South Of The Border

It’s starting to feel HOT, HOT, HOT down here in the Carolinas! We’ve got 67* and climbing. And sun!

I went for a glorious run at 11:30. I ran for 60 minutes on the dot – door to door. I LOVED breaking a springtime sweat. My legs were just starting to get tired when I came home – I probably could have gone a few more miles, but an hour was enough for today.

For some reason the thought of a Taco Salad popped into my head and I got really excited about it in the shower when I thought about how many ingredients I had to put on it.

Including some tortilla chips, jalapeno style!! At the Food Should Taste Good website, looks like you can get a $1 off coupon!

These were delish. Corny with a hint of spice. And I loved the red color.

We didn’t have any black beans so I opened a can of pinto beans – only to remember we had ground beef to use up in the fridge! D’oh!!! So I mixed them together. This was about 1 oz of beef, 1/4 cup pinto beans, 4 mini peppers and a cup of cabbage all cooked with cumin and chili powder. Toppings included 1/4 cup cheese, avocado, a big dollop of greek yogurt and a bed of baby spinach.

With a seltzer. The taco salad was quite filling, but it’s almost an hour later and I’m already feeling a little empty. This could mean an earlier snack so hopefully I won’t spoil my dinner!

I might go get my haircut. I’m undecided! It’s SO nice out that I’ve got my laptop near the patio door instead of typing at my desktop in the dark shadows.

Yum! Now I have a dinner idea! There aren’t many choices as far as Mexican food goes here in the Northeast like I’m used to (Southern CA), so I gotta recreate it at home sometimes.

I’m loving the weather too!! I’m in Maryland and it’s 62 and sunny right now. And the best part is that it’s supposed to last through the weekend!! Your salad looks so yummy too!! I’m planning on spending as much time outside as I can get in this weekend!

It’s warm here too, not quite as warm, I wish i was able to soak up some sun but I am not near a window in my office, it’s killing me.

Glad its warming up by you – our weather today might actually melt the small pile of snow lingering at the end of my driveway.

If it isn’t melted by the time I get home, I think I am going to pour boiling water over it!

I read every single day (actually, Im on this site a lot throughout the day)

I have a question for you. I sometimes get contacted by companies who want me to try their products, and I notice that you try a lot too. How do you know if you can trust them to send your home address? Someone contacted me today to try something, and I really want to, but I’m nervous about giving out my address?? Any tips on who you choose?

That’s a risk you have to take (and always lock your doors!). Not to say that fraud doesn’t happen, but I try to gauge by the professionalism of the email, signatures and email address. You could always get a PO box or have things sent to your workplace.

Taco salads are an absolute fave of mine! I gave up chips (tortilla chips being the main point in this) for Lent… so I’ve been avoiding mexican food because I know it’ll be secondary nature to reach for the chips ahhh!

You should work in sales. Those sweet potato chips looked SO GOOD yesterday, that I had to go ahead and buy them today. I was NOT disappointed. How do you get them to send this stuff straight to your door!?! That’s a good gig.

Yum! I just had a Mexican dinner tonight as well… Soft-shell black bean taco.

Wow! What crazy weather! You were just talking about the snow and now it’s 68*! It got to 45* here in Wisconsin. I can’t wait for spring to finally stay!

I’m pretty new at this blog and I just wanted to say how inspiring you are Kath! I’m sure you’ve heard this all before, but it’s so refreshing to see a good example of how to eat healthy, but without being afraid to give into temptations every once in a while. I recently recovered from anorexia, so your blog is especially helpful for me to compare my own choices to and give me some good ideas of how to keep on track and have a comfortable relationship with food. Keep it up Kath! :D
