February 26, 2009

I’m back from a secret appointment (hence the late post) and now have yellow fever, typhoid and hepatitis A floating through my body. AHHHHHHH! I can’t wait to tell you guys the details

I’ve been working nonstop today and have only gotten 2 major and 3 minor things checked off my list! Blah! There is definitely no time for a workout today, although the emerging sunshine makes me want to go play outside.

I worked straight through until 1:30, when I wasn’t even really that hungry but was feeling weak so I knew it was time for lunch. It was amazing how much more energized I felt after eating! It was literally a re-fuel.

For lunch I assembled a quick plate of nibbles –

A delicious Tempeh + Pumpkin Butter Sandwich on GH Flax Oat Bran

Leftover Massaged Kale Salad (get the info from this post)

Naturally, I had more peanut butter (on a carrot 😉 )

IMG_2233 (1024x768)

And some more pear

Congrats to my CalorieKing friend Cynthia for giving birth to Katharine Rose early this morning!!!!!

I’ve got plenty more to do today, tomorrow and Saturday to get these nagging projects and papers complete. I’m starting to feel the mid-semester pressure build up

I’m guessing South America or Asia by your shots- I’ve had them before when I’ve gone to countries there.

2 Sarah (Tales of Expansion) February 26, 2009 at 4:40 pm

hmmmm, i had to get that same trio of shots when i went to peru last summer. can’t wait to hear why/where you’re headed!

ahhhh, mid-semester pressure … i’m drowning over here, too!

3 BethT February 26, 2009 at 4:48 pm

hmm, guess the destination ain’t wine country :)

4 Lee February 26, 2009 at 4:49 pm

I’m guessing somewhere in Africa, as those are the only (I think) countries that require Yellow Fever. Where ever it is a trip is always exciting!

5 Becca A February 26, 2009 at 4:51 pm

Well, you must be going somewhere tropical! How exciting!
Oddly enough, I had to get the hepatitis A vaccine for pastry school…

6 World traveller February 26, 2009 at 4:52 pm

Well, regardless of the Hep A vax, you’re going to have to lay off your enormous raw salads at your destination.

I’m looking forward to this; as someone who’s lived abroad for several years a few different times, I’ve wondered how you’d deal w/eating outside of carefully controlled home life. Hope you’ll be blogging while you’re away!

7 JENNA February 26, 2009 at 4:53 pm

20 michelle February 26, 2009 at 5:22 pm

If it’s Africa and it’s more specifically South Africa I have a few books on traveling there! It was wonderful. I was there for 6 weeks studying abroad.

21 Oh She Glows February 26, 2009 at 5:23 pm

Wow you are definitely going someplace tropical!!! 😀 When can we find out??? Soon I hope!

PS- how did you upload your Kath signature without a border?

22 WendyF February 26, 2009 at 5:24 pm

That is a lovely menu of shots…I always feel a little icky after the typhoid one. I’ think ‘I know where you are going based on your shots :-) You narrowed it down by not mentioning any malaria pills.

Can’t wait to find our where you are going!

27 Heather McD (Heather Eats Almond Butter) February 26, 2009 at 6:00 pm

Hmmm, I’m thinking somewhere in Africa maybe? Oh, just looked up – guess I’m not the only one. :)

What I can’t figure out is, why the big surprise? Must be something GOOD!

29 Jen A. February 26, 2009 at 6:14 pm

South Africa, cause that’s where the white people are? (sarcasm at the guesses)

41 Lindsay February 26, 2009 at 7:41 pm

I was just wondering how you determined the proper number of calories to take in during the day. I am in college and trying to keep a healthy weight during my college years!!

42 Mara @ What's For Dinner? February 26, 2009 at 7:46 pm

I’m thinking Thailand, Africa, or maybe Brazil??

43 Portena February 26, 2009 at 7:57 pm

44 Tara February 26, 2009 at 7:58 pm

aaah. the suspense is killing me!!

come to beijing so that i can take you out!!

i don’t recall needing a yellow fever vaccine though. so that’s probably out. :(

do you ever watch the travel channel? should get in a healthy dose of anthony bourdain before you go. his show, no reservations, is a hoot.

(i loved his book, kitchen confidential, too. but that could have been a personal preference. i can see that not being for everyone…)

45 Julie February 26, 2009 at 7:59 pm

What the crap woman!? Tell us where you are going! My guess is an African safari and I’m super jealous if it’s true.

46 Fancy February 26, 2009 at 8:00 pm

Well no worries, Kath. When you come to Chicago in July you won’t need to prepare like this :)

47 michelle February 26, 2009 at 8:03 pm

Jen A – I’m guessing you’ve never been to South Africa because it is less than 10% white.

48 Meg February 26, 2009 at 8:09 pm

I definitely need to try the pumpkin butter and tempeh combo!

Can’t wait to hear where you are going!

49 Kath February 26, 2009 at 8:12 pm

Oh She Glows,
I put it into the HTML code.

WendyF ,
I didn’t mention malaria pills, but that doesn’t mean I don’t have them 😉

Liza ,
The big surprise because I haven’t gotten permission to share the details yet. But I’m having trouble holding back the secret!

Lindsay ,
Check out the FAQ page.

50 faith February 26, 2009 at 8:14 pm

pack your peanut butter, it is very hard to find abroad!! i lived aboard a ship for 6 months and it was a hot commodity!!!

51 Michelle Hisae February 26, 2009 at 8:34 pm

When I went to Costa Rica, I had to take Malaria pills – watch out for that wherever you’re going! Costa Rica was so beautiful…I’m sure you’re going somewhere just as exotic!

52 brandi February 26, 2009 at 8:34 pm

I had to get those when I went to Honduras – I can’t wait to see the surprise!

53 jen February 26, 2009 at 8:43 pm

What I am much more curious to know is if it’s a holiday or it’s related to work or studies. If it’s a holiday how on earth did you finance it being in school?
Hope the husband will go too-he seems to work crazy long hours! He prob needs an escape I’d say.
Happy travels.Must be fun to have all these
strangers wanting to know your life details-I might get a big ego! ha!

54 Ruby Red Vegan February 26, 2009 at 8:43 pm

I love your new “Kath” signature at the bottom of each post! It’s a nice touch!

So this is weird: I had something really similar for lunch today, so I had to comment! I too love raw massaged kale and have been having it nonstop the past few weeks, so I had that as a salad with olive oil, balsamic, s&p, and a chopped carrot, and also a tempeh, vegenaise, ketchup, mustard sammie. Yay! When tempeh is tender & juicy and cooked just right it makes the best sandwich filler! I know your lunch musta been good because mine was awesome!!

55 Laura February 26, 2009 at 8:58 pm

I’m thinking Costa Rica as well. It’s gorgeous there!

56 Kerri February 26, 2009 at 9:17 pm

If going to Thailand, think about heading over to Cambodia as well. It is a gorgeous country with tons to explore in terms of ancient temples and nature. Also, the people are friendly and you can’t beat riding around in a tuk tuk all day in the countryside with your driver stopping in places for you to try the local cuisine. Only $1 for a bowl of yummy noodle soup and coffee. You don’t have to have tons of money to enjoy travels.

57 jennifer February 26, 2009 at 11:54 pm

I second Cambodia. Mind-blowing.

58 Marianne February 27, 2009 at 2:49 am

I’m guessing South America, since I had all the same shots when I went there this past June. I was in Ecuador & The Galapagos, and it was amazing!

59 Jen February 27, 2009 at 8:54 am

Kath – I let my CK acct go so long ago that I didn’t even know Cynthia was pregnant! I know she wanted it so badly. I’m not sure she’ll remember me (pjena) as it’s been a while, but will you pass on to her that I’m SO happy for her? Thanks!

60 Jess February 27, 2009 at 11:26 am

I think you’re going to Africa, although you didn’t get a malaria shot….so maybe not? Can’t wait to find out.
