Breakfast held me over well this morning – until 11:30 and I was suddenly starving! The husband was due home around noon and I had hoped to eat with him but by 12:15 I had to just dig in.
I had 3 handfuls of cereal while I waited. Grrr!
I had a hard time deciding what to have for lunch because I have to pack my dinner as well. I just started getting things out and came up with this DELECTABLE sandwich: Great Harvest Honey Wheat bread (toasted) with Butter Toffee PB, TJ’s Pumpkin Butter and sliced apple.
I also nuked a tiny little sweet potato (yam?) to have on the side. I found these little ones labeled “jewel yams” at EarthFare. They are the perfect portion for one. Most sweet potatoes are upwards of 300 calories! Drizzled with a little maple and sliced/mashed -
I rounded out the meal with some TJ’s Greek yogurt, ground flax and TJ’s high fiber worms -
‘Twas a delicious lunch.
I finished up eating around 12:45 and came to my computer to find this email in my inbox – guess he’s on the way!

He is SO much happier these days with his new jobs. He came home from his 8-hour early morning bakery shift yesterday and I asked him “How was work?” His response was “Great!” To have a job that gives that response is awesome. He’s getting more hours at EarthFare soon and will move to his “home” bakery when it opens this weekend. I’m so happy he’s happy!
MICRO CRAMMING FULL SPEED AHEAD!!!
PS. I had NO IDEA it was National Oatmeal Day – how embarassing!
So, Happy Oatmeal Day to you all! Hope you got in your AM fix

Awww, sooo cute. That’s def. my favorite part. You are a lucky girl Kath. Although, you totally deserve it as you seem super supportive and are definitely a hard worker yourself!! Totally admire your relationship!
Aw, that’s awesome that he’s happy!!! I wish that for everyone!
I’m definitely not there with my job….but hopefully someday!
National Oatmeal Day! I actually had oatmeal today and I didn’t even know that it was National Oatmeal Day. My oats were good, too.
Very good Haikus. My husband one wrote a Dr. Suess style poem about his work, it was so cute!
Hey Kath! Are you sure that sweet potatoes have 300 calories? I have researched this, and I’ve found that a large sweet potato (not medium or small) has about 160 calories. Can you tell me where you found that information, because I eat them ALL the time! Thanks.
The apples with the pumpkin butter looks really yummy. I’ve seen it at the store but didn’t want to buy it cause I didn’t know if it will be good. How is it? Worth a try?
Please people! Do not worry about sweet potatoe calories. They are one of the most nutritious vegetables. People do not get fat by eating too many fruits and vegetables. Stick with a well balanced diet and treats on occasion and you will be find. It really makes me sad and frustrated when people stress about the caloric content of certain foods. Really? Are you that obsessed?
Just my 2 cents. I’ll get yelled at by someone I know.
damn. happy about work? what’s that like? i don’t think i’ve ever answered “great” to how was work. congrats. that’s a wonderful thing.
LOVE THIS:

Glad you guys like the poem
Re. Sweet potatoes. Kelly is right that they are extremely nutritious and good for you so you should keep eating them! But I posted this tidbit for a little awareness. I have obviously put a sweet potato on my food scale before and the ones that my grocery sells would probably be classified as “extra extra super large” potatoes because they are often 3/4 to 1 lb in weight! That’s nearing 300 calories. They don’t really seem that big to me – maybe the size of a remote control? But they are heavier/denser than you’d think. A 6 oz, 150 calorie potato is more like the size of a computer mouse. No need to count every calorie, but good to be aware.

Hi! Chobani Girl here. I noticed that you are a fan of Greek Yogurt and was wondering if you have ever tried Chobani Greek Yogurt before. I would like to send you some so email me back at Tiffany.gray@agro-farma.com and let me know where I can send samples to.

I didn’t know it was National Oatmeal Day either – my goodness, I feel like a fraud

yay for loving your job….
hey kath, do you ask your hubby before you post stuff like that? my future husband requires i show him any photos of him before i post them, he’d probably faint before he left me publish an e-mail. just curious!
it’s super important to love what you do at your job. it’s so cute that he’s so happy about it :]

Kath, that sweet husband of yours is truly one of a kind!! He could give lessons to other men in creativity. =D
really? is there a National Oatmeal DAY???? that’s the most incredible national day I’ve ever had.
I’m glad that I had a great bowl of oatmeal this morning
Just thought I’d share this yummy Halloween treat. I found a delicious looking Halloween “candy” that you could talk yourself into believing is half way healthy, Fig pumpkins! They are alabacita figs filled with a whiskey and clove chocolate ganache, dipped in pumpkin tinted white chocolate. I’m so tempted to order a box!

what a sweet hubbie!
and potatoes = the devil calorie wise for me. it is the one thing i am not good at judging. a teeny potato has like 200 calories, how is that even possible?!?! but i agree, i wouldn’t stop eating them but it is good to be conscious.
caitlin,
I never mind Kath sharing anything with the blog. Something that’s really important to me is to speak honestly all the time and say exactly what you mean – going along with that is the willingness to share everything about myself with the world and answer any question.
And in this case, I had a suspicion that she would post the poems if I made ‘em funny enough!
I love the song that is the title of your blog post
Looooove your lunch!!
Haha that’s really sweet of the husband!
ahaha I love The Husband’s poem, too cute!! As to National Oatmeal Day… I feel like I have just done something awful, like forgotten my bf’s first name – I didn’t have oatmeal today!!! Eeek! Don’t worry Quaker… I will eat all of your delicious oats tomorrow!
Matt, that poem is adorable!
Happy National Oatmeal Day! I was wondering if pumpkin butter would be good on apples! I will have to try it!
I love the poem!!! So cute!

Matt that was so sweet! It’s always great to be in a place where you are happy with what you are doing!
So happy for Matt!
Life’s too short not to do what you love!
I just found your blog recently and wanted to say hi! Congratulations on your weight loss and thanks for sharing so many great recipes and wonderful ideas. I’m having a great time reading everything!
Susan
This is unrelated to your post, although I love that type of sandwich, but I just made your baked oatmeal snack bars for maybe the 4th time last night. A good combo: pecans, dried cranberries, and golden raisins. Possibly my favorite combo yet.
aw he seems like he’s on cloud 9! and yeah i got my oaty fix and got a huge barrell of Quaker oats delivered to me today in the mail!!! Wow it is a true holiday.
Hi Kath! I just started my own food blog and was wondering if you could check it out and give me some feedback. I have been reading yours for a while now and you have inspired me to start my own. Thanks so much for all you do!
I didn’t know it was National Oatmeal Day either…I probably should have made oats for breakfast…haha!
Love the sandwich! Such a great combination of fall flavors with the apple & pumpkin butter.
The haikus from the husband are too cute! And so glad to hear he’s enjoying his jobs!
Very cute poem, and your lunch looks scrumptious! I just read something about yams vs. sweet potatoes, and what we at are just different types of sweet potatoes. Yams are *giant* and mostly a West African food. But whatever they are labeled, they are delic!
Wowza, That sandwich will be in my near future that is for certain!!! Also, a question about those little taters- what’s a good reference for a portion… I hear different things… If all else fails, Im set on my fiber !
Again, kudos to you for snaggin such a winner! And good for him on attaining such a rewarding job- What an awesome combo you two are!

What a cute poem! So glad your hubby is happy! How wonderful that he loves his job
Congrats!
