Research is done (I hope!).

Paper writing has begun!

You know, I totally could finish this paper tonight. I just might do it for the love of the to-do list cross off!

Everyone needs a little beer to get through writer’s blog block

My wonderful husband made me dinner. All I had to do was rise from my desk and plop down at the table – he even lit candles :)

I directed him to "heat up some Applegate Farms Chicken Patties and do something with the romaine"

These patties are really good –

I sat down to a beautiful salad made with romaine, carrots, tomatoes from our garden (that had accumulated all fall!), green pepper, diced chicken patty……

and homemade dressing – a dijon of sorts

For dessert I had a lavender shortbread from Foodbuzz Festival – a Foodzie delight.

You’re lucky to have such a talented chef for a husband! My Matt (I’m married to one too!) can do pancakes and omelets, but his culinary skills end with breakfast :)

I don’t remember the last time I had a chicken patty. I think fast food scared me off but Applegate’s looks delicious! Nothing can compare to veggiegirl’s baked goods, though, I’m guessing

What would we do without fabulous husbands/boyfriends? Seriously, on the days we can’t pull it all together, they are there to clean, cook, etc. Love it. What a great hubby you have!

kath! so this has nothing to do with your most recent post, but I wanted to tell you how much I love reading the blog! the husband and I just moved from NC to Denver a few weeks ago and i am really missing home… as silly as it sounds, reading the same blogs I did in NC make me feel a little more at home :)

I never stop being impressed that Matt just whips up stuff for dinner. Hunni freaks out if we don’t have the exact ingredients for the recipes I have to pick out. At least he tries though :-)

i like lavender too – i recently was sent these lavender sea salts – but every time i use them i have to make sure they’re for cooking and not for soaking in the tub.

Looks like a great dinner. I really like applegate farms. I buy the gluten free one and they are pretty tasty. Makes me feel like a second grader all over again :)

Matt is awesome – those salads look like big bowls of color, crunch, and yum. I love that he used homegrown tomatoes – those are the best kind of tomatoes in my opinion :-)

Back in college, my roommate would drink a beer while he studied. He would usually just have one, and would drink it slowly. I always thought that was strange, because … beer is for getting drunk, right? Now, that I have matured in my attitudes toward drinking, I do the same thing. I love to have one drink to sip on while I study or read for class. It is great to help me relax and focus more on what I am reading.

Homemade dressing is the best! My favorite is garlic, Dijon, red wine vinegar, olive oil, salt and pepper. So simple and good! In the summer, my sister and I like to add a little homemade raspberry jam–the best!

I’m such a huge fan of Applegate Farms… I’ve never seen the chicken patties before though… going to have to check those out! I do love their deli meats… they’re the only kind I buy!

Last night I made your potato soup, the one that is in your “Top Five.” WOW. sooo good. I love soup, but my husband isn’t a huge fan, so whenever I make a soup, it’s a gamble if he will like it. He loved it!

I agree!! I used to get A’s on tests if I’d have a drink while studying :) I think it helps the mind relax and absorb! Now 2 drinks…no can do!

Aw thanks so much!

RE. DRESSING:
No recipe. Just mix together olive oil, dijon mustard, a little rice wine vinegar honey, salt, pepper, perhaps some agave or honey, perhaps some rosemary. The trick is always 2:1 vinegar/acid to oil.
