Rainbow Crunch Lunch

August 19, 2009

I’ve got 7 days to get my life organized before classes start and I feel like I am just getting busier!! I’ve got a few consultations already – thanks guys! I’m excited to get started.

I left for the gym at 11:30. A 5-day break and I was ready to get back at it! I did the usual:

Bike –> Elliptical for 30 –> Lift for 10 until my muscles were fatigued –> Bike

EAT!

I was in the mood for a tasting plate –

Carrot, zucchini, pepper, plum

Dipped in this Fiesta Raspberry Jalapeno dipping sauce, that’s really just like a spicy jam. I love sweet + savory so it worked well with the veggies

+ a hunk of Flax Oat Bran, my favorite Great Harvest bread, with some Raspberry Rhubarb preserves and walnut butter

+ strawberry Oikos. Ate it plain and simple – enjoyed the fruit on the bottom more this way.

I’ve got a conf. call, then a trip to the grocery store, and more organization to do.

Tonight = Girls Night at my place!!! Kelsey, Lauri, and Ashley are coming over to make dinner before school starts and Ashley moves away. Last hurrah!

Just sending my congratulations on getting your consultations off the ground. I am new to the blog world but have admired all you’ve been able to do. I’m starting back at school to be an RD as well, so I am especially interested.

I can’t find strawberry Oikos in my area, though. Perhaps I’ll have to ask ‘em to stock some!

you’re making me want to make a trip back to great harvest! So far the only kind I’ve tried is extreme cinnamon swirl or something like that. It was whole grain and awesome. we froze some of it and defrosted it last week for french toast, and wow…wonderful. :)

I had the strawberry oikos at the summit and really like it. I’m typcially more of a plain yogurt gal, but the strawberry was a nice change of pace. Enjoy your girl’s night!

Your yogurt reminded me… This weekend, I bought the Trader Joe’s brand of greek yogurt instead of Oikos/Fage because it was less $$, and didn’t say anything to Ryan. On Monday I made his lunch for him (that he took to work) and when he got home he was like, “What’s up with the yogurt, it was runny and sour.” Guess it didn’t pass the taste test. There is just something so rich and creamy about Oikos and Fage.

Kath — I am also studying to be a registered dietitian and my classes start Monday, I can’t believe summer is already over! I’m going through the same crisis, feeling totally unprepared to start up school again! Have you done your internship yet? I am really looking forward to that part of the ADA program! Good luck this semester!

Ooer, I’ve never tried walnut butter! That’s actually never even occured to me!

I can’t believe people are starting school already. So sad to not be returning this year :( Don’t think I’ll be saying that come December exam time though :P

You MUST go back!!!! Personally I think the cinnamon chip is my least favorite bread – because I love all the nutty hearty ones. Try Flax Oat Bran!! Or Whole Grain Goodness. Or Dakota! High Five Fiber…
