I got a flu shot :(

But it didn’t really even hurt :)

Thanks to the Harris YMCA nurse for being so nice!

My trip to the gym was none other than beautiful. It was a gorgeous fall day for biking! Once there I spent 35 minutes with Real Simple on the ET and then headed home. Quick + easy and have muscle builders planned for tomorrow ;)

I also needed a quick + easy lunch so I can get to class on time and made this simple yet 110% delicious combo under the broiler:

Two slices of Flax Oat Bran each topped with apple, thinly sliced Cowgirl Creamery brie, walnuts and maple syrup. This would actually make a great breakfast!! And is a perfect example of how Real Food can be perfectly healthy and gourmet.

A bouquet of the rest of the apple and a carrot, which also goes well with cinnamon I might add

I just bought some Granny Smith’s because I remembered how much I like them with cheese. This looks yummy.

Your lunch made me think of one of my favorite lunches on the go. Some cottage cheese, 1 bosc pear cut into little pieces, some granola (I love the mango agave bear naked one for this) and a drizzle of ginger honey. It’s SO good!

You know, I’ve never tried the cheese and apples combo, surprisingly. Your lunch looks great though!

Oh,btw I finally tried the combo of oats with a crunchy topping- I sprinkled granola on my oatmeal this morning after seeing your amazingly decadent looking oatmeal creations all the time. It was DELISH- thank you for the inspiration! (You can see it on my blog post from today, if you’re interested.)

I love the apple/cheese combo. I actually core out an apple, stuff it with shredded sharp cheddar and about 1 tablespoon of granola – I then microwave it using the “fresh vegetable” setting. The salty/sweet/crunchy combo is amazing!

I just got my flu shot, too, at Target of all places. It only made my arm a little bit sore. Now I’m driving myself crazy trying to find H1N1 vaccines for the kids. Apparently in my county school-age kids are higher priority than pre-school age kids – they’ve almost exclusively been giving it at in-school clinics.

That lunch combo looks delish!

Yeah for flu shots. I wish I could get one. After the last round of the flu I had I do not want it again.

I love how simple ingredients can be made decadent. I made cinnamon apple crisp with just an apple, granola, and almond butter.

Goodness, that sandwich looks delightful. I had a similar, vegan version, when I was in Baltimore this past year. It was tasty!

Kath, that toast lunch/potential breakfast looks and sounds incredible. I’m always looking for ways to spice up my toast (literally and figuratively) and this is so much more decadent than standard PB & J with naner slices. I will be trying this soon.

Also, did they have the flu mist option? I got that this year, and while it was weird to have the doctor shoving stuff up my nose and counting down like I was a child…it was totally sans needles, therefore, sans anxiety.
