Guess what!?
SCHOOLS ARE CLOSED again!! But I’m still going into work. While Charlotte schools have been open for 2 days now, Rowan-Salisbury schools are a huuuuge district with lots of country back roads that are still somewhat snowy + icy. Plus there’s bad fog this morning.
I’m operating on a 2 hour delay this morning
Since I was up and showered when I got the news, I just continued with my morning per usual. I went to bed at 9PM so I got my 8 hours. And no sense napping after a hot shower when breakfast was calling!
Check out these Soldiers of Coconut
NEW in the Open Sky store this morning is the Cacao Bliss!!
My words:
You guys are going to have to invest in this one
The Cacao Bliss tastes just like chocolate coconut buttercream frosting!!! Part ganache, part coconut butter.
In the summertime, when it’s nice and hot in KERFland, the bliss is the consistency of a thick frosting. Perfect to spread on things. Or lick from the spoon.
In the winter, it hardens up a bit – more like a wax – but a little microwaving (or hot oatmeal!) melts it right back into a thick liquid.
Its best purpose: chocolate cravings

So today’s breakfast obviously was all about the coconut
Pay Attention:
- 1/3 cup rolled oats
- 1 tbsp Scottish oats (to fill in the gaps!)
- 2/3 cup water
- 1/3 cup vanilla soy milk
- 1 tiny banana, sliced
- Pinch salt
- Splash vanilla at end
- 1 tbsp chia seeds, at beginning
- 1/2 tbsp ground flax (finally restocked!)
- 1/2 cup pumpkin (Libby’s xoxo)
- 2 tbsp coconut milk, stirred in at end (I’ve cooked with it before and find the taste to be more detectable if I stir in at end)
- Crunchy Coconut Granola
- Cacao Bliss, slightly melted in the jar in the microwave to make frosting
- Coconut butter, flaked on and melted in
Quite the ensemble and totally yum!
Coffee coffee!! I almost had tea this morning but I knew you would miss your shape of the day! Please forgive me if I do have tea in the coming weeks
A meteor??? An alien head?
HAPPY BIRTHDAY TO BECCA!!
Going to get some work done and then make the drive up to Salisbury!
RUNNING with EMILY this afternoon! Woot.

Goodness, it’s insane how many school closings you’ve been having! I’m kind of jealous.
I adore your breakfast bowl this morning…too cute!
I can’t believe how long everything has been shut down for y’all! Gotta love the south, right?
Beautiful bowl! So rustic!
Schools are closed here today, too, but it means we won’t get President’s Day off! Grrr…
Mmmm, looks like a coconut-in-a-bowl party! Does the 2 tablespoons of coconut milk really make that much of a difference in taste or texture?
No. I was just keeping up with the theme!
Ok now I NEED the cocoa bliss!!!
Haha. You really do!! If I had to get just one, I’d get the Cacao
MMM Ganache! I’m scared I would eat that from the jar by the spoonful until it was gone!
I never add coconut to anything – looks good!
Def an alien head.
maybe a hoola hoop? (like if the foam is the shape)
Looks like a coconut party! Unfortunately up here nothing EVER closes for snow
Yay for another “off from school” day!
I gotta try some of that coconut butter!
Those are some serious ingredients in your oats this morning
Have a great day
Seeing all of this coconut has just popped “put the lime in the coconut” into my head…
Lucky kids- 3 snow days!! I am dying to try coconut butter now…I can’t believe I’ve never had it!
coconut is the one ingredient i haaaaaaate. it’s like my version of onions. but i weirdly suspect that i’d like cocunut butter?
Wow – it is so crazy schools are closed again! I hope they don’t have to extend the school year or take away some of a vacation.
Love the idea of combining regular oats with scottish ones – great combo of textures.
Drive safely if you head to school!
I love how much there is going on in your oats, it’s brilliant! I must start adding more to mine…banana, PB, granola, caramel chips – ir’s not enough!
Have a good run
Yum, coconut! I’m actually not a huge fan except when it’s mixed in chocolate ice cream… strange!
Love the coffee shape of the day, thanks
That one is tough… a nibbled cookie? Also, the Cacao Bliss description of buttercream frosting is very intriguing.
Wow-schools closed again! There must be a lot of snow down there!
So I was about to do my usual “woe is me can’t get this in Australia”, and then I remembered that there’s a company that makes a Chocolate Coconut Butter that must be pretty much the same thing – hello heaven deliciousness! I can at least approximate your delicious breakfast!!
Scottish oats are my absolute favorite kind lately. This is naturally subject to change, but, given how much they rule, doubtful.
I JUST received samples of Cacao Bliss and some of their other products yesterday. Yum!!
that cacao bliss sounds AMAZING! I love chocolate + coconut together anyways; I can’t imagine how good that is on oatmeal.
Enjoy your delay!
FROSTING, huh? SIGN ME UP! Thanks for sharing, love!
Wow, that’s quite a list of ingredients LOL. It looks wonderful.
Jenn
Oh wow Kath, those might just be the best sounding oats that you have ever made
I haven’t had pumpkin oats in forever but you just totally made me crave some.
Wow- that’s the most intricate bowl of oats I’ve ever seen! I loveeee coconut (Need. Cocoa. Bliss)
It’s amazing how crazy different areas get about snow and ice! I’ve had to drive to work in 8+” of snow! Enjoy your day!
Living in Boston, I am SUPER jealous of your days off! I think it could snow 2 feet here and I would still trek onto the bus and subway to get to work. Enjoy your delayed morning =)
that is one LOADED bowl of oatmeal! the cocoa bliss looks delish but $14 is pretty expensive!
Those oats are definitely over the top! Looks so good! I totally agree with stirring things in at the end of cooking your oats. You definitely get more of the flavor!
wow thats a very coconut-y breakfast… Sounds delish and filling.
Yum~ I LOVE melty cacao bliss
Hmmm… I will have to get some coconut bliss ASAP!!!
Okay clearly I need to move down south!! Nothing is ever closed/cancelled/delayed up north
Your oatmeal looks particularly lovely today!
Your coffee shape looks like the little mushrooms (toadstool?) from Mario Brothers. I don’t know what the right name for it is…..
wow what a bowl of oatmeal! I can’t believe the schools are closed AGAIN! WHat lucky kids! haha
I am craving coconut now, yum!
this is incredible how long the schools have been closed! i was never lucky enough to have that as a kid growing up
Man I can’t believe it’s the third day in a row they cancelled!
Wow, that is quite the recipe for a bowl of oatmeal!! Cacao bliss sounds like dessert! Yum
That may be your longest oat list yet!! I would love to try that Cacao Bliss but I always decide that sadly it’s just not in my budget.
I’m definitely going to look into that Cacao Bliss hopefully its not too expensive because it sounds wonderful!
KATH! love your dress. Where’d you find that?!
LOFT
what a bowl of oats this morning!!
How do you store your coconut milk in the can? I have that same milk but have never opened it because I’m not sure how to store it. A mason jar?
I just keep it in the can. Maybe unsafe for some reason I dont’ remember, but I don’t really care that much because I don’t eat it that often.
Wow you’ve had tons of school cancellations! Craziness!
Katherine, You’re so sweet! Thanks for the shout-out…I was not expecint it at all!!!
YAY – so glad you saw it!! XOXO
Oh my, that’s quite the oat mix!!! I’m actually impressed that you remembered the whole list.
Enjoy your 2-hour delay day!
oops. make that “expecting”
ANOTHER SNOW DAY?!?!? luckiest kids ever!
Oh man….Did I ever miss out on snow days growing up in coastal California….not fair! lol!
I have heard about all the crazy weather up there from a friend in Fort Mill. stay safe!
I love your funnel shaped bowl! Very cute and rustic looking. But I’ll fall for anything that looks hand thrown.
LOVE coconut!!
xo

Wow! That is an amazing looking bowl of oats! I had to microwave mine and eat them out a plastic pot this morning – very jealous of yours!
Ohh, the oats sound absolutely amazzzzzzing.
I JUST bought some of this at Whole Foods the other day. Just for some informational purposes for your readers.. it costs $10. Not cheap by any means, but we’ll see if it’s worth it
Right now I heated up the coconut butter and let it marinade in some coconut milk and coconut butter with tempeh. I am about to roast it and baste it as it cooks.. I hope this turns out good!
That oatmeal looks so tasty!! Do you use coconut oil ever??
No, but only because i haven’t bought it before. I think I would really like cooking with it.
That is quite the bowl of oatmeal kath
Thrilling that you just posted about Artisana Cacao Bliss…I just discovered it last week and I am addicted to it. Love it over my hot oats! It is so decadent and a little goes a long way!
How is that Bob’s Red Mill Crunchy Coconut Granola? It seems super yummy and I was hoping to find it at Whole Foods today but no luck
Where can I find it?? Thanks!
I like it a lot!! it’s pretty simple, comparable to homemade granola. But nice and hard too (probably made with thick rolled oats)
Can you make breakfast for me sometime? That sounds so good! I’ve tried to find Cacao Bliss here in Canada but haven’t had any luck. All the food bloggers are talking about it and it sounds delicious!
Too bad for school being canceled!
