Great Pump Challenge class this morning! Usually Chris-style with no breaks and lots of free weights. I love Chris’s chest, back, lunge and shoulder tracks, but I will always and forever despise calf raises. My calves do not need to be any bigger, tighter or stronger!
My gym is doing a member-guest challenge this month where a member can get a free membership for a guest to test it out. I signed Matt up this morning so it will be very fun if he comes to the gym with me a few times! If he thinks he’ll go enough, we’ll probably sign him up at the end of the challenge. He hasn’t joined thus far because the gym is pricey and he just didn’t think he’d use it enough while the bakery was just getting going.
I came home to make this KILLER goat cheese + cheddar quesadilla!!
The combo of the two cheeses was outstanding!
And surprised myself by cooking a zucchini along side!
I’ve always loved all kinds of squash : )
Served with grapes for a produce-heavy lunch!
Glass O’ milk to round out the protein side
Have a wonderful afternoon!

Your zucchini looks perfect! I made some zucchini chips in the oven yesterday and have one zucchini left in the fridge – might have to prepare it this way, those look soooo tasty.
That quesadilla looks so delish! On a side note, your posts always remind me how wonderful having just a glass of simple milk is. Now I’m craving one
What is Glad O milk? Is the “O” for organic? Love milk, but for some reason, organic always has a funny taste to me! I know it’s better for you, so I should probably get used to it.
Me typing in conversation – like “pot ‘O gold” or “ye ole watering hole”
yeah…I totally didn’t get that. Haha.
And also didn’t see the GLAD – no wonder it was so confusing!
Yay for getting in some veggies! I’m about to go pick up my pre-ordered lunch, which is ALL veggies! It’s a Chipotle veggie salad bowl! Black beans for protein and plenty of guac! So excited…
That’s great that Matt will be joining you at the gym! It’s always nice to have a gym buddy and he can finally see what Chris’s super duper Body Pump classes are about. Hope you guys have fun!
Your plate looks exactly like everything I’d eat lately! Cheese + fruit + veggies = YUM! That quesadilla sounds amazing. Love goat cheese <3
Did Matt love the pump workout?! I keep trying to get my hubs to come to one of my classes, I think he’s loooove the lifting.
I seriously think quesadillas are one of my favorite go to meals. I love them! Great job with body pump.
Ooh that looks so good! It’s been a while for quesadillas around here. Time to rectify that!
I can never have milk plain, it just tastes weird to me. But I bet it’s good for the baby!
I hated plain milk when I had non-fat but 2% tastes goooood!
Delicious! Makes me want to stop by the store on my way home to pick up the fixings!
Quesadillas are the bomb, for sure!!!
The other day I made a quesadilla with cheese, thinly sliced zucchini and red onion (both lightly sautéed first). It was delish – you might like it too
I never miss cheese until I see it all melty on a plate…that looks so good!
Goat cheese on anything is amazing, I can only imagine how good it would be in a quesadilla
love me a quesah dill uh. sometimes when i have milk/yogurt for breakfast, cheese for lunch (and maybe dinner), i worry that my diet is too protein-heavy. so i try to swap cheese for meat for at least one meal.
thoughts?
I’d be worried if you were having protein shakes 3x a day and meat at all 3 meals. Your diet sounds fine!
whoops, not protein-heavy, i meant dairy-heavy! is it okay to have a serving (or two) of dairy at about every meal?
protein shakes and meat every day…that would be major yikes!
Haha. Still think it’s fine.
haha okay! thank you. i guess i’ll go eat the block of brie in my fridge now.
Oh I love the idea of pan frying the zucchini! Does it get pretty soft or does it remain somewhat crispy?
Soft!
I think it’s fantastic that you have kept up with your exercise while pregnant
it’s great! It will be fun if Matt can join you at the gym. My husband and I love going to the gym together. It’s always nice having a workout buddy!
Perfect lunch..the squash, grapes and yes that quesadilla does look killer! with the two cheeses!
that goat cheese and cheddar combo sounds delicious!
Love the cloth you used under your plate. Your lunch looks delicious!
I love black bean & goat cheese together in quesadillas!
Now I’m craving a quesadilla
My favorite combo is cheddar, bacon and salsa, with sour cream to dip it in.
Cheddar and goat cheese…yum! Lunch looks delish!
Looks delicious. Been seeings lots of quesadillas lately, even I made one over the weekend. Such a great quick and easy meal.
Do you mean “usual Chris style” – and not usually? And…glass of milk? I’m not one of those snarky commenters so please don”t take this the wrong way – but proofreading is good idea for a blog that’s a business!
I thought the squash referred to the quesadilla but then I saw the zucchini squash – so it could go either way!
I agree.
I’m often confused by the typos.
Oooooh that quesedilla sounds SO good. I love melted (sharp) cheeses! I taught BodyPUMP today, so it’s a weight-y kinda day
hehe
Maybe this is a silly question, but what is Glad O milk???
Just me typing in conversation – it’s like “pot ‘O gold”
But what is a glad?
Typo – sorry!! I didn’t realize I thought the O was just confusing.
haha! OK! I thought it was some new type of milk that I might want to try
That’s a tasty looking lunch.
Quesadillas are my favorite. They are so quick and easy to prepare plus I love when the cheese gets all melty. Yum
Your quesadilla and zucchini look great! Your baby is going to be one well-fed little guy
I love zucchini like that! Plain and slightly browned. Yum
LOVE your photos and can’t wait to try the goat cheese/cheddar combo!
I’ve been drinking milk with dinner lately…so weird! I feel like a kid again!
The cheese oozing out of your quesadilla looks so good! I’ve never thought about goat cheese in a quesadilla but I bet I’d love it. I’ve had a lot of gouda in restaurant meals the past few weeks and lately it’s all I can think about!
I needed a quick and easy dish for dinner. Thanks for the reminder how easy quesadilla’s are to whip up in a flash!
I’d love if my hubby and I could go to the gym together again but with 2 kids we have to stagger our workouts now. Our gym charges for daycare so it would be pointless to go together. Enjoy yourself!
I used to hate zucchini and all types of squash until I had it roasted. Any other way makes me want to gag, I can’t stand “squishy” vegetables.
Have a great afternoon!!!
I can’t wait to start picking my zucchini from the garden. I love pan frying zucchini chips and also making dehydrated crispy zucchini chips!
What a lovely lunch! I am about to go make zucchini enchiladas for dinner!
I agree SO MUCH with the calf raise statement. Why do workout instructors just love to do those?? Literally the absolute last thing I need to work on. I guess maybe it’s not like that for other people..
What a way to cover all your nutrient basis for lunch
I just love the table that Matt made!
http://faithfulsolutions.blogspot.com/
I just finished eating dinner…but now I want more!
i would have never thought to combine those two cheese in a quesadilla but sounds so good!
Love the mug!
I just had grilled cheese with havarti cheese, was very yummy. Cheese is something I would have a hard time living without!
Wow now that’s a quasedilla…my 2 favorite cheeses in one
I’m a long time reader of KERF and have always been interested in BodyPump as a fun way to work on strength during my year round half marathon training. Until recently, there was only one gym near me in Pittsburgh that had Les Mills classes. Another gym started offering them but I just finalized my plans to attend med school at UVA so I don’t want to commit to a gym membership here. I was wondering what gym you belong to because I’d like to check it out once I move to Charlottesville.
Also, have you ever done a post about what to expect at a BodyPump class, like how to select weights and all that for beginners? I don’t remember seeing one but thought it’d be helpful for other people wanting to try it out, since you find it so enjoyable and beneficial.
Thanks!
This isn’t really an intro course, but it does talk about some of my reflections:

I would honestly just go 10 minutes early and talk to the instructor about what weights to use – he/she will be able to show you much easier than I could tell you!
