Great Pump Challenge class this morning! Usually Chris-style with no breaks and lots of free weights. I love Chris’s chest, back, lunge and shoulder tracks, but I will always and forever despise calf raises. My calves do not need to be any bigger, tighter or stronger!

My gym is doing a member-guest challenge this month where a member can get a free membership for a guest to test it out. I signed Matt up this morning so it will be very fun if he comes to the gym with me a few times! If he thinks he’ll go enough, we’ll probably sign him up at the end of the challenge. He hasn’t joined thus far because the gym is pricey and he just didn’t think he’d use it enough while the bakery was just getting going.

I came home to make this KILLER goat cheese + cheddar quesadilla!!

The combo of the two cheeses was outstanding!

And surprised myself by cooking a zucchini along side!

I’ve always loved all kinds of squash : )

Served with grapes for a produce-heavy lunch!

Glass O’ milk to round out the protein side

Have a wonderful afternoon!

Your zucchini looks perfect! I made some zucchini chips in the oven yesterday and have one zucchini left in the fridge – might have to prepare it this way, those look soooo tasty.

2 Laura (Blogging Over Thyme) April 2, 2012 at 12:40 pm

That quesadilla looks so delish! On a side note, your posts always remind me how wonderful having just a glass of simple milk is. Now I’m craving one ;)

3 Katharina April 2, 2012 at 12:42 pm

What is Glad O milk? Is the “O” for organic? Love milk, but for some reason, organic always has a funny taste to me! I know it’s better for you, so I should probably get used to it.

4 KathEats April 2, 2012 at 3:17 pm

Me typing in conversation – like “pot ‘O gold” or “ye ole watering hole”

5 Allison K April 2, 2012 at 5:13 pm

yeah…I totally didn’t get that. Haha.

6 KathEats April 2, 2012 at 7:07 pm

And also didn’t see the GLAD – no wonder it was so confusing!

7 Katie @ Peace Love & Oats April 2, 2012 at 12:43 pm

Yay for getting in some veggies! I’m about to go pick up my pre-ordered lunch, which is ALL veggies! It’s a Chipotle veggie salad bowl! Black beans for protein and plenty of guac! So excited…

8 Angela @ Eat Spin Run Repeat April 2, 2012 at 12:44 pm

That’s great that Matt will be joining you at the gym! It’s always nice to have a gym buddy and he can finally see what Chris’s super duper Body Pump classes are about. Hope you guys have fun!

9 j3nn April 2, 2012 at 12:45 pm

Your plate looks exactly like everything I’d eat lately! Cheese + fruit + veggies = YUM! That quesadilla sounds amazing. Love goat cheese <3

10 Heather @ Get Healthy with Heather April 2, 2012 at 12:45 pm

Did Matt love the pump workout?! I keep trying to get my hubs to come to one of my classes, I think he’s loooove the lifting.

11 Ashley @ Coffee Cake and Cardio April 2, 2012 at 12:47 pm

I seriously think quesadillas are one of my favorite go to meals. I love them! Great job with body pump.

12 The Mrs @ Success Along the Weigh April 2, 2012 at 12:48 pm

Ooh that looks so good! It’s been a while for quesadillas around here. Time to rectify that!

13 Cm @ Lazy Healthy April 2, 2012 at 12:48 pm

I can never have milk plain, it just tastes weird to me. But I bet it’s good for the baby!

14 KathEats April 2, 2012 at 3:16 pm

I hated plain milk when I had non-fat but 2% tastes goooood!

15 ~Christy @ wonderofallthings April 2, 2012 at 12:50 pm

Delicious! Makes me want to stop by the store on my way home to pick up the fixings! :) Quesadillas are the bomb, for sure!!!

16 Kavi @ Lab to Fab! April 2, 2012 at 12:53 pm

The other day I made a quesadilla with cheese, thinly sliced zucchini and red onion (both lightly sautéed first). It was delish – you might like it too :)

17 Sarena (The Non-Dairy Queen) April 2, 2012 at 12:54 pm

I never miss cheese until I see it all melty on a plate…that looks so good!

18 Lindsay @ Running the Windy City April 2, 2012 at 12:58 pm

Goat cheese on anything is amazing, I can only imagine how good it would be in a quesadilla :)

19 mary @ minutespermile April 2, 2012 at 1:07 pm

love me a quesah dill uh. sometimes when i have milk/yogurt for breakfast, cheese for lunch (and maybe dinner), i worry that my diet is too protein-heavy. so i try to swap cheese for meat for at least one meal.

20 KathEats April 2, 2012 at 3:16 pm

I’d be worried if you were having protein shakes 3x a day and meat at all 3 meals. Your diet sounds fine!

21 mary @ minutespermile April 2, 2012 at 3:29 pm

whoops, not protein-heavy, i meant dairy-heavy! is it okay to have a serving (or two) of dairy at about every meal?
protein shakes and meat every day…that would be major yikes!

22 KathEats April 2, 2012 at 3:33 pm

Haha. Still think it’s fine.

23 mary @ minutespermile April 2, 2012 at 3:40 pm

haha okay! thank you. i guess i’ll go eat the block of brie in my fridge now.

24 Cait's Plate April 2, 2012 at 1:10 pm

Oh I love the idea of pan frying the zucchini! Does it get pretty soft or does it remain somewhat crispy?

25 KathEats April 2, 2012 at 3:16 pm

26 Becca April 2, 2012 at 1:12 pm

I think it’s fantastic that you have kept up with your exercise while pregnant :) it’s great! It will be fun if Matt can join you at the gym. My husband and I love going to the gym together. It’s always nice having a workout buddy!

27 Averie @ Averie Cooks April 2, 2012 at 1:13 pm

Perfect lunch..the squash, grapes and yes that quesadilla does look killer! with the two cheeses!

28 kathleen @ the daily crumb April 2, 2012 at 1:23 pm

that goat cheese and cheddar combo sounds delicious!

29 Hope Helmuth April 2, 2012 at 1:26 pm

Love the cloth you used under your plate. Your lunch looks delicious!

30 Claire @ Live and Love to Eat April 2, 2012 at 1:28 pm

I love black bean & goat cheese together in quesadillas!

31 Elisabeth April 2, 2012 at 1:40 pm

Now I’m craving a quesadilla :) My favorite combo is cheddar, bacon and salsa, with sour cream to dip it in.

32 Susan H. @ The Food Allergy Chronicles April 2, 2012 at 1:41 pm

Cheddar and goat cheese…yum! Lunch looks delish!

33 Heidi Bundles Of Hugs April 2, 2012 at 1:49 pm

Looks delicious. Been seeings lots of quesadillas lately, even I made one over the weekend. Such a great quick and easy meal.

34 Jen April 2, 2012 at 2:00 pm

Do you mean “usual Chris style” – and not usually? And…glass of milk? I’m not one of those snarky commenters so please don”t take this the wrong way – but proofreading is good idea for a blog that’s a business! :)

I thought the squash referred to the quesadilla but then I saw the zucchini squash – so it could go either way!

35 Susan April 2, 2012 at 7:08 pm

I agree.
I’m often confused by the typos.

36 Annette @ EnjoyYourHealthyLife April 2, 2012 at 2:05 pm

Oooooh that quesedilla sounds SO good. I love melted (sharp) cheeses! I taught BodyPUMP today, so it’s a weight-y kinda day ;) hehe

37 Tara April 2, 2012 at 2:06 pm

Maybe this is a silly question, but what is Glad O milk???

38 KathEats April 2, 2012 at 3:14 pm

Just me typing in conversation – it’s like “pot ‘O gold”

39 Jenna April 2, 2012 at 3:30 pm

But what is a glad?

40 KathEats April 2, 2012 at 7:09 pm

Typo – sorry!! I didn’t realize I thought the O was just confusing.

41 Tara April 4, 2012 at 9:16 am

haha! OK! I thought it was some new type of milk that I might want to try :)

42 Fran@ Broken Cookies Don't Count April 2, 2012 at 2:08 pm

That’s a tasty looking lunch.

43 Hope @ With A Side Of Hope April 2, 2012 at 2:08 pm

Quesadillas are my favorite. They are so quick and easy to prepare plus I love when the cheese gets all melty. Yum :)

44 Heather @ Run Eat Play April 2, 2012 at 2:12 pm

Your quesadilla and zucchini look great! Your baby is going to be one well-fed little guy :)

45 Jodi @ Jodi, Fat or Not April 2, 2012 at 2:33 pm

I love zucchini like that! Plain and slightly browned. Yum :)

46 Scott April 2, 2012 at 2:36 pm

LOVE your photos and can’t wait to try the goat cheese/cheddar combo!

47 Jasper Naomi @ crunchylittlebites April 2, 2012 at 2:39 pm

I’ve been drinking milk with dinner lately…so weird! I feel like a kid again!

48 emily April 2, 2012 at 2:39 pm

The cheese oozing out of your quesadilla looks so good! I’ve never thought about goat cheese in a quesadilla but I bet I’d love it. I’ve had a lot of gouda in restaurant meals the past few weeks and lately it’s all I can think about!

49 Angela @ Happy Fit Mama April 2, 2012 at 2:53 pm

I needed a quick and easy dish for dinner. Thanks for the reminder how easy quesadilla’s are to whip up in a flash!

I’d love if my hubby and I could go to the gym together again but with 2 kids we have to stagger our workouts now. Our gym charges for daycare so it would be pointless to go together. Enjoy yourself!

50 Jen@FoodFamilyFitness April 2, 2012 at 3:02 pm

I used to hate zucchini and all types of squash until I had it roasted. Any other way makes me want to gag, I can’t stand “squishy” vegetables.
Have a great afternoon!!!

51 Maria@ Sinfully Nutritious April 2, 2012 at 3:33 pm

I can’t wait to start picking my zucchini from the garden. I love pan frying zucchini chips and also making dehydrated crispy zucchini chips!

52 Jamie @ Don't Forget the Cinnamon April 2, 2012 at 3:52 pm

What a lovely lunch! I am about to go make zucchini enchiladas for dinner!

53 Jess April 2, 2012 at 5:11 pm

I agree SO MUCH with the calf raise statement. Why do workout instructors just love to do those?? Literally the absolute last thing I need to work on. I guess maybe it’s not like that for other people..

54 Angel7 April 2, 2012 at 6:02 pm

What a way to cover all your nutrient basis for lunch :)

I just love the table that Matt made!

55 Lisa @bitesforbabies April 2, 2012 at 6:24 pm

I just finished eating dinner…but now I want more! ;-)

56 britt April 2, 2012 at 7:25 pm

i would have never thought to combine those two cheese in a quesadilla but sounds so good!

57 jojo April 2, 2012 at 7:34 pm

Love the mug!
I just had grilled cheese with havarti cheese, was very yummy. Cheese is something I would have a hard time living without!

58 Khushboo Thadani April 3, 2012 at 12:30 am

Wow now that’s a quasedilla…my 2 favorite cheeses in one :)

59 Allison April 3, 2012 at 10:25 am

I’m a long time reader of KERF and have always been interested in BodyPump as a fun way to work on strength during my year round half marathon training. Until recently, there was only one gym near me in Pittsburgh that had Les Mills classes. Another gym started offering them but I just finalized my plans to attend med school at UVA so I don’t want to commit to a gym membership here. I was wondering what gym you belong to because I’d like to check it out once I move to Charlottesville.

Also, have you ever done a post about what to expect at a BodyPump class, like how to select weights and all that for beginners? I don’t remember seeing one but thought it’d be helpful for other people wanting to try it out, since you find it so enjoyable and beneficial.

60 KathEats April 3, 2012 at 10:39 am

This isn’t really an intro course, but it does talk about some of my reflections:

I would honestly just go 10 minutes early and talk to the instructor about what weights to use – he/she will be able to show you much easier than I could tell you!
