Pancake Power

We’re a little thrown off on the day of the week due to our trip and the holiday – it feels like a Sunday, which called for pancakes!!

I’ve been meaning to make some for a week or so now and used my favorite Buttermilk mix by Hodgson’s Mill. It’s super hearty and has cornmeal in it that gives them a really buttery flavor.

For toppings I simmered an apple in some brown sugar water and cinnamon until it was slight tender and the water evaporated and then slathered on some jam and almond butter

Since our fridge was empty, we had no fresh milk and I had to use my shelf stable soy milk. I tempered it extremely slooooowly – 30 seconds heat in the microwave and then poured in some coffee (2 tbsp) and let that sit. Then poured in some more. Then more. It didn’t curdle!!!!!!!!!!!!!!!!

Our skies are overcast and I’ve got a list of things to do today, but I am in good spirits!

Your breakfast looks amazing!!!!!!!!! I just ate and I swear could and would eat those if you out them in front of me right now. How I wish I had smellavision. I love your table in the backround, were does one find it? I am trying to spruce up my patio, now that I have a privacy fence. have a wonderful day britt

Those pancakes look AH-MAY-ZING! Especially with that jam – I need to find me some of that. Look like you had such a fun weekend! I think my body is thrown off too – I don’t know what day it is!

Those healthy pancakes look WAY better than anything you might find fast food diner…they look YUM-O!

I LOVE THAT DEAN AND DELUCA MUG!!

Everytime I go in there I ALMOST get it and then talk myself out of it – but seeing how beautiful it looks on the blog I think I may need to make a trip after work!!

Yum! Those pancakes are really THICK! How on earth did you manage that? Is the batter just really thick? Very cool.

Oh yum! I’ve used that pancake mix before, and love it as well. We have it practically every year for Christmas with a blueberry sauce and confectionary sugar sprinkled on top. SO good! I’ll have to try it with the apples on top sometime…looks delicious! :D

And YAY for non-curdled soymilk ‘n’ coffee! haha… :D Sometimes it seems to curdle on me and sometimes it doesn’t, and I pretty much do it the same every time. Hmmm…

Pancakes on a Monday sound like a great start to the week! Sometimes I make cinnamon apples in the microwave – with a big dollop of greek yogurt and some chopped walnuts, they make a decadent-tasting breakfast or snack.

I love Hodgson Mill! I use their buckwheat mix and it does great for pancakes or waffles!

One thing I always disliked about regular pancakes is that they fill me up for an hour or so, and then I’m hungry again (kinda like Chinese food). Your pancakes look like they could last me all day. Well maybe until lunch. Thanks for sharing! –Shawnee

We had similar breakfasts today, Kath! I don’t have the Hodgson Mill mix available here though, so I used this recipe for Wheat Germ Wholewheat Buttermilk Pancakes (if you ever want to try them, tried & tested, and you can even leave out the oil):

YUM, my favorite breakfast in the world! I changed the name of my blog recently (to avoid confusion with another’s of the same name), but even before the site was flooded with pancake pictures haha. And that rhubarb jam looks pretty good too- I’ve never had rhubarb before, actually.

Great tip on adding soy milk to coffee without it curdling. I’ve thrown so many cups away thinking I had bad milk. Can’t figure out why sometimes it curdles and sometimes it doesn’t. A soy mystery.
The pancakes look great and terrific idea for a topping. Good job!

Dear Kath,

I love your blog, but for the love of everything whole grain, will you please please please, with nut butter and berries on top, stop making pancakes and waffles from a mix?
They’re super easy to make from scratch, and there are 6 trillion and 47 possible ways (exactly) to make them even more delicious.
Anything you can do to oatmeal and more can be done to hot cakes and their ilk.

That’s my fave pancake mix! I always use the buckwheat one, but your pancakes look so much more fluffy and delicious, I may have to try the buttermilk kind next time! Yummmm.
