Beautiful fall day ready to get going!!
Up for a run at 7 this morning – skies were blue, leaves were red and orange. These are the days I wait all year for!!
I actually ran to the farmer’s market, which I have been SO sad not to go to all summer with bakery + busy-ness. I stopped in to see the sisters behind No Bull burgers and chatted for a while. They are so nice! Came home with a pack of burgers frozen in my hand!! Dropped them off and kept running. Think I covered about 4 miles?
Overnight pumpkin oats were waiting for me
The mix
- 1/3 cup rolled oats
- 1/3 cup pumpkin
- 1/3 cup milk
- 1/2 cup greek yogurt
- 1 tbsp chia seeds
- Cinnamon
- Pinch salt
- Cville Cluster
- Biscoff

I am going to try those overnight oats tomorrow – they look good. I like the photos of the pumpkin on the steps. Congrats for supporting the Farmers Market. I always like to support the little guys and local producers

those oats look good! I made myself pumpkin yogurt this morning! Half greek yogurt and half pumpkin, with some cereal thrown in! Can’t get enough!

There’s nothing better than the perfect fall day! Here in Alberta (Canada) it tends to go straight from summer to winter it seems, but we’ve actually had a fall this year! I love it.

Your overnight oats look delish! I just have to tell you that I stopped in the Great Harvest in my neighborhood-in Carmel, Indiana-and had the veggie sandwich on Dakota bread. It was probably the freshest veggie sandwich I’ve ever had. Also, the new owner here, Jerry Lecy, mentioned that he helped with training out west with you and Matt!

How do you incorporate the Greek yogurt into the oats? I watched your youtube about milk + water + banana + oats and have yet to try it but am never sure with your yummy looking breakfasts at which point to incorporate which ingredient. Do you mix it into the oats while it’s still on the burner? That’s like the best of both world!

These were actually overnight oats -which are soaked in milk and yogurt overnight and never cooked. I don’t cook yogurt – it separates!
Right after I posted, I went into your oatmeal tab and learned alll about overnight oats – fascinating. Thanks!
Love the TWHS comment. My husband and I are big Office fans and we say “that’s what she said” all the time. Our 4 year old son started saying it months ago and the a lot of the time he says it at appropriate times. I’m sad that the farmer’s market season is coming to a close. I think our Sunday one is still going on so I was just thinking that I need to try and make it tomorrow, but I’d also like to go apple picking because it’s the last weekend at one of the orchards. I want fall to stay forever, no W-word season for awhile!

hey Kath! wondering when you put your morning bowl of deliciousness together, what you are shooting for, what you are thinking in terms of carbs/proteins/dairy?
I am trying to make your oat concoction in the morning & have been adding chia seeds, sunflower butter, dollop of jam. But i am always wondering, “should i do more chia seeds? should i do a shot of hemp protein powder” for more protein? Just wondering how you think when you put your plates/bowls together.

I don’t aim for a number of grams or calories of any of those – I just make sure to include them near to their serving sizes. So for carbs it’s either 1/3 cup oats plus granola/muffin or 1/2 cup oats, which is a serving. For dairy, it’s usually 1/3 cup milk in my oats or maybe 2/3 cup dairy in overnight oats or 1 cup yogurt. Just depends on what I’m having. And fats almost always come from nut butters. I stick to 1/2 -1 tbsp chia seeds.
