I’m just going to apologize now for the abundance of pumpkin in the next few weeks.
Know that:
- It’s one of my top 10 favorite foods and flavors
- It’s a superfood!!
So behold: pumpkin on pumpkin action:
Coach’s Oats { <– on sale right now!} made with milk, water, banana and chia seeds. I added 1/2 a cup of pumpkin when the oats were 80% thickened over medium heat. Then I stirred in a pinch each of ground cloves, cinnamon, all spice and nutmeg.
Topped with some crumbled Great Harvest Pumpkin Chocolate Chip and a smidge of Barney Butter!
Served with tea {who is this tea junkie!?}
And a dash of sunshine
I woke up really sore + stiff this morning. I swear leftover from Monday’s Body Pump! Chris has magical powers so that one new muscle becomes sore each day after his class throughout the week just as one is getting better. Yesterdays killer cycle class didn’t help.
So this morning’s run was postponed. Walking sounds like a good afternoon plan.
This morning I’m speaking on Real Food at a wellness fair as part RD, part pro-food-blogger, part bakery owner.
Have a great one!

Wow those colours are amazing! So autumnal
Good luck with your talk!
That’s what I was thinking! So many pretty fall colors. Love the green bowl.
Represent the RD!! And never apologize for a pumpkin overload!
One should NEVER apologize for too much pumpkin! I don’t actually think it is possible to have too much of it! I think pumpkin is my favorite superfood!
I could never get sick of pumpkin! There is no need to apolgize. I think the majority of us are just as in love with pumpkin as you are.
Good luck speaking today!
Have a great time at the fair!! Oh and ps, I love the dash of sunshine!
I’m loving all the pumpkin recipes – so keep them coming. I even added a scoop of pumpkin to my cereal this morning!
Ok I didn’t know pumpkin was a superfood. Three cheers for that. And for all the pumpkin recipes you’re going to post. Post away, can’t wait to see them all
What a colourful breakie! Cute bowl
Looks DELICIOUS! And nothing but pumpkin is fine by me… I’m already turning orange and it’s not even October yet!
Haha that’s a lot of pumpkin! But I’m not complaining! I’m in love with pumpkin right now!
I love pumpkin right now, I just had a huge bowl of pumpkin oats for breakfast! Good luck with your talk this morning!
i feel so boring posting about pumpkin, pumpkin, pumpkin!! my goal for this week is to incorporate it into meals other than breakfast, though.
just returned from a long morning walk to stretch out the muscles. it was glorious!
Have fun at the fair! Oh, and there is nothing wrong with eating lots of pumpkin. OH so good. And the color is great for pics too
Too much pumpkin? Nah. I’m currently perfecting my recipe for a spicy pumpkin soup… it’s so good. I should have the recipe down by this weekend. You should try using your pumpkin in savory meals, to help you use it up.
Good luck on your speaking engagement!
~
I didn’t know that pumpkin is a super food!! And you can never have too much pumpkin!
I love all things pumpkin – bring on the pumpkin abundance!
On a random sidenote; did you see what Picky-Palate is making? Biscoff Cupcakes with Biscoff Buttercream – thought you might love it
http://picky-palate.com/2011/09/26/biscoff-cupcakes-with-biscoff-buttercream/
I saw those!! Total yum
There is no such thing as too much pumpkin! I found a jar hiding out (next to my wheatberries!) in the pantry last night. Seriously – cleaning out the pantry made for more excitement than pretty much anything has in the past several weeks! Haha.
I bought the coach’s oats! I’m super excited to try them and nearly freaked out when I saw they were there – a good pick by you for sure (in my food-obsessed opinion!)
You never have to apologize for pumpkin to me! It’s funny how it’s so “cliche” to use pumpkin right now, but I love pumpkin all the time, not just because it’s fall. That just makes it even more special
Have a great day!
i bought 17 cans of organic pumpkin yesterday.. bahaha
I think I’m one of the only bloggers who isn’t gaga over pumpkin! Enjoy your day!
Did you just APOLOGIZE for going a little gourd crazy in autumn? Woman, I would be concerned for you if you DIDN’T post about pumpkin every day.
the absolute best part of fall:
pumpkin ANYTHING!
speaking of,
any chance you could do a pumpkin butter post?
i’m excitedly gearing up to make some
and i’d love some kath-ish inspiration!
I made this one once, but I think Trader Joe’s is better so I had that ever since:

You can never have too much pumpkin
Have a great day!
I’m in a pumpkin obsession right now, so your breakfast looks GREAT to me, Kath!
I did not know that pumpkin is a superfood. I am going to eat more pumpkin then. You should make a shirt for the fall season that says, “Eat More Pumpkin”
— even though pumpkin can be eaten any time of the year.
http://faithfulsolutions.blogspot.com/
Totally!
One should never apologize for too much pumpkin
I take this as a challenge to put pumpkin into my family’s menu for October… game on!
Pretty bowlful…wish I liked canned pumpkin!
Have fun today…I’m sure you’ll wow your audience!
Good luck speaking today! What a great breakfast to start off the day with! <3
I think I have pumpkin envy after seeing that HUGE can Matt procured for you! Also, have you tried Pumpkin Spiced Tea yet? It’s even decaf! I know you love tea and pumpkin, but not sure what you would think of this combination:

I generally find pumpkin spice teas to be too spiced for me – I don’t really like ginger that much. How is this one?
Love the pumpkin on pumpkin action.. haha!
Also love when the soreness of a workout tends to linger.. because you know you really worked the muscles.
mmmmm I love pumpkin!
This post reminded me that I need to check for the pumpkin spice Keurig coffee this weekend! I’m still finishing up my coconut coffee from the summer, but don’t want to miss the limited window that the pumpkin is in stores! I also have a FedEx package on the way with three new types of tea from Republic of Tea – coconut cocoa, red velvet cake and caramel apple! Can’t wait to try them!
Pumpkin muffins on banana-ey oats is one of my favorite breakfasts. Pumpkin muffin on OOIAJ? Is also AH-mazing.
I’m gonna go out on a limb and say this is probably my ideal breakfast. Yum.
I am so cheesed I just ordered a gajillion pounds of coach’s before the sale. I intend on buying more. I am an oats hoarder. Just oats though, no old food or dead birds.
Never apologize for pumpkin!
Pumpkin on pumpkin..best way to go!
Pumpkin is soo so so so good and you can literally do anything with it! I have yet to figure out how to combine it with chicken…. pumpkin ale chicken perhaps with pumpkin infused brown rice and grilled pumpkin….
haha sorry I am clearly obsessed. and very excited for more pumpkin posts.
Tis the season for pumpkin overload. I’m going to just go with it and embrace it.
I look forward to all of the pumpkin posts! I made oatmeal this morning and was sad I didn’t have any pumpkin to add to it. Must buy some right away!
Someone gave you a shout-out on Yoni Freedhoff’s blog Weighty Matters this morning.
I love pumpkin anything.
Fun! Thanks for sharing!
Quote: “I’m just going to apologize now for the abundance of pumpkin in the next few weeks”
Why? Tis the season, and we will pumpkin eat until we are all pumpkined out, which will be at the end of October…. Am I right readers?
Oh, and by the way, after the pumpkin “season”, we can always use a pumpkin recipe and use another squash instead! Hence, NEW recipe!
I never get tired of pumpkin. I eat it year round.
I eat it through about March!
Kath,
Can you buy those Coach’s Oats locally? I almost bought some on OpenSky but then thought it’s silly to ship them across the country if I can grab them at my local Kroger/Whole Foods. Thanks
PS, for Cvillers, you can get Biscoff at the Barracks Kroger! I didn’t realize this until I saw it there a few weeks ago!
Hillary – at the other Kroger too (Rio Hill)
=D
Hillary – ETA:
Coach’s Oats are also available at Costco. I know we don’t have one in town, but Short Pump or Harrisonburg does
Sweet!! Thanks. There’s a Costco near my parents in Nashville so I’ll have to stock up the next time I’m there!
Glad Krissy beat me to it
Costco is the only place I know of
I know this is one of those things I’m going to have to google to find out more – but I had no idea pumpkin was so great for you!
No need to apologize for the abundance of pumpkin– it’s one of the best parts about fall!!
Pumpkin on pumpkin anything is amazing! Last night I had Pumking with a pumpkin dessert! Wooo!
Jealous!
mmmmmmm – the GH pumpkin choc chip was one of my FIRST introductions into GH. It’s the thing that has always made me go back! Delicious!!!!!
I’m sore this morning from Tuesday! I did 100 squats during my workout.. and my left inner thigh is screaming. Not the right one though – perhaps that one will hurt tomorrow?
Pumpkin chocolate chip?! Agh – send some to NYC, please. This pregnant person has been craving pumpkin. Had a really delicious apple pumpkin soup from Whole Foods the other day. Wishing my constant nausea wasn’t preventing me from cooking, otherwise I’d make up my own batch.
All your lives and jobs collide into one talk… pretty cool how they all relate so well to one another!
I love you pumpkin recipes! Those oats look fantastic! I’m trying to find Body Pump classes in Chicago – it sounds like it’s an amazing class!
Correction: I love *YOUR* pumpkin recipes.
I saw this and immediately thought of you and the bears : http://www.lilsugar.com/Goldilocks-Three-Bears-Birthday-Party-19176519?
I think it’s an excellent way to celebrate in the new house
Oh wow – I LOVE the design there! And those tiny chairs!!
Pumpkin overload: no apology necessary.
I feel like that she be a t-shirt…
**should be a t-shirt
(eek typos!)
bodypump seriously sounds like the best!
And young lady, you have violated code 108374 by using too much delicious pumpkin in the morning. haha jk, it’s totally good in my book!
Love the pumpkin on pumpkin reference. Too funny
And I feel ya on the pumpkin love!!
Mmmmm…pumpkin!
I started eating pumpkin oats last year after I started reading KERF – Life. Changing.
Also, your home is so, so lovely and peaceful looking… Congrats! You’ve truly got a gift for making spaces beautiful.
love pumpkin year round! Great with yogurt, spices, and applesauce, low cal pumpkin pie taste! Learned it from Weight Watchers, where it is a zero point food! Good news.
No need to apologize – there is no such thing as too much pumpkin! I’m looking forward to seeing your different pumpkin ideas because my cabinet is housing near 10 cans that I’m sure are anxious to be used in new and exciting ways. Pretty mug, by the way.
You can never have too much pumpkin, in my opinion
It’s fall, it’s totes fine!
pumpkinness = yumminess
I’ve been making “overnight oats” with Pumpkin instead of yogurt or milk and throwing in an extra scoop of protein powder. It’s awesome and not using dairy makes it pre-workout friendly
No shame in being a tea junkie! I work at a coffeeshop and since I started working there, I’ve had far more tea than coffee to drink. Of course, I’ve only been working there a week. This may change.
Good thing there’s no such thing as too much pumpkin!
Have you ever tried using canned pumpkin in a savory dish before?
No need to apologize for the over abundance of pumpkin!! What a great problem to have on your hands!
I love pumpkin and won’t mind a bit if all your pictures are orange for the next three months!
I think I know what I am having for breakfast tomorrow, thanks Kath! I ordered the Coach Oats from Open Sky, I can’t wait to get it!!
chris killed my legs in athletic conditioning on thursday (in a good way!)…had trouble walking still today (friday). he rocks
HI Kath! I am just trying to find the recipe you use for plain ol coach’s oats pumpkin! i am making it tomorrow on the stove top but do not know how much milk and water to add (cup wise)?! Could you provide just the full out recipe of how much oats, water, milk, and pumpkin you add!?
Hey Miley,
I use 1/3 cup coach’s oats, 2/3 cup water, 1/3 cup milk, half a banana, pinch of salt all in a pot. Heat to a bubbling simmer and stir until thickened. Then stir in about 1/3 cup pumpkin and spices at the end.
