Guess what!?

SCHOOLS ARE CLOSED again!! But I’m still going into work. While Charlotte schools have been open for 2 days now, Rowan-Salisbury schools are a huuuuge district with lots of country back roads that are still somewhat snowy + icy. Plus there’s bad fog this morning.

I’m operating on a 2 hour delay this morning :)

Since I was up and showered when I got the news, I just continued with my morning per usual. I went to bed at 9PM so I got my 8 hours. And no sense napping after a hot shower when breakfast was calling!

NEW in the Open Sky store this morning is the Cacao Bliss!!

My words:

You guys are going to have to invest in this one :) The Cacao Bliss tastes just like chocolate coconut buttercream frosting!!! Part ganache, part coconut butter.

In the summertime, when it’s nice and hot in KERFland, the bliss is the consistency of a thick frosting. Perfect to spread on things. Or lick from the spoon.

In the winter, it hardens up a bit – more like a wax – but a little microwaving (or hot oatmeal!) melts it right back into a thick liquid.

Its best purpose: chocolate cravings :)

So today’s breakfast obviously was all about the coconut :mrgreen:

Pay Attention:

  • 1/3 cup rolled oats
  • 1 tbsp Scottish oats (to fill in the gaps!)
  • 2/3 cup water
  • 1/3 cup vanilla soy milk
  • 1 tiny banana, sliced
  • Pinch salt
  • Splash vanilla at end
  • 1 tbsp chia seeds, at beginning
  • 1/2 tbsp ground flax (finally restocked!)
  • 1/2 cup pumpkin (Libby’s xoxo)
  • 2 tbsp coconut milk, stirred in at end (I’ve cooked with it before and find the taste to be more detectable if I stir in at end)
  • Crunchy Coconut Granola
  • Cacao Bliss, slightly melted in the jar in the microwave to make frosting
  • Coconut butter, flaked on and melted in

Quite the ensemble and totally yum!

Wow – it is so crazy schools are closed again! I hope they don’t have to extend the school year or take away some of a vacation.

Love the idea of combining regular oats with scottish ones – great combo of textures.

How do you store your coconut milk in the can? I have that same milk but have never opened it because I’m not sure how to store it. A mason jar?

I just keep it in the can. Maybe unsafe for some reason I dont’ remember, but I don’t really care that much because I don’t eat it that often.

I JUST bought some of this at Whole Foods the other day. Just for some informational purposes for your readers.. it costs $10. Not cheap by any means, but we’ll see if it’s worth it ;)
Right now I heated up the coconut butter and let it marinade in some coconut milk and coconut butter with tempeh. I am about to roast it and baste it as it cooks.. I hope this turns out good!

I like it a lot!! it’s pretty simple, comparable to homemade granola. But nice and hard too (probably made with thick rolled oats)

Can you make breakfast for me sometime? That sounds so good! I’ve tried to find Cacao Bliss here in Canada but haven’t had any luck. All the food bloggers are talking about it and it sounds delicious!
