I’m actually excited to present it!)

BERF posts written.

CRIB ORDERED! [It was finally back in stock! Although now it’s out of stock again, which worries me that my order will come back cancelled!] Uggggg Wal-Mart just cancelled my order :(

Headache mostly gone!!

11am snack –

Around 12:30 I figured I should eat lunch. I was getting that hungry feeling, yet my appetite is just off this week. I’m not really nauseous, but just not interested in eating much. Yet I’m still hungry!

I decided on two scrambled eggs, which ended up tasting delicious. I like scrambled eggs best when the yolk and white don’t completely mix, so I don’t whisk them together in a bowl first – I just dump the eggs in a skillet, poke the yolks and slide the whole thing around in the pan with a spatula. Perfectly unmixed eggs! [Also saves washing a bowl!]

Apple + chips on the side. Love these red, hot + blues.

My favorite Honest Tea to sip

And despite eating this an hour ago, I’m hungry again! Not sure what I’m gonna do about that…

Have a great afternoon!

Pretty tulips! I love the two-tones varieties.

Congrats on the crib-ordering! I’m sure your nursery is going to be adorable. :)

2 Anjali @ The Picky Eater March 22, 2012 at 1:20 pm

I love scrambled eggs when the yolks & whites don’t fully mix too! :) Love your tablecloth btw!

3 Stephanie @ Legally Blinde March 22, 2012 at 1:22 pm

Wow, sounds like a really great morning! That crib is gorgeous – I really hope your order doesn’t get canceled!! I like your tip about not scrambling the eggs before putting them in the pan; I’m always a fan of having less dishes to wash :)

4 Caroline @ After Dinner Dance March 22, 2012 at 1:23 pm

Beautiful flowers! And that’s so exciting to have bought your crib :)

5 Hope @ With A Side Of Hope March 22, 2012 at 1:23 pm

Congrats on getting the crib ordered! I can’t wait to see how you decorate the nursery :)

I’ve never scrambled eggs that way before. I’m definitely going to try it!

6 Megan @ Megan's Munchies March 22, 2012 at 1:26 pm

Sounds like a productive day so far! I love that tea :)

7 Angela @ Happy Fit Mama March 22, 2012 at 1:29 pm

Wait till you set up the crib in the nursery. It’s going to hit you that OMG! There’s going to be a baby in our house! Before my twins were born, I would sit in their room and wonder what they would be like. Awww! Enjoy this time!

8 Kristen @ Change of Pace March 22, 2012 at 1:29 pm

Glad your feeling better and you got the crib! It will be such a big moment when Matt puts it together.

What a productive morning for you! Glad the headache is just about gone!! I had one for 4 days.. BUT it was from a concussion!

Hello Kath, I’ve been reading your blog for a long time but I’m not sure if I’ve commented in the past. But now I need to comment because it’s so entertaining to see how different things are in different places, here in my country scrambled eggs means putting a couple of eggs in a skillet, stir the whites a little so they cook and when they’re cooked you mix them with the yolks. So you end up with cooked whites and semi cooked yolks, all mixed up. Well, I like them like that, some people like the yolks very cooked and some people like their whites very liquid (yikes!). No one would ever think of mixing the eggs in a bowl and then tranferring them to a skillet.

After that very useless piece of information (and probably bad grammar!) I congratulate you and your husband for the pregnancy, I’m reading BERF too because I love all the information you give us readers (especially women, even though I don’t think about becoming a mother anytime soon, I think someday it could happen).

Best regards from Chile!

Cool! You guys know how to do it right :)

14 Ashley March 22, 2012 at 3:13 pm

15 Angela @ Eat Spin Run Repeat March 22, 2012 at 1:41 pm

16 Jen March 22, 2012 at 1:43 pm

Hmm, I feel like that all the time – but I’m not pregnant!

17 Ashley @ Hudson on the Potomac March 22, 2012 at 1:46 pm

Congrats on the crib!! I can’t wait to see it in the nursery! Also those chips look fabulous! I need some in my life, are they from Whole Foods?

18 Katie @ Peace Love & Oats March 22, 2012 at 1:46 pm

Those chips always look so good! I want to get some but I know I’ll just end up eating the whole bag!

19 Khushboo March 22, 2012 at 1:47 pm

I know what you mean about mixing the yolk and whites: it takes away from the complete deliciousness of runny yolk!…probably explains my love for poached/dippy eggs!

20 Grace @ Healthy Dreaming March 22, 2012 at 1:59 pm

Your lunch looks delicious! When it’s just me, I definitely try to make very easy but yummy meals. I only go all out when I’m cooking for more people.

21 Sarah @BlondeBostonian March 22, 2012 at 2:07 pm

Yay for the crib!!! I’ve been loving BERF and can’t wait to hear more and more about your pregnancy experience. I am by no means in a position to try to get pregnant, but it’s informative and fun to read for the future.

22 Jessica @ The Process of Healing March 22, 2012 at 2:09 pm

That’s my favorite way to make scrambled eggs as well!

23 Averie @ Averie Cooks March 22, 2012 at 2:10 pm

And great looking eggs and flowers, too!

24 Marcia Compton March 22, 2012 at 2:18 pm

Glad you are feeling better, Can not wait to see you and Matt next Month, are you coming early enough to be at our house Friday night ?

25 KathEats March 22, 2012 at 3:56 pm

Most likely not because of bakery operations on Friday, but we can’t wait for the big day!! I’ll see if I can sneak down some granola for you :)

26 katie @KatieDid March 22, 2012 at 2:31 pm

I do the poke and spread everytime too. Finally just figured that one out and it saves time and dishes yay!

28 Laura @ She Eats Well March 22, 2012 at 2:46 pm

Those flowers are so pretty and Springy! I love eggs for breakfast. lunch. and dinner!

29 Fran@ Broken Cookies Don't Count March 22, 2012 at 2:52 pm

Scrambled eggs can be so good when you don’t know what to eat!

30 Angel7 March 22, 2012 at 2:53 pm

Talk about the Hunger Games with your increasing pregnancy appetite (LOL) :) I wish I was more hungry than I am being pregnant and all. But everyone is different.

31 Ashley March 22, 2012 at 3:12 pm

My appetite has been completely ravenous this week, too!! Must be the growth spurt happening this month that I read about :) I can’t imagine the baby not growing a ton with how much food I’m putting away!

32 Susan H. @ The Food Allergy Chronicles March 22, 2012 at 6:05 pm

Just purchased orange tulips with a touch of yellow edging that sit in a glass vase right in front of me to enjoy whilst on the computer! That exactly how I do my eggs…perfect every time and less mess!

33 Chelsea @ One Healthy Munchkin March 22, 2012 at 8:18 pm

I don’t like my eggs fully mixed either! My dad taught me the best way to make them – you crack the eggs into the pan and then scramble just the whites, leaving the yolks alone. When the whites are almost done, then you scramble the yolks into the whites. It makes perfect eggs every time! 😀

34 Jordan March 22, 2012 at 10:16 pm

do you guys have an ikea near you? all of there cribs are pretty much the twin of that walmart one and 80 bucks cheaper!

35 KathEats March 23, 2012 at 7:53 am

In grey??? The color is what I like best about it

36 KathEats March 23, 2012 at 7:54 am

Oh I see – it’s more grey-brown, not exactly the color I like. But thanks!

37 Elisabeth March 22, 2012 at 11:05 pm

Now, I’m exactly the opposite with my scrambled eggs – I have to beat them up really well with a whisk before I cook them 😉

38 Helen March 23, 2012 at 3:58 pm

I want the Modena crib in grey, too! We went to our local Wal-Mart and they said, well, we’re getting 78 of them in stock next week. Who would get 78 of the same cribs?! Needless to say, it never came in. I may just have to settle for white one and paint the room grey.

39 KathEats March 23, 2012 at 6:17 pm

Please let me know if you find one!

40 Jenni March 23, 2012 at 9:54 pm

That’s the ONLY way I eat scrambled eggs!! Glad I’m not alone :)
