Rained On My Parade

April 26, 2011

Boy, Matt and I are both worn out.

He spent all day putting together this oven.

And my shoulders ache from sitting at the computer all day. I feel like I made a tiny chip in a wooden block the size of my house!

Brain food came in the form of 2 of my FANNEtastic Oat Puff balls – they were delicious!!

Despite being pooped, we managed another nutritious dinner, cooked in 10 minutes. We are super low on groceries too, so it was quite the accomplishment!

Grilled Sausage over Pilaf with Beer-Braised Greens

We grilled our leftover sausages in 5 minutes.

On the side, I heated up leftover brown rice with a handful of cooked wheatberries (I’m finding how convenient it is to have cooked grains on hand during these busy times!) with a few tbsp of Tribal Moose Cranberry BBQ Sauce, ‘bout a half cup of frozen corn and cilantro. The pilaf was great!!

I picked up a big bag of mixed “braising greens” at the farmer’s market and we steamed them in 1 cup of homemade smoked brown ale until they were tender and then removed them and cooked down the sauce with a drizzle of honey and a pinch of salt until it reduced by half.

Ultra delicious!

Our nice dinner got moved inside due to a massive thunderstorm.

I had plans for a lovely evening walk with my audiobook and it turned out to be a wash. Literally. No daylight or dry skies to walk under :( Boo to rain on my book parade. When I listen to my book in bed I just dose off! Zzzzzzzzz.

Enjoying a taste of dark chocolate as a night cap!

I am seriously impressed with the oven assembly — pictures tomorrow?

5 Angie @ Musings of a Violet Monkey April 26, 2011 at 8:20 pm

I was hoping for a storm tonight, but it seemed to have passed us over here in Charlotte.
Your dinner looks delicious!
What kind of sausage is that? Local?
(If you’ve already said, don’t mind me! I must have missed it)

6 KathEats April 26, 2011 at 8:22 pm

I forgot the brand. Something Haus? Organic from Whole Foods

7 Stacy @ Every Little Thing April 26, 2011 at 8:26 pm

Yum, I love meat over greens. Can’t beat that combo.

Stay safe in the storm! We had some nasty ones here in St. Louis the past week.

8 Laura Jane April 26, 2011 at 8:27 pm

I need some fast, healthy dinner ideas, since I’ve been so busy lately. It’s seems like it’s rained the past two months straight here in Pittsburgh. I’m ready for some cheerful, warm weather!

9 Katie @ Nourishing Flourishing April 26, 2011 at 8:28 pm

Take it easy tonight — even if that means falling asleep to your book :)

What does the rest of Matt’s Lagunitas shirt say?

15 KathEats April 27, 2011 at 8:07 am

Oh gosh, I don’t know and am too lazy to go dig it out of his dirty clothes. Just something about good beer!

16 Lauren April 26, 2011 at 8:38 pm

Mmm looks like a great fast and delicious meal!!!

17 Estela @ Weekly Bite April 26, 2011 at 8:41 pm

I think those thunderstorms are heading our way soon!

18 Baking Books April 26, 2011 at 8:48 pm

Are you reading the Anita Shreve book on audiobook? You don’t read from a book at night?

Ditto on the rain – big thunderstorms here. Scary when you have a window and no curtains next to your sofa!

19 Averie (LoveVeggiesAndYoga) April 26, 2011 at 8:52 pm

Kath the braised greens look wonderful..honey drizzle, mmm, good.

And the brain food. Cute!

Hope you are all warm, dry, avoided the rain, and ready for a chill evening. Sounds like you can use some downtime!

20 Namaste Gurl April 26, 2011 at 8:56 pm

I guess I’m not alone in my 10 minute dinners :) I went for quinoa pasta tonight with veggie/ nooch tomato sauce and side salad. Pretty good for 10, no? :)

21 staceyhealthylife April 26, 2011 at 9:01 pm

22 Char April 26, 2011 at 9:09 pm

Wow beer-braised sounds SO good..I would never have thought to try that. It’s raining where I am too if it makes you feel any better – in the forecast all week :(

23 J3nn (Jenn's Menu and Lifestyle Blog) April 26, 2011 at 9:09 pm

27 Mary @ Bites and Bliss April 26, 2011 at 9:53 pm

Too bad the weather wasn’t on your side this afternoon. Hopefully it’ll be better tomorrow!

28 Laura @ Sprint 2 the Table April 26, 2011 at 9:55 pm

Dark chocolate is always my night cap… isn’t it good for the heart?! :)

29 Natalia - a side of simple April 26, 2011 at 9:58 pm

Dark chocolate has been certainly been making its appearance in my life since the Easter bunny made the rounds 😉 Have a good night!

30 Amelia (Eating Made Easy) April 26, 2011 at 10:03 pm

Sausage and greens are just about one of my favorite meals — for breakfast with an egg, or dinner with some polenta or oat bran and a drizzle of maple syrup, like this:

…in fact…i’m now craving this!!

31 Danielle @ weightsandmeasures April 26, 2011 at 10:07 pm

Having cooked bulgur in the fridge has aided in four meals since Saturday. I’m learning the art of soaking and cooking ahead of time.

32 Hannah April 26, 2011 at 10:41 pm

Oh gosh, the oat puff looks tiny next to those greens! That kinda summarizes your food philosophy, doesn’t it? 😛

33 Alaina April 26, 2011 at 11:04 pm

I love how creative your dinners are! Very inspiring. :-)

34 Eve April 26, 2011 at 11:17 pm

I’ll bet I’m not the first person to comment upon/ask about, but I LOVE your white vase- so sleek and elegant! Where did you get it from? :)

35 KathEats April 27, 2011 at 8:08 am

It’s from OpenSky! Was on special with a twin a little bigger a few weeks ago

36 Roxana @ Makeup Fanatic April 26, 2011 at 11:59 pm

Wow. I don’t even eat sausage and I’m beginning to salivate…Looks delicious!
Your weather is so bipolar! It’s funny! A bit like Boston :)

37 lynn @ the actor's diet April 27, 2011 at 12:03 am

i’m lucky to live in los angeles, where it rarely rains on my parade. but now that i’m in san fran for a few weeks, the weather is definitely screwing with my plans!

38 Kate (What Kate is Cooking) April 27, 2011 at 12:16 am

That’s quite a creative meal to make in such a short amount of time! It looks delicious :)

39 Khushboo April 27, 2011 at 1:25 am

Always feels like such an accomplishment being able to make a meal out of minimal groceries…a yummy one is even better!

40 Greta April 27, 2011 at 1:29 am

I love the method of braising greens in ale! I guess it’s one way to get guys to eat their veggies :) Can’t wait to try it!

41 Kristi April 27, 2011 at 1:40 am

For being low on groceries you made quite a meal. :) I’m impressed.

42 Kristen @ The Red Velvet Life April 27, 2011 at 1:51 am

Looks delish! And I enjoyed a little dark chocolate tonight, too! Ghiradelli tonight, though lately I’ve been going for TCHO. Mmmmm…might have to add a square to the oats in the am. :-)

43 Crystal April 27, 2011 at 4:59 am

I love all of your last minute meals – they are always so healthy and delicious looking!

44 Lauren April 27, 2011 at 5:56 am

Doesn’t it always seem easier to put together these kind of meals in the warm weather? They always taste better too!

45 kaila @ healthy helper! April 27, 2011 at 6:17 am

I love that cooking idea for the greens…I never eat steamed greens because I just cant see to get them flavorful enough for my tastes! But your method sounds awesome….reducing is such a great technique!

46 [email protected] April 27, 2011 at 6:31 am

Those greens look delicious. Will definitely have to try that cooking method…yum yum :)

47 Christine @ Burning It Off April 27, 2011 at 6:58 am

Just goes to show that it’s not impossible to make healthy meals, even when you’re crunched for time… I’ve seen restaurant meals that don’t look half as good as your dinner!

48 Chelsea @ One Healthy Munchkin April 27, 2011 at 7:27 am

You guys never fail to amaze me with the spur of the moment meals you whip up! Your dinner looks wonderful.

49 Jun April 27, 2011 at 7:55 am

What natural sweetener do you most commonly use?

50 KathEats April 27, 2011 at 8:08 am

Honey, I guess.

I don’t really sweeten anything and when I do bake, I just use sugar

51 Hope April 27, 2011 at 8:00 am

Your dinner looks amazing! I can’t believe that only took 10 minutes! It looks really great! I hope you got some rest and are feeling better today! :)

52 PR_Cal April 27, 2011 at 9:11 am

Can you taste the beer in the greens? If so, this might be the solution to get my BF to eat greens!

53 KathEats April 27, 2011 at 9:23 am

A little!

54 LauraJayne April 27, 2011 at 1:19 pm

I’m sorry your walk got rained out – but I love thunderstorms in Virginia! When I was little, I would wait for the summer storms and sit on the deck and enjoy them!

55 Melissa @ Journey to Marvelous April 27, 2011 at 2:16 pm

I hate it when the weather ruins my plans! Hopefully you can get out for a walk today. :)
