Hi friends!!
Guess how long my commute was this morning ……9 minutes!!!!!!!!!! It won’t be that short everyday because i’ll be at different locations, but I arrived 15 minutes early with a smile on my face today
I spent the morning (which went by FAST!) in orientations and training modules.
Now I’m eating my lunch in the break room here before I head over to the other health dept location for the afternoon.
In the lunch box:
Great Harvest bread with tempeh and pumpkin butter.
Yes I eat the tempeh raw. Yes it’s safe. And yes it does taste good (although probably an acquired taste because it is a little smelly like ……fermented bread?)
Easiest sandwich ever!
I also packed leftover sauteed cabbage and an organic gala apple
See y’all tonight!

Yum! That bread looks fantastic. I’m sure it just makes the sandwiches!
Enjoy your afternoon!
Yum! tempeh and pumpkin butter sounds so good together!!! Never tried that.
I keep trying to like tempeh but I just can’t get past the smell and that weird looking black stuff that is on it. I do like it cooked in saucy creations like sloppy joes or BBQ, though.
Enjoy your afternoon!
That bread looks great! Enjoy your day!
I prefer my tempeh raw, dipped in teryaki sauce or jelly. I spose I’ll be trying it with my TJ’s pumpkin butter soon!
That bread looks amazing – I actually made whole wheat bread for the first time – it came out great! Do you have the Healthy Bread in Five book?

I agree, the bread looks delicious!
Mmmm that lunch looks great! I love Gala apples (the best in my opinion)
I’m going to be posting a french press tutorial this week, I’d love it if you’d take a look and let me know what you think!!
You are so much more hardcore than I am with that raw tempeh. I have to boil it and douse it in sauce, and even then I’m not too thrilled with it.
I’ve never had tempah, I don’t even know what it is! I think me and Google have a date…
*tempEh even..you can tell I’m not familiar with that food!!
I love the nutty flavor of tempeh, even raw! It always fills me up so well, too. [Insert famous Michael Scott line here.]
tempeh raw is the bomb… I used to slightly pan fry but it’s just so good out of the package!
awesome commute
Love fast commutes! Might have to try that tempeh
I haven’t tried pumpkin butter with tempeh. Did you eat the tempeh straight out of the package? I always find it tastes a little funkay without something masking the flavor.
I think you are right that tempeh has an acquired taste… I’m not sure if I like it or not yet… What is your favorite Great Harvest bread?
Flax Oat Bran!! Followed by High Fiver Fiber and Cinnamon Raisin Walnut.
That bread looks phenomenal, and wow!! what a speedy commute!!
i’ve only tried tempeh twice and just couldn’t get past the smell! i’m hoping i can figure out a way to cook it and like it better
LOVE the quick commute! I am jealous!! And yay for packing lunches
Tempeh sounds delicious right now…
I haven’t really tried raw tempeh. I’ve had it cooked and have liked it but for some reason I have a mental block on it. I think the look it weirds me out, which is super strange because I’m NOT a picky eater at all!
That bread looks so good. I think I may have to go get some fresh bread today.
My smoothie simply isn’t going to cut it today!
Haven’t tried tempeh yet but it looks good!
so glad you’re so much closer this time around! even though I don’t know if i’d like tempeh or not, the sandwich LOOKS really good!
Just tried Tempeh for the first time recently and really like. Wouldn’t have thought to combine with Pumpkin Butter. Thanks for the tasty idea!
tempeh and pumpkin butter!??! i thought tempeh was like tofu…that sounds odd but can’t say anything i like saltines and green grapes together rofl
I have fallen in love with tempeh lately! I haven’t even tried it sweet yet. You rock! I even have pumpkin butter, I’m trying it tonight!
I had raw tempeh for lunch too! Love it!
Don’t you just love short commutes? Mine is five minutes, tops!
p.s. It does not look disgusting to ME at all!
Again with the delicious bread. And it must be so nice to have an easier morning commute!
Short commutes are the best – one of the reasons I just can’t quit my job!
What a nice change with the commute! I’m sure that will give you so much more time in your day! Enjoy your afternoon!
Hi Kath! I love your blog so much! I just wanted to let you know that Whole Foods is selling the Artisana coconut butter, 16oz., for $11.99-just bought one yesterday. I’m not sure who prices the items in your Open Sky store, but you might want to refigure that one!
I don’t control the pricing
What on earth made you first try tempeh and pumpkin butter together? It’s such an inspired combination but I’ve never heard anything like it before. Where does your genius come from, Kath?
I just put things I like individually together!
I’ve never tried tempeh raw… but it’s something that i’d like to try! i really love tempeh, but i am never really sure how to use it. how else do you use it? have you ever marinated it or baked it before? i’m looking for some new recipes to try
I eat tempeh raw too, Jas thinks I’m crazy! He can hardly stand the stuff..unless it’s chopped up in a sloppy joe mix! Have fun at the Health Dept. My experience there last semester was one that I will NEVER forget….all kinds of people come in there
Mmhmm…I think you nailed it on the head, Kath. Fermented bread and tempeh do have a similair smell.
But it’s so tasty. I like it raw *and* cooked.
Love how you added pumpkin butter to the combo too. Such a fun mix of flavors!
I tried raw, cold tempeh on a sandwich and didn’t care for it.
It must be a REALLY acquired taste lol.
Jenn
So cool!
Raw tempeh must be tasty
Brazilian XOXO´s
Gabriela
Tempeh and PB…huh! I’d never thought of that!
Thats a great commute – must be great to get a couple of hours of your day back!
Never tried tempeh but have seen it on lots of blogs. Didn’t know you could eat it raw though
That’s awesome that your commute is only 9 minutes! Heck yeah
I’ve never tried tempeh before. I should just bite the bullet and pick some up!
totally came home from work and made this for tomorrow complete with GRANDMAS homemade pumpkin butter…cant wait.
i do love tempeh raw. especially the flavored kinds!
I love tempeh in curry. It’s great toasted and sprinkled on top.
I really like tempeh, but there was one brand I hated. The one I really like with no funny/bitter taste is West Soy and I get the 5 grain. It’s $1.99..yummm Chris likes it too!
What an amazing commute time- such a difference from the previous weeks!
