I was at the bakery all day today – just got home!! But somewhere in the mix a Spice-a-rita was sipped!
I was a hungry girl all afternoon working on paying bills and paperwork in the office.
Granola sample
And a granola bar that Faith made – it was incredible!
Soon enough we called it quits and joined Great Harvest monkey, Tim, for dinner. Tim is from the home office and is helping us tie up loose ends this week. He leaves on Friday and on Monday a another slew of monkeys come in to help us opening week! It’s been so nice to have expertise in the bakery to ask questions and fill in missing pieces.
Spice-a-ritas for all!
This is the best margarita ever. It’s SUPER spicy, a bit tart, only a bit sweet and very very refreshing. There are 3 kinds of jalapeno involved – so be prepared to have your lips burn!! I don’t like margaritas, but I love this drink!
We went to Mono Loco for dinner, and I got my usual burrito in a bowl. Tonight was the Drunken Salmon over beans + rice with a side of chipotle crema.
The crema must be made with sour cream and mayo – it tasted like half and half! I don’t normally like things like that, but this tasted so good to me tonight.
I didn’t really taste any beer in the braised salmon, but I pretty much cleared my plate. And get this – I started eating before taking blog photos!! Who am I!? That NEVER happens!
I biked home and once I arrived, I soaked up the last minutes of daylight on a 30 minute walk. I feel my best when I’m “active” for an hour. Active is very loosely defined and can mean a hard run, a lot of cleaning, yoga, walking, biking, Body Pump or more. Today I biked for 40 minutes (to and from the bakery), walked for 10 and another 30 when I got home. Squeeze it in without any official workout.
But I would like to go take a cold shower and then get in bed with my book!
This week has been long and busy and it’s only Tuesday but we’re having so much FUN doing it! We’re just getting started, but it’s what I’ve always hoped for when I pictured us owning a business.
G’night!

It is so inspiring to watch your dreams come true!
Just wanted you to know I was at wayside talking about Great Harvest opening and telling everyone to come visit. One of the costumers piped up and said “O the one thats gonna be run by the crazy cool blog lady and her husband” i said yup yup. I CAN”T WAIT FOR TRAINING NEXT WEEK! See you Thursday.
Haha. You are cute!
PS. I am not a “lady!” I’m only 28.6 years old!
I DIDN”T say it! lol.So girl would be to young so your a young lady? I like your .6! That means im 19.95.
I still like girl or gal
Ha, ha! I’m 40 and I still like “girl.” I actually have a hard time calling anyone my age or younger a “woman”. Someday, maybe I’ll get old and mature enough.
So does that mean we should call a 40 year old “man” (or a 28.6!)a “boy”…LOL? Why do we think it ages us if we are called WOMEN? That’s what we are…not girls! Just another difference in the genders I guess.
Nope – to me, those are “guys”!
I don’t know, I just have a hang up with “man” and “woman” for anyone my age or younger. Weird, I know! I just never made the mental switch, I guess.
It’s not weird…! I didn’t think of calling them”guys” but you gotta admit we wouldn’t call them boys…LOL. Just an observation. I am older than you and I really hate to be called Maam!! That makes me feel really old
The spicy rita looks like something my BF would enjoy a lot! I’m not too big on really spicy stuff. Still super love that you’re a GH owner!
I’m so glad you’re having fun getting ready to open. How exciting that it is going to be open in no time at all!
SO fun to have dreams come true. I love watching things unfold for us and for others reaching their dreams and LIVING them. Go all of us
Sounds like things are going great! I agree with you about feeling better if I have an hour of exercise. I feel lethargic if I mostly sit all day.
Wow that margarita is crazy! It looks delicious.
In 2009, antsmarching.org had a DMB after party at Mono Loco but it was too small, so my group couldn’t get in! I’ve heard amazing things though.
Sounds like the opening is nothing but smooth sailing so far! So great for you guys! I loved all the sandwich photos- they made my stomach rumble! I also loved the photos of the burrito bowl- looks like something my mom usually orders at our favorite restaurant!
nom nom nom!
I am really so happy for you two! I know things are so exciting for you right now. I love living through you in all of this.
I love spicy-ritas! They do one at my local spot that is a spicy-somkey rita – they add smoked pepitas and rim the glass with smoked salt. Soooo good! Your salad looks delish – I would have forgotten a pic too.
ohh that margarita looks wonderful!
mm mmm!
It’s too funny that you call the GH peeps monkeys!
Best wishes with the next few days!
Soo exciting!
Work doesn’t seem like work when you are having fun!
Best wishes the next few days – I hope you enjoyed reading your book. That is what I am about to do.
Great Harvest bakery…another reason why I want to move to Charlottesville. You know, among the countless other reasons
Spike-a-rita’s sound amazing. I can’t even begin to explain how much I need one. It’s great that you guys have help with the bakery. Congratulations on having this opportunity!! Best of luck.
Yum yum yum! What a great way to end a busy day
Drunken Salmon over beans + rice with a side of chipotle crema.
And that it tasted like half and half, mayo + sour cream…omg i would just eat that with a spoon. Just that
“best margarita ever. It’s SUPER spicy, a bit tart, only a bit sweet and very very refreshing. “—sounds awesome! I need to make one of those down here in Aruba right now!
And I am soooo happy that even tho your super busy things are exactly what you envisioned when you wanted to open your own biz!
Love Mono Loco, after my first (and only) visit a few weeks ago I’ve still been thinking about how delicious the food was there!!! We made homemade “Chipotle bowls” at home tonight with rice, black beans and all the Mexican fixin’s… guess I’ll have to settle for that for now
OMG that sounds so interesting and amazing! You always have the best eats.
Glad your enjoying it. Hard work is worth it …when it’s WORTH it
Ooooh – that rita looks so good!
That spice-a-rita sounds so interesting!!!
Umm, I need one of those drinks. Pronto!
The granola bar looks amazing!
I love margaritas, especially the margarita salt on the glass! I have never had a Spice-a-rita, though. I am sure that my husband and I would like it being that we like jalapenos and such.

I like active living workouts too! So much better than planning out an actual workout! And drunken salmon sounds delicious!
That margarita looked great.
Very happy and positive thoughts for your bakery opening!!
The Spice-a-Rita looks sounds awesome! So does Faith’s granola bar – it looks so chewy!
Oh I loooove margaritas and anything spicy..must try this!
Drunken salmon?! I’m intrigued! Must try this soon.
I’m so glad that starting your own business has been fun for you! I can imagine all of that fun continuing when you start getting customers.
Yum, I love margaritas
I would definitely try that!
Drunken salmon- tell me more! You know you’re hungry when you won’t let a camera get in the way of digging into your food ?!
Oooh that granola bar looks so chewy!
i spy sriracha!!!
Gotta love a good margarita!
Margarita’s are the best! I could definately use one right now!
That salmon burrito bowl looks incredible!!
Can you believe I’ve never tried a margarita?!? I think I may be deprived.
Oh my goodness my husband better never get wind of that margarita. He puts jalapenos in EVERYTHING. He’ll be making it for me before I know it haha.
No tequila for this girl! I would like to try that salmon though!
You know – I think that’s why this is the only margarita I like – I don’t know if there is tequila now that you bring it up!? I’ll have to check next time. or maybe it’s just a mild kind.
It’s WHITE tequila – that’s probably why I like it!
The Spice-a-Rita!
Not for the faint of heart. Our classic Marg made with El Jimador Blanco Tequila & Muddled Jalapenos. Whew!
Recipe for granola bar?
Yes, please?!
I agree about being active for at least an hour each day. I feel so sluggish otherwise!
Same here!
That’s a good approach to fitness given your hectic schedule. You don’t have to go all out everyday in order to stay active; a brisk walk or bike ride will do the trick.
That margarita looks interesting! I love a good margarita!
So exciting about your store! I can’t believe it’s almost time to open! What an amazing accomplishment
Your “rule” about being active for an hour each day is really, really good advice! I’ll start keeping that in mind – I think it’ll help me, too.
Can’t WAIT for your opening!
A jalapeno margarita sounds so great. I love cilantro-avocado margaritas, the savory-ness gets me every time!
omg, never heard of a cilantro-avocado margarita… swoon! I’m a wimp w/spicy but that sounds perfect!
I love reading about how the bakery is coming along so fast! It is so inspiring what you and the hubby are doing!!! I hope to do something similar someday!
Spice-a-rita sounds too fuerte for me! I think my husband would like it though
“This week has been long and busy and it’s only Tuesday but we’re having so much FUN doing it! We’re just getting started, but it’s what I’ve always hoped for when I pictured us owning a business.”
-I loved what you said here, Kath! Great to see someone enjoy their work so much
I am so impressed with how far you’ve come in your healthy journey over the years I’ve been reading your blog. You are so relaxed and confident with your food choices – whether you’re at a restaurant, traveling or handling a buffet. You seem to have found the perfect balance of eating healthy while still enjoying treats and not letting indulgences get the best of you. You’re also brilliant at incorporating an active lifestyle – sometimes with formal work outs and sometimes with lots of fun activity. I’m 50 and am still trying to balance my healthy lifestyle! You are so young and are such a great role model. Thank you for your beautiful blog – I look forward to reading it every day!
ditto from me laurie as a 40-something I feel the same way!
Thanks Laurie
Ditto to what exactly Laurie said, coming from a 29 year old! You are such an inspiration Kath…I’m still trying to find that healthy balance…some days are hard, some are good, and when I need inspiration I think of you and ask myself, “what would Kath do in this situation…?” Thank you
I am seriously loving following your bakery progress… I’m so excited for you guys…and inspired! I’m tempted to change our summer holiday plans and do the nation’s capitol visit this year so we can come visit! We were going to wait till the kidlets are a little older, but now I’m torn! Either way, when we make that trip you can be sure it will include a stop at GH C’ville! Congrats on your hard work!
I absolutely adore mexican crema, but I have to say, I’ve never heard of it made with mayo. The way I’ve had it, it’s always been straight whipping cream & cultures so it’s somewhat similar to sour cream, but a bit thinner & sweeter. But maybe the higher fat cream that it starts with was what gave it that ‘half and half’ flavor. I love the sound of what it was spiced with. That sounds delicious.
Oh that’s good to know!! the texture was mayonnaisey so I just assumed.
i love spicy drinks! one of my favorite cocktails is vodka with soda, a ton of lemon juice, and a jalepeno floating in there to infuse it….sounds wacky, but its really refreshing!
I love spicy margaritas! Festive yet refreshing at the same time!
