I woke up with a jolt this morning, sun pouring onto my bed. “I’m missing it!”
Went down and got some oats started as I caught up on the big event. I would have loved to watch every bit of royal wedding media this week, but life has been so busy! Glad I got to see some of it live – including the kiss!
I chose my most royal linens from my grandmother and a blue willow plate for the occasion
Wedding Oats
1/3 cup oats, milk 1/2 cup water 1 tbsp chia seeds Half banana Pinch salt Sprinkle cinnamon 2 tbsp cooked wheatberries, stirred in at end Vanilla Crumbled FANNEtastic Oat Puff Ball + Sunflower butter
There was no time to make tea with breakfast, so I put some on after. I searched my tea jar for something more English, but couldn’t find any! Peppermint it was.

We’ve got a stunning weekend ahead – 75* and sunny. I’m going to Body Pump this morning and then I’ll be joining Matt at the bakery for a while and also tomorrow morning. Lots to do to get this bakery going!

I watched the entire wedding while getting ready for work this morning, and got up extra early to watch everyone arriving before the start. I had to drive to work after the ceremony, but managed to see the kisses live once I got there. Woo-hoo. Love it!

Wedding oats- haha love it! In spirit of the Royal Wedding, my snack was clotted cream,jam and fresh strawberries…oh wait I mean Greek yog, fruit preserves + strawbs!

I actually got up around 5:30AM to watch the The Royal Wedding. And I am glad that I did not get up any earlier, because I just wanted to see a little bit of the hoopla before she went down the aisle, not everything. The wedding was beautiful, and she looked stunning!

I know you are so busy but I’ve been wondering if you think that getting a food processor is a good idea if I already have a Vitamix. I want to start making my own nut butters, hummus, banana soft serve, raw dessert balls, etc. Does a food processor handle these kinds of foods better than a Vitamix? Thanks for your time, Kath, and for ALL you do!!
I really like having both. The FPs are only about $129 – a lot less than the Vita-mix! I don’t think you can do chunky things as well in the vitamix – like nut butters. You can also slice and grate in a FP. I think it’s a good investment!

Hey Kath – Your oatmeal always looks WONDERFUL and I would love to steal some of your recipes, but I can’t eat bananas. Do you have any recipes that don’t use bananas, or do you have any recommendations of what to substitute? OR, can I just leave it out?
You can just leave it out – but pumpkin is a great subs! Or chopped apples or pears too. I have a few recipes that use other fruits on the tribute page.

I watched part of the wedding, took my walk and got back just in time to see the kiss. I loved her dress and her smile. She was just beaming. I feel so connected to all of the other women in the world who were following, messaging, texting and talking about the details. I love weddings but this one was stunning in Westminster Abbey.
I watched 7 hours straight of live coverage – couldn’t get enough!
Luckily for us down under, the wedding occured between 8pm – 11pm, so it made for a lovely night. Pretty dress!
