Drowning in rain today. Aching for blue skies. But life is not sad-blue because what’s being served is full of color!
I decided to keep my workout at home today given the dreary weather. Also an opportunity to try out a new prenatal DVD. Expecting More sent me this one to review on BERF. Details coming there, but I have to say it was the best workout DVD I’ve ever done. I actually SWEAT and got out of breath! The 50 minute workout (including warm-up + cool-down was awesome).
I got behind on my eating and nothing sounded good for me for lunch except cheese. Funny how I seem to revert to first trimester aversions when I get behind schedule.
Remedied with a cheesy quesadilla packed with red peppers and sharp cheddar
Irresistible chips!
And a bowl of yogurt topped with a super ripe mango, chia seeds and coconut. Divine dessert!
Havin’ a blast tucked away at home today, but now, I venture outside.

Wow, that mango looks so juicy! I don’t usually have much luck with mangoes, but I might have to pick one up soon and give it another try – yours just looks so good!
I hate the rainy weather but boy do we need it where I live! We haven’t had rain in such a long time and there is pollen everywhere.

I haven’t tried cashew yogurt yet, but I make cashew cream ALL the time (dairy doesn’t disagree with me, but I try to avoid it except when it comes to aged cheeses and yogurt) and when I posted my recipe (http://www.fromseedtostomach.com/2012/02/have-you-discovered-cashew-cream.html), one of my readers commented about cashew yogurt. She made it and had good results. She included the link to the starter she used in her comment! If you have a food dehydrator, I think you can make yogurt in that, BTW. Good luck, Nicole!

There was a good bit of jumping (jump rope, jog in place) which threw me at first, but I got used to it and there are low impact options too
My mood is matching the rain today. We had a horrible loss in our community and my thoughts are just gloomy. I’m definitely hoping for sunshine soon.
Maybe I should try the workout video NOT being pregnant.

My midwife always told me that “pregnant women can’t have too much salt” – maybe the chips are irresistible because you want the salt? (or maybe it’s just because chips are the most wonderfully crispy mouth-wateringly delicious thing ever invented… yep, probably the latter.)

The mango you had for lunch looks so good!! I Tried your cottage cheese oats yesterday morning. Definitely not my thing
I stirred them into the oats after I cut the heat but it made my oats cold and i didnt like that. So i put it in the microwave for a bit to warm it up again and that made the cottage cheese rubbery.
I use cottage cheese in overnight oats sometimes and its really delicious! Have you tried that?
Sadness. Maybe keep on the heat longer next time (if there is a next time…)
I have never put CC in overnight oats…ironically, I’m scared of messing up the texture!

The texture is still super thick and doughy the only difference is more of a cottage cheese flavor. I still prefer using greek yogurt but its a nice change and delicious too.

I love adding some CC to overnight oats along with yogurt. The CC adds a tasty saltiness which I love!

I’ve been on a cheese kick lately, too, which is bad since I don’t eat dairy, and the non-dairy cheese I do eat ONCE in AWHILE is kick-my-butt expensive! Ugh, haha!

Just wanted to tell you that we just ate your mushroom lasagna for dinner tonight and it WAS SO GOOD! My husband who usually hates pasta couldn’t stop saying how delicious it was and he really like the flavor the smoked mozzarella added to it! So, so good, it will definitely be added to our dinner rotation!

I long for the days when it’s not raining. Unfortunately living in Oregon, those days are very few and far between this time of year. I guess that’s what they mean by April (and March and February…) showers bring May flowers.
