Sun + Grass

Grass is cut! Shortly after our few drops of rain the sun came back out full blast! (Sorry Bostonians!) I mowed in record speed today – about 45 minutes. Why-oh-why did we ever waste time bagging the clippings!?!? I can go soooo much faster now. After the mow I went for a 5K loop run around the neighborhood, came home and stretched, did some chores around the house (garage is swept!) and showered.

Surprisingly I wasn’t even that hungry for lunch at 1:30, but I knew I was ready to eat. Especially when this came out from the broiler!

A Jalapeno Corn Bun stuffed with ham and chipotle cheese – plus some English mustard! Britain’s 300 year old gourmet food purveyor Fortnum & Mason offered to send me a few samples of their best mustards and preserves. I can’t wait to try the Whiskey and Beer flavored ones!

Needless to say this sandwich rocked

On the side I had some veggies and made a new dip – Goat Cheese Guac

I just mixed together about 2 tbsp each of avocado and goat cheese, softened in the microwave for 10 seconds, with a pinch of salt and 2 fresh chopped basil leaves. It was awesome!!!!!!!! Can’t wait to make it again when I have another avocado.

How funny! I was literally just in Fortnum and Mason three weeks ago during a study abroad program. Their store is NUTS–crazy fancy. I picked up some tea and chocolate biscuits–delish!

I love sandwiches with melty cheese! I made a ham, monterey jack, and honey mustard sandwich on a toasted baguette this weekend. Also, I’m very jealous of your sunshine :-)

Hi Kath,

First time commenter but long time reader (I love your blog!).

I JUST started grad school and have a 4 hr lab in the morning, 5 days a week. We are not allowed to eat or drink anything in lab but by 10 a.m., I am ready to pass out on the floor! I guess my huge bowl of oats w/ light soy milk is not cutting it.

Do you have any breakfast suggestions that would hold me over until noon time? Your bowl of oats creations look so good, but I don’t think my sensitive tummy can handle a lot of toppings, etc.

We got rained out from our plans today. It’s ok I guess though, we need rain really bad and my grass loves it! I stopped using the bag too, it is much easier without it I have to agree. Plus, someone told me the clippings helped re-fertilize the grass. Not to shabby. Great looking lunch by the way.

My only suggestion, assuming there’s no possible way to eat a snack, would be to increase your portion. If you can’t handle toppings, could you try different ones? Or just increase the portion of oatmeal? Try a breakfast with more protein/fat? But I would definitely say increase the amount you eat so it’ll hold you over much longer.

nicole, try peanut (or almond or cashew or…:)) butter with your oatmeal! It’s ungodly delicious, and the protein and healthy fats in it make your oats have much more staying power. A bowl of oats with good ol’ PB keeps me full for at least five hours!
