Prescription Walk

June 5, 2011

Man, I have felt almost sick today from being so sleepless these past few nights. My nap helped a little, but after snacktime and blogging, I felt kind of sick. I peeked outside at the gorgeous day and decided to go on a walk. “Real” exercise was out of the question – in fact I haven’t officially worked out since Thursday! When I’m sick or really low on sleep, rest always get priority. I have been on my feet a lot, however.

So a walk was just what the doctor ordered

I took Better Homes & Gardens with me and walked for an hour. I felt so much better!!

Once home Matt and I put together a simple dinner – featuring garden greens. Our family is growing tall!

We sauteed the greens along with a slice of bacon

And served them with egg + toast

This would be egg smothered in Dr. Pete’s Praline Mustard Glaze. Best. Sauce. Ever!!!!! [Just went out last week via OpenSky!]

Nine Grain with butter

Beverage du jour

After dinner we sampled the Sabores del Sur that came in the Foodzie Flavor Box from Foodbuzz!

I didn’t really think I was going to love these – I thought they’d be really dry and crispy but they were DOUGHY!! My favorite texture. Barely baked and so moist. And of course the caramel was fabulous. I wish I had more!!

While Matt put together dinner, I made a lentil salad to pack for our lunch a few days this week. I love chilled salads that are bean or grain based with chopped veggies and a few fun mixins

Lemony Lentils

Serves 4

  • 2 cups green lentils, cooked (these hold their shape better than brown or red)
  • 1/2 cucumber, chopped
  • 2 carrots, chopped
  • 5 small radishes, sliced
  • 2 tbsp sun-dried tomatoes in oil
  • 1 tsp herb salt
  • 2 tbsp toasted pecans
  • 1 slice bacon, crisped (optional)
  • 1/3 cup Dr. Pete’s Lemon Pear dressing [also in OpenSky bundle] (Or you could use a mix of dijon mustard, lemon juice, garlic and a bit of mayo

  • Cook lentils
  • Cook bacon, chop
  • Chop veggies
  • Toast pecans
  • Mix together
  • Pour on dressing
  • Portion into tupperware for busy weekday lunches

HOPING for a good nite!

It seems like nice weather there! It’s almost too hot for walking here, above 90!

I think you’ll feel better after you get on a good schedule ya know? Have fun this week at the bakery!

2 Allie (Live Laugh Eat) June 5, 2011 at 7:58 pm

I just got back from an hour walk to downtown and back. I feel like a new person. I think walking around the bakery is definitely a real “workout.” Especially walking around while snacking off the breadboard :).

Man those cookies were popped open 2 min. after they arrived on my doorstep. Awesome, huh?

3 KathEats June 5, 2011 at 8:00 pm

LOL. You are hilarious. Wish I could have walked downtown too! Let’s get evening Arch’s one night this week!

4 Allie (Live Laugh Eat) June 5, 2011 at 8:23 pm

Yeeah let’s! We could bring our own gooey [Cosmic] brownie.

5 KathEats June 5, 2011 at 8:32 pm

Ha! Right-o!

6 Amanda (Eating Up) June 5, 2011 at 7:59 pm

Rest takes the priority when I’m not feeling 100% too. Your garden is looking exciting!

7 Gina @ Running to the Kitchen June 5, 2011 at 8:04 pm

Rest always wins out for me otherwise I end up feeling worse. Hope you’re able to sleep tonight!

8 Doc (The Healthy PhD) June 5, 2011 at 8:12 pm

Thanks for the recipe… lately I’m loving grain and bean salads. Try this one from Women’s Health:

I made it with less oil and more beans/almonds and it was super!

9 Holly @ The Runny Egg June 5, 2011 at 8:13 pm

I love your dinner — eggs/toast is a staple meal around here.

I wanted to get outside today but it was just too hot. I would have been miserable.

10 Cait's Plate June 5, 2011 at 8:13 pm

I hope you’re able to sleep tonight!! That lentil salad looks amazing – I’m not usually a huge lemon fan but I feel like it would be delicious in that!

11 Averie @ Love Veggies and Yoga June 5, 2011 at 8:20 pm

Sorry to hear you’ve been getting so little sleep you’re feeling sick. Ugh. I currently avg about 5 hrs a night. Sometimes more like 4. And sometimes it’s 3 hrs + 2 hrs later. NOT ideal but I can totally relate to your sentiment!

So glad you got a nap in, though!

And those cookies…I JUST opened my Foodzie box from being gone in Aruba for 3 weeks and those cookies were in it and I almost just gave them away to my hubs for fear of dryness…good thing I didnt :)

12 kristi (sweet cheeks) June 5, 2011 at 8:21 pm

here’s to getting a good night’s sleep tonight!! Thanks for the lentil recipe, I love me a good chilled salad too!

13 Kerry June 5, 2011 at 8:21 pm

Hey kath
Just wondering did you read bh&g while you were walking around ur neighborhood? Or on a treadmill?
Love the blog

14 Jil @ Big City, Lil Kitchen June 5, 2011 at 8:24 pm

YUM! Hope you feel better!!

15 Reb (Life Doesn't Have to Suck) June 5, 2011 at 8:25 pm

I totally know what you mean, re: sleep. I started a new job last week and couldn’t get even close to 8 hours to save my life! My mind was racing and I had “no sleep rage.” Feeling better now, though. Hope you do too.

16 kaila @ healthy helper! June 5, 2011 at 8:26 pm

I love lentil salads! They are the perfect base to any meal and make such great lettuce toppers!

And walks really do heal all! I always feel great after going for walks when I am feeling tired and stressed!

17 Heather June 5, 2011 at 8:37 pm

That lentil salad looks perfect for my lunch this week. I will probably make a similar version of it tomorrow!

Thanks for sharing the recipe. Here’s hoping for a restful night sleep tonight!

18 Jenny @ Fitness Health and Food June 5, 2011 at 8:47 pm

So glad you had a little time to relax today, you’ve certainly earned it! :)

Good luck for the busy week ahead! :)

19 Katie @ Nourishing Flourishing June 5, 2011 at 8:51 pm

Sleeplessness = I might as well be a corpse. Bleh! Hope you can get some rest tonight! :)

20 Lee June 5, 2011 at 8:57 pm

You can read a magazine while you walk outside?! That’s like patting your head and rubbing your stomach at the same time. Too difficult for me! (Now I’m trying to pat my head and rub my stomach!)

21 kris (everyday oats) June 5, 2011 at 9:02 pm

I like to pre-make cold salads too because as the days go on the flavors develop more and it gets better and better tasting. It’s like magic :)

Hope you get more rest/sleep time this up coming week!

22 chelsey @ clean eating chelsey June 5, 2011 at 9:02 pm

I always feel nauseous when I am not sleeping enough – and the Husband always gets sick! I hope you sleep well tonight!

23 Liv @ The Salty n' Sweet June 5, 2011 at 9:05 pm

I hate missing out on too much sleep. I always get a strange nauseous feeling. No bueno.

But fresh air really does a body good.

Wishing you a good and stress-free night of sleep :)

24 Amy in WA (Texas transplant) June 5, 2011 at 9:09 pm

I had alfajores fresh from the bakery in Peru last summer and fell in love. I have seen recipes, but I’m afraid I’d never match them – guess I’ll just have to go back to Peru or order those from Foodzie

25 Liz @ lactosefreelizzie June 5, 2011 at 9:20 pm

hahaha love the “not beer” cups!
that shortbread looks delish 😀

26 J3nn (Jenn's Menu and Lifestyle Blog) June 5, 2011 at 9:20 pm

That lentil salad is so pretty! Your garden looks so pretty, too.

Hope you have a restful night!! :)

27 Katherina @ Zephyr Runs June 5, 2011 at 9:22 pm

That lentil salad looks amazing… I’ll probably make that with a quinoa blend this week! I’ve got about 4 quinoa recipes I wanted to make last week that will be done this week… hello loads of quinoa!!!

I love your not beer glass 😉

28 Ash @ Good Taste Healthy Me June 5, 2011 at 9:42 pm

I was exhausted today too but that was because I drank a little too much beer last night. :( I hate when a hangover ruins my day!

29 Kate (What Kate is Cooking) June 5, 2011 at 9:48 pm

I always feel hungover or sick when I don’t sleep well for a few nights. Hopefully you sleep better tonight!

30 Steph June 5, 2011 at 9:51 pm

I know exactly how you feel. Ever since having my son, who is 13 months old now, I have been seriously lacking sleep. Like 5-6 hours per night for the past year. Most days I feel really sick and headachy and I’m pretty sure it’s from lack of sleep. I hope you catch up soon! I love reading about your adventures with the bakery. It sounds like a dream come true for you guys!

31 Justeen @ Blissful Baking June 5, 2011 at 9:52 pm

I love all things doughy too! I made your dough boy smoothie today and it was so incredibly doughy and delicious. Definitely going to be having those for breakfast more often! :)

32 jenna June 5, 2011 at 9:57 pm

omg those cookies look right up my alley! hheehe

33 staceyhealthylife June 5, 2011 at 10:01 pm

You and Alie’s comments to each other are so funny. She seems really happy with the new direction of your life and all that is happening for both of you guys. Best of luck to your first full week of being open.

34 kathy June 5, 2011 at 10:29 pm

I’ve read that one of the most stressful times in people’s lives is starting a new job. Keep taking naps when needed and things will settle into a comfortable groove soon. You have your healthy lifestyle on your side!

35 Mary @ Bites and Bliss June 5, 2011 at 10:41 pm

That “barely baked” description of those cookes had me. I love when they’re like that! Especially shortbread-type.

36 Laura Ann June 5, 2011 at 10:42 pm

That lentil salad looks awesome. I’m so happy to see a prep-for-lunches-this-week post as I’m running out of ideas. Keep ’em coming!

37 Laura Ann June 5, 2011 at 10:44 pm

Oh, and I agree with what Kathy said… Plus, you guys have been go go go for so long now, and now you are really *in it.* It makes complete sense that you feel a bit off!

38 Heather Eats Almond Butter June 5, 2011 at 10:45 pm

CD ate all my Sabores Del Sur…so I hid the biscotti from him. 😉

39 Jessica @ The Process of Healing June 5, 2011 at 11:08 pm

I WANT that glaze!

40 KathEats June 6, 2011 at 5:21 am

It’s free shipping at OpenSky!

41 Annette @ EnjoyYourHealthyLife June 5, 2011 at 11:20 pm

mmmmm I LOVE evening walks, those are the best!

42 Khushboo June 5, 2011 at 11:41 pm

Good call on not doing a strenuous workout- rest should always take priority! And also nice going on batch cooking the lentils- i’m kicking myself for forgetting to cook up a pot of quinoa for this week’s lunches!

43 lynn @ the actor's diet June 5, 2011 at 11:43 pm

ha i forgot how you love to walk with magazines!

44 Julie - StressStories June 5, 2011 at 11:46 pm

I’m really curious as to how you walk and read at the same time? I think I would keep tripping and bump into things and people… How great to be able to harvest greens from the garden! My crops have started coming too – very exciting. Do you spend a lot of time weeding and taking care of the garden?

45 KathEats June 6, 2011 at 5:22 am

It’s easy with a magazine and photos. You just use side vision to see what’s coming. And I wouldn’t do it in a crowd or on the edge of a cliff :)

46 Michelle June 6, 2011 at 12:21 am

Hi Kath!

Everything you had for breakfast looks amazing. I can’t wait to get out of college and start growing my own food! I also want to let you know that I added you to my blog roll on my blog, because I frequent your site so often! I hope that’s okay

47 KathEats June 6, 2011 at 5:22 am

Thanks Michelle!

48 Tricia June 6, 2011 at 1:05 am

Long time reader, first time commenter…
I tried my first ever grain and bean salad tonight! I cooked quina for the first time and added black beans, read bell peppers, tomatos, cilantro, 1/4 squeeze of lime and some avocado avocado. I topped it with a bit of salsa and greek yogurt. It was AMAZING!
Thank you for inspiring me :)

49 Annika June 6, 2011 at 4:19 am

Hope you slept beautifully!

I love Alfajores. I found a good recipe a few years back. I like being able to bake treats at home, but it’s really testing for my self-restraint to have a full cookie jar!

50 Lenna June 6, 2011 at 4:35 am

Oh I love that lentil salad! I am so going to cook it tomorrow :) Thanks for a nice post!

51 Molly @ RDexposed June 6, 2011 at 6:26 am

Hope your Sunday was relaxing to prep for a 5 day work week (I think we should have a Holiday weekend at least once a month for resting purposes).

52 [email protected] Flying ONION June 6, 2011 at 6:30 am

I hope your night was very restful and refreshing!! I think change, whether good, bad, or incredibly exciting, does a job on our physical and mental energy levels. I always notice that I’m exhausted after a job change or a move or anything. But then after a week, I’m typically back to my usual self. 😀

The greens on your dinner plate look so bright and full of SUMMER! 😀

53 Chelsea @ One Healthy Munchkin June 6, 2011 at 6:50 am

I always feel really headachey when I don’t get enough sleep. I hate that feeling! I hope you got a good sleep last night. :)

I love bean and grain salads in the summers too. I’ve been making so many of them lately! Right ow my favourite is a black bean + mango one.

54 Christie {Nourishing Circle} June 6, 2011 at 7:18 am

Walking is a “real” workout and I would also say so is manual labor in a bakery! Honoring your body and stage of life is the most important thing!

55 Stephanie @ StephSnacks June 6, 2011 at 7:26 am

I love the images of the greens. Sometimes all it tKes to feel a bit better is spending some time outside. I always tend to feel refreshed after a great walk.

56 [email protected] Sweet Life June 6, 2011 at 7:36 am

Hang in there–rest is super important when you’re pushing as hard as you are!

57 Chad @ thebreakupnote June 6, 2011 at 7:53 am

A walk is an amazing thing, isn’t it?

58 Laura @ CookKnitRun June 6, 2011 at 8:45 am

Look at your tiny greens! Don’t you just love harvesting fresh produce from the garden? Thanks for all of your great recipes and inspiration.

59 Angie @ Musings of a Violet Monkey June 6, 2011 at 9:03 am

I’m so impressed with your ability to walk outside and read a magazine at the same time! I would inevitably injure myself. I’m such a klutz! :)

I was going to whip up a Lentil salad with sweet potatoes for lunches this week, but might just have to try this one, instead!

60 Marissa June 6, 2011 at 9:34 am

Long walks are just glorious… have you ever considered getting a dog? They make the best walking partners–not to mention the best friends–in the world! The reason I thought of that was because of the bacon in your post and the fact that I’m making bacon-cheese doggie treats for my boy today, and we just got back from a long walk, too.

61 KathEats June 6, 2011 at 10:02 am

We’re not responsible enough for a pet yet!

62 Kristi @ Hiding in Honduras June 6, 2011 at 3:28 pm

LOVE alfajores! First had them in Peru and am always happy to find them occasionally in Honduras! Doughy and slightly sweet from the powdered sugar…perfection!

63 Anita June 6, 2011 at 7:24 pm

Take care of yourself Kath. Sometimes we can go a long time runnin’ on adrenaline, but sooner or later, we have to crash. We are only human. In alot of ways we can get through all the things but then after, when everything is up and running and it’s all settled down, that’s when we hit the wall. In any case, get some rest.

64 Lisa June 6, 2011 at 8:19 pm

My garden is starting to take shape! I found a few teeny tiny tomatoes on my plant! I cannot wait for everything to be ready to eat.

65 Shari June 9, 2011 at 12:23 pm

Hi Kath! If you want more of the alfajores cookies the company who made the ones you tried (Sabores del Sur) attends a weekly artisan food and farmers market that I go to. I’m also a hop skip and jump away from lavender salt if you are ever in need! =)

66 KathEats June 9, 2011 at 12:25 pm

Oh that’s very nice of you but I better not eat any more sweets after owning the bakery!

67 Shari June 9, 2011 at 5:31 pm

Yeah, I totally understand! I bought a chocolate and rosemary scone today from a local bakery and thought of you guys!

68 Taylor June 12, 2011 at 3:21 pm

hey, kath! for the lentils recipe, did you use 2 cups of dry lentils or cooked lentils? also, what ratios would you recommend for the homemade lemon dressing? thanks :)

69 KathEats June 12, 2011 at 7:22 pm

2 cups dry!

For the dressing, I’d do equal parts lemon, olive oil and honey plus a little garlic and a pinch of salt
