Peppermint Delight

1/2 a cup of peppermint with a dollop of nog. Delicious. ‘Nuff said.

Had a nice evening and I’m off to finish it with a good book!

Tomorrow is another wonderful, relaxing day. I’ve got to soak up the holidays before they’re all gone!

I love you blog! I found it through Jenna's which I also just found recently. After seeing your oatmeal pancakes repeatedly, I finally made one for myself. It was delicious and filling! I have one question about flax? I have heard so much about it and feel kind of silly asking, but what does it look like and where do you get it? I am trying hard to add more healthy fats in my diet. In the past I have been very scared of all fats and am slowly trying to increase more into my diet. So far it has been great but I am looking for more options. Thanks for posting. Everything is so helpful!

Flax comes in 2 forms: whole seeds and ground. The seeds are the size of sesame seeds and dark brown. Ground looks like a dry, brown flour.

You get much more benefits from eating it ground, but as with most things, it should be ground just before eaten. We've been buying ground for awhile until we learned this, so we'll probably go back to buying whole seeds and then using a coffee grinder to process maybe a cup at a time. Refrigerate after grinding!

Also makes a nice addition to baked bread!
