Pumped For The Gym

June 18, 2012

A few weeks away from my twice-a-week weight lifting classes and I was missing them! Especially when combined with 3 vacations in a row of delicious food. Getting back to my routine and seeing my friends was just what I needed this morning.

Back on the homefront, I nibbled on some pretzels while I decided what to make for lunch. I didn’t really want a salad. I didn’t really want anything but I decided a salad was the best choice, so I wobbled out to the garden to pick some lettuce.

Fresh, soft lettuce was delicious! Served with avocado and cheddar cheese, a fried egg and a drizzle of olive oil and honey.

On the side – protein-packed greek yogurt with granola on top.

And hot tea – because it feels more like April than June out there!

This cloudy weather is making me sleepy, but I have lots to do/write this afternoon!

Had a few yogurt parfaits today too! Something about the creaminess of yogurt with some cirspy crunchy toppings is just delicious!

2 Annette @FitnessPerks June 18, 2012 at 1:06 pm

YAY for you! BodyPUMP is always such a mood lifter. I swear it makes the rest of the day that much better 😉 Congrats on sticking to workouts throughout your pregnancy!

3 Sana June 18, 2012 at 1:07 pm

I am FREEZING today! Chugging away on some hot tea!

4 Ashley @ Coffee Cake and Cardio June 18, 2012 at 1:07 pm

I agree! The cloudy weather is making me sleepy. Have a great afternoon.

5 Katie @ Peace Love & Oats June 18, 2012 at 1:14 pm

Haha I’m feeling very sleepy, but I think that’s a combo of waking up at 2:30am and never falling back asleep and getting blood drawn this morning. Oh, and sitting at a desk all day…

6 Caroline @ After Dinner Dance June 18, 2012 at 1:16 pm

I actually had the heat on in my car for a few minutes today! And Wednesday it’s supposed to be 97 – craziness!

7 Johanna B June 18, 2012 at 1:24 pm

I’ll send you my weather. It’s not like June here today it’s more like August. High of 96 with humidity. It’s all yours!

8 Jessica June 18, 2012 at 1:31 pm

Lucky you for your cool weather. It’s supposed to be 98 degrees with high humidity here today.

Going to have a salad for dinner now that your salad reminded me that we have lettuce in the refrigerator. Sometimes I forget what veggies and other foods we have in the refrigerator.

10 Khushboo June 18, 2012 at 1:36 pm

Yum lunch…yog and eggs = my 2 faves!

11 Averie @ Averie Cooks June 18, 2012 at 1:46 pm

getting back into a dietary and exercise and life (seeing friends) routine after traveling feels SO good, doesn’t it!

Hello Kath,

I am new to your blog. So far, I think it’s lovely and has much warmth and happy content to it. I decided I wanted to start reading from the beginning so I could “get to know you” better, as opposed to jumping right in. I always find it interesting to get a flavor for bloggers as they first begin their journey.

One thing I did wonder about as I was making my way through your second year of writing was when you mentioned that you were the first food diary blogger…(?) That struck me a bit odd. I have been online for several years now, and have seen quite a bit of food blogging, before you started in 2007. Sorry if that comment seems off-topic right now. I just wondered how you came up with that? Perhaps my stats of your blog are off, or something?

Anyways, your work is commendable & I thank you for your efforts. :)

13 KathEats June 18, 2012 at 2:07 pm

I started reading SELF’s Eat Like Me blogger and really enjoyed it – so I searched and searched for any other blogs that documented breakfast lunch and dinner. I couldn’t find anything. I found a few dairies, but no one had kept up with it. If you know of someone who was doing it long before I was, I’d love to read about it! I’m not claiming to have invented anything, but I definitely think I was one of the first to do this and keep it going.

14 Kimberly June 18, 2012 at 1:51 pm

I love body pump. I took a Crossfit class the other day and I like body pump way more! Have fun!

15 Sarena (The Non-Dairy Queen) June 18, 2012 at 1:52 pm

I’m gonna say your lunch was delicious, mostly because the salad part with the egg was what I had! Enjoy the rest of your day Kath!

16 Angela @ Eat Spin Run Repeat June 18, 2012 at 1:54 pm

Woohoo for Pump! A return to the gym is always welcome after a bit of a hiatus. Lunch looks awesome! :)

17 Jamie @ StudioEats June 18, 2012 at 2:21 pm

Those first couple of workouts back feel great when you haven’t done it in a while!

18 Ashley @ Hudson on the Potomac June 18, 2012 at 2:57 pm

I love the first few workouts after being away from the gym for awhile!

19 Katie @ Talk Less, Say More June 18, 2012 at 3:06 pm

It’s funny because I wasn’t sure what I wanted for lunch either but I definitely felt hungry. A big bowl of greek yogurt, fruit and granola and I’m FULL. I may need a walk to start digestion. haha!

20 @FactFinderSteph June 18, 2012 at 3:21 pm

Sometimes I worry that if I ever get pregnant that I’ll stop working out and and just eat all the time lol. I know I have a lot of control of this but it is still so nice to have inspirations like you and Caitlyn to show me that staying healthy and active during pregnancy is possible!

21 Nicole June 18, 2012 at 3:26 pm

I love to start my day with greek yogurt and granola and sometimes some blueberries. I find it is a great pre-workout meal before my weight lifting or cardio. You are very inspirational.

22 mary @ minutespermile June 18, 2012 at 3:33 pm

an egg-topped salad is always fun. I try to go with hardboiled, though, to keep the temperatures consistent!

23 samantha @ peach in the city June 18, 2012 at 3:52 pm

just discovered no bull burgers in the freezer at whole foods here in DC!! can’t wait to try em :)

24 KathEats June 18, 2012 at 3:53 pm

Awesome!! You will love them!

25 Andrea @ The Skinny Chronicles June 18, 2012 at 3:59 pm

Oooh, I could use a spat of rain for the day! Then I wouldn’t have to water my garden!

26 Jordan @ Bake Write Sleep June 18, 2012 at 4:20 pm

Hey Kath! It’s Jordan (formerly of Salt Sweat Sugar). I just started blogging (and reading blogs!) again, so I wanted to stop in and say hi. I saw all the Marie Claire posts (I know, I’m late!) but I just wanted to tell you guys all how proud of you all I am – You all handled yourselves beautifully. And I especially loved the part where you said that KD was too busy “digging in the trash to see what you had for breakfast” because that’s the first thing I thought when I read that part about what you ate… I was like “How the crap did she know that? …Stalker much?” =] I added you back to my Reader and I’m looking forward to reading again now that I’m back with a new blog.

27 Susan H. @ The Food Allergy Chronicles June 18, 2012 at 4:30 pm

Very muggy here…we had a big rain storm through the night…great for the garden…except my Shasta Daisies have fallen over! Love a fresh salad for lunch…especially when it is right from the garden! All the additions make it a super salad! Enjoy!

28 Healthy Living Val June 18, 2012 at 5:43 pm

Never thought about putting a fried egg on a salad! So smart. And seriously is there anything a fried egg isn’t good on? 😉

29 Jocelyn Baer June 18, 2012 at 6:00 pm

Love your blog and your always smiling face! You have inspired me to pay more attention to what I put in my mouth! I was NEVER a three times a day eater, I usually am happy if I eat two times in one day! Your consistency is my inspiration. And of course my question is completely unrelated….
How did Matt get his nickname Kanz and how did your sister get her nickname Larbs? Just curious! All the best to you and your lovely family!

30 KathEats June 18, 2012 at 7:07 pm

Kanz is named after the bonobo Kanzi, who is famous for learning sign language.

Larbs is just a version of Laura

31 Jocelyn Baer June 18, 2012 at 11:55 pm

Thank you!

32 Cait's Plate June 18, 2012 at 6:01 pm

Love the drizzle of honey on the salad idea! Definitely want to try that!

33 Kelsey June 18, 2012 at 6:34 pm

I agree – just a couple days away from a normal schedule makes me crave the gym!

34 Jeri June 18, 2012 at 7:04 pm

Kath, you have me buying so many different varieties of lettuce. I think I need to slow down. I think my spring mix is going to go bad. When you come down to Va beach, try to stop at Grand Mart on Baker Road. It’s the closest thing we have to a good farmer’s market. Fresh produce and meat. It’s an international grocery store. Picked up spinach and portobello caps today. Still don’t know what to make with them, but new foods to replace old ones is a must now.

35 Tiffany June 18, 2012 at 7:35 pm

Hey Kath,

I’ve never tried honey on lettuce before…I’ll have to try that sounds delicious.

Can you recommend a peanut butter that you like?

(I’ve bought the creamy and salted Trader joe’s one but it tastes extremely over roasted. I also bought TJ’s Valencia with sea salt and its pretty good but still a bit over roasted)

36 KathEats June 18, 2012 at 7:41 pm

I don’t usually buy plain peanut butter – it’s too plain! But when I do, it’s usually the freshly ground kind from the bulk area of Whole Foods. Or something like Whole Foods brand plain – or I make my own (recipe on my Recipage)

37 Tiffany June 18, 2012 at 7:46 pm

I would love to know which peanut butter blends you buy? Thanks :)

38 KathEats June 18, 2012 at 7:48 pm

I don’t really buy too many peanut butters – my current favorites are Trader Joe’s sunflower butter, Maranatha almond butter, all of the Wild Squirrels, Barney Butter, and Naturally Nutty. Some of those are peanuts, but most are other nuts.

39 Julia H. @ Going Gulia June 18, 2012 at 7:43 pm

I love your matching bowls…you have such fun kitchenware!

40 Theresa June 18, 2012 at 7:49 pm

The vocado looks so good. Hw much would you use and what do you do with the ret? How do you store it? I’m the only one who will eat it, either I eat a whole one or toss half. I hope you have a good solution! :)

41 Theresa June 18, 2012 at 7:51 pm

Avocado! Oh, this iPad isnt making me look very good…….sorry for the typos, all of them 😉

42 KathEats June 18, 2012 at 7:53 pm

Wrap in plastic and put in fridge.

43 [email protected] Nutritious June 19, 2012 at 5:29 am

You have me inspired to make one of my old favorites, avocado “tofu egg” salad. Now I can’t wait for lunch. Thanks Kath!

44 Fran@ Broken Cookies Don't Count June 19, 2012 at 6:53 am

My kind of lunch. I keep saying I’m going to try the egg on the salad and I haven’t yet. I will!!

45 ~Christy June 19, 2012 at 1:33 pm

Love this…”wobbled out to the garden to pick some lettuce.” Both for the visual wobbling and the yummy fresh picked greens. :)

46 Lexi @ You, Me, & A World to See June 23, 2012 at 1:41 pm

I know exactly whatcha mean about nothing sounding good. There’s some days where I’m totally indecisive about lunch! Salad is usually a good fall back though :)
