Kelsey and I fetched coffees to help us get through the afternoon. I had 75% decaf/25% caf. Plus a splash of skim milk and a splash of half and half.
I also ate my leftover lunch fruit! It was SO FUN to eat during class
We had an early dinner so I didn’t need a snack, but while I was cooking I had a few bites of this leftover salad from last night to tide me over. All the good stuff is on the bottom!
Pile o’ Peas
I thought up this salad based on cravings and what we had in the fridge. It turned out awesome! Here’s the recipe: Lemon Caper Chickpea Salad.
“Midnight” Snack
Since we ate so early I felt an inkling of hungry around 8:00, so I had a little yogurty snack. I really love TJ’s Euro yogurt but it’s been sold out at my store for months. It’s very tangy but still much thicker than normal plain yogurts that aren’t Greek. Greek still holds a place in my heart, but this is fun for a change (and is half the price per oz).
+ half of this Quaker True Delights Dark Chocolate Raspberry Almond Bar. It was good, but the Coconut Banana was better! I wish the raspberry chunks had been bigger, but I loved the chunks of chocolate!

Kath, the salad looks delicious. I must say i am jealous about your pictures! Congrats to Lynette!
The salad matches the color of your walls
Oooohh…I got so busy reading the comments, I didn’t get mine entered quite in time! Oh, well–I might have to break down and actually purchase one myself
I’m still on the fence about TJ’s European yogurt. I think I need to try it again.
I never really paid attention to them before, but I love your countertops!
That dinner looks great!!! I love me some yogurt too.
I had dinner early too…and had a snicky snack of cereal around 8 too!
Funny to see Java City…I haven’t been tot hat place since I was at Winthrop
I used to frequent the one in Marg. Nance during long art classes!
I’ve never heard of that kind of yogurt, but it sounds like I would love it. I can’t get enough plain yogurt!
I eat the TJ Euro yogurt too. I’m with you greek is great, but Euro is really good and cheap! I normally have some sort of cereal for crunch with it – this week I’m on a Total Raisin cereal kick. I seem to never get tired of my afternoon yogurt treat at work.
dinner looks great.
i really want to try that yogurt, but I can never buy it since the closest TJ’s is 3+ hours away!
What a wonderful dinner! It looks so delicious!
Bah – crazy weather!! Congrats to the winner
Your salad is like the exact color of your walls! Really pretty on both!
You really should consider opening a bed & breakfast…I’d be there in a heartbeat!!
The chickpea salad is genius! It looks and sounds so delicious. All your recipes are so creative!
I know what you mean about the weather – its in the 30′s and now we have wind chill advisories for the middle of the week.
Although I was jealous when you had a SHORT SLEEVE shirt on for the giveaway!
Ahh…Java City…I used to love that place!
Salad looks tasty!
Congrats to the tote winner!
You’re the Caper Queen.
I thought I was the only one who spends like, 5 minutes at the condiment bar at coffee shops putting different stuff in my coffee!
Oh wow, tasty eats as always. I need to try some greek yogurt!
Your dinner looks filling and satisfying! I have a can of chick peas that I’ve been meaning to use… maybe this is the recipe!
Kath do you think we can get Barney Butter to offer free shipping again?? I so want to try their almond butter!
Your chickpea salad looks so good! And I agree, the coconut banana is better than the chocolate raspberry, I’ve already devoured both of mine!
The chickpea salad looks great! I’m bookmarking the recipe!
Hi Kath!
Sorry I haven’t written in a while…was on vacation (abroad) and then super busy at work. Anyway – don’t worry about the pants…mine felt unusually tight today too…weird:)
Also – I made your veggie lasagna recipe last night and it was a HUGE hit with the roommate, my brother and the roommate’s sister! Thank you !
I’m also keeping my eyes open for a KERF contest and the oatmeal bowl…I love bowls:)
I love yogurty snacks
I just wanted to say congrats on the ‘shroom channel post!
I love that yogurt, but TJ’s Greek is still my favorite.
Dinner looked good, but I still think your midnight snack looked the most tasty. Me & my sweet tooth.
I love Greek yogurt for dessert! And especially with little treats on top!
Congrats Lynette!
The salad and the snack both look fantastic! Suddenly I’m craving yogurt!
That salad sounds great. I am not a quinoa fan but I could easily sub bulgur or barley. Yum!!
Your dinner looks so good. I’ve never used capers because I’m intimidated, but this might be a good recipe to introduce myself to them. Thanks for sharing!
I’m liking that salad! I forgot how much I love capers.
Awww Java City! I miss that place- we had one in the library of my college!
Tj’s european style yogurt is my favorite! I can’t go a few days without it… so glad they had that temporary recall of the greek because I definitely prefer this kind!
Lovely “salad”!
Hey Kath! I gave you a blog award today!
Biz319 ,
I was COLD in that shirt – I just put it on for the video!!
JW ,
I think you can still get it with the HangryPants code – Heather had a deal going for a while. Lemme know if that doesn’t work and I’ll see what I can do.
Farah ,
Welcome back!
Token Fat Girl,
(Not sure I feel comfortable calling you that!!) But thanks for the award
Kath
looks really yummy!
Guess what!! Lynette is my MOM! And if you look, I actually made the comment that I wanted to win the tote for my mom. Looks like she won it herself!! I’m so happy for her. She loves your blog so much (I got her hooked over the summer!). Her birthday is on the 11th, so she got an early birthday gift!! Thanks for the contest Kath, so my mom could have her day brightened with a KERF tote!!!!!!
Emily ,
So glad I could brighten the b-day. I just UPSed it out today.
How sweet
Kath
P.S. I actually called her late last night forgetting she was probably asleep to see if she was the Lynette that had one and then she called me first thing this morning to let me know it WAS her! We were both acting like we’d won the lottery! We’re such foodies. LOL!
We have Java City at my college!
Hey Kath, thanks for your innovative ways to eat True Delights — looks delicious. And, so does that salad — yum!!! Hope all is well, great profile pic BTW.
