Sounds like rain.
Eyeballs confirmed: rain.
With spring weather comes April Showers, so it’s a trade off I will take.
Long time, no pancake!
I made one big fat Kodiak cake this morning (add less water to the batter to make it thick enough for a tall, fat pancake). I added some coconut and a few granola crumbs to the cake before flipping and then topped it with a tsp of cookie butter, seared banana, a scant tbsp of chia charger and some of my Ellwood Thompson granola (love that stuff Elly!)
It was a crunchy, creamy mess that was gone in 5 minutes!
Served with a teacup of tea
And a dash of rain splatter
I could use some yoga today. Good timing rain! But it already looks to be clearing out….

Your breakfast looks like the perfect breakfast for a rainy day! Those pancakes look so fluffy
I love the addition of the seared banana too. Yum.
I want a pancake now!! Looks awesome
My dream is have the privilege to enjoy delicious breakfasts like you every morning!
Yoga sounds like a fabulous idea today. I taught 2 spin classes yesterday, and threw in 2 treadmill runs (just for fun lol) so my body could use a little savasana!
Happy Thursday Kath!
mmmm those grilled bananas look amazing! happy thursday!
Love caramelized bananas – I have been topping everything with them lately. They says dates are nature’s candy, but I think these are where it’s at!
Ha, those bananas almost look like pickles, Kath!
Enjoy your day!
I love doing yoga at home on rainy days… the sound of the rain on my skylights is so relaxing.
So at first I thought it said “smells like rain” and I LOVE the smell of rain, yes I’m weird, so I was all excited. And then I realized it said “sounds like rain” that’s ok though, I am equally in love with the sound of rain.
I like rain in general, I am weird.
I was just eyeing my Trader Joe’s pancake mix I’m hoarding in the basement last night. This may have pushed me over the edge to make pancakes this weekend. Yum!
I am totally trying bananas!
mmmm i love a thick, hearty pancake! i seem to always demolish my breakfasts within five minutes… i just love breakfast!
The first thing that caught my eye was that lovely seared banana! One of nature’s perfect sweetners! Yummy! I also love the smell of rain…so earthy, fresh and invigorating!
I love the smell of rain! Spring is on it’s way!
Yummy!! I miss pancakes. I was making them as my weekly Sunday morning meal over the summer, but now my pancake batter goes unused :[ I might be going to IHOP tonight for half-off student discount night though! Woooo!
Perfect rainy day breakfast
Oh, that pancake tower looks too good! Might have to add caramelized banana to my pancakes this weekend!!
Our day here smells like…sunshine!!! But we had rain all day yesterday, so I guess it’s a fair trade-off
Breakfast looks delicious! Great way to start your day!
Love fat pancakes!!
I had pancakes this morning as well and meant to add granola and forgot! Looks absolutely delish (and that Ellwood Thompson granola really does look incredible!)
I wash I had the time for breakfast like that looks so yummy!
Being a yoga teacher, I can confirm that most people need yoga everyday!
Your breakfasts always make me wish for Saturday or to work from home. I love it.
This just reminds me how I need to make some pancakes!!!
That would be gone in 5 minutes for me, too.
It is a good yoga day, but due to circumstances I swapped my yoga and strength training days from yesterday and today, so it’s boot camp with Bob Harper for me. Hope I have more energy by the time it comes to work out!
Please advise, how do you make carmelized bananas? That sounds so interesting, I never think to cook fruit except for pies!
While the pancake skillet is hot, I spray a little oil misto and put the banana face down. It just sits there for about 4 minutes and then I flip it. When the pancake is done, it is done!
Thanks can’t wait to try it!!
Sometimes, I slice one up and throw it on the panini maker. I’m a sucker for grill marks
Ah, I was wondering the same thing. Can’t wait to try this on a bowl of oatmeal or cereal, as I’m not a huge pancake fan (blasphemy, I know).
I have yet to try the Kodiak cakes!!! Thing it is time!! Have an awesome day!
After a first breakfast at 6:30 this morning, I’m hungry again already and that looks fabulous!
I’ve always wanted to try Kodiak cakes! I pass the mix at WF all the times but I end up passing it up. Looks delish!
Oh great, now I’ve got to make pancakes for breakfast this morning. Looks so yum!
I love the way you cut those bananas!
Pancakes with scrambled eggs is one of my favorite post-run breakfasts. Today it was eggs and toast- I didn’t have time for pancakes. Yours looks yummy.
This looks like a perfect rainy day or any day breakfast and love the banana spears…they look perfect!
Mmmm that looks so good! I usually put bananas in my pancake batter. Totally going to caramelize one next time instead! Enjoy yoga! I can’t wait for my class tonight

That looks like one powerful breakfast!
What a delicious breakfast!
Love the bananas in there. YUM! And love your mug. I’ve got the same one!
I made different varieties of protein pancakes all week. Tomorrow I am dabbling with making some lemony cakes. Yours look divine, as always. Hope it this drizzly weather clears up soon. We were spoiled by that taste of spring!
Dang that looks fabulously delicious. Kodiak pancakes are really good! I always wondered how the coach’s oats pancakes taste though. Have you tried ‘em Kath?
I haven’t but I should!
Looks delicious-as always!!
Those pancakes look delicious! I am thinking my Saturday morning needs to include pancakes!
Yoga in the rain is my favorite; so calming! Also, I neeeeed to remember the banana trick and to pan fry my bananas with breakfast. So yummy!
I thought that was a pickle at first on your pancake. Lol! Your pancakes look awesome. I wish mine looked that good!
I bet it’s at least rainy and warm though? It’s 34, foggy and snowy here
I don’t think I’ve ever cut a banana vertically (obviously I haven’t been making banana splits correctly) and couldn’t figure out what yours was at first.
Love that we’re getting warm rain at this time of year as opposed to freezing rain!
Pancakes were meant for rainy and snow days. Mmmmm, mmmm good!
mmmm pancakes!!!
That looks like the kind of pancakes my Grandmother used to make! She was the queen of the huge pancake!
I grew up in Richmond, and my mom used to shop at Ellwood Thompson all the time. Love that store! So much yummy stuff there
You eat all my favourite food! Loving this!
xox
Like I have expressed before, if it is January or February in the northern states, it should be snowing, not raining. The weather this year has been a lot different than last year when we got an influx of snow. Oh well!

I love that you don’t let rain rain on your parade-instead you celebrate with pancakes. that’s a life lesson for your readers!
Mmmm…Kodiak cakes! THE…BEST…EVER
Just wanted to say thank you for all the great tips. I bought some of the chia charger off opensky and I love it. I spread it on toast in the morning or add to my oats and it keeps me fueled for hours. Your blog has become something I look forward to reading everyday and I usually end up trying your recipes or the products you recommend. I am very much hooked on Trader Joe’s Sunflower seed butter. Yum! I am trying to start a blog for my health coaching website but I am not a computer wiz. Any easy tips? Hope you have a great Weekend!!
Thanks Meghan!

Thanks! Sounds Great!
Thick pancakes > thin. Unless there’s enough thin to make a giant thick one
