Muffin Overhaul

A good morning indeed!!!

I have been sleeping like crazy lately – didn’t get up until the 8AM hour again! Maybe I’m still a little on West Coast time? And Matt needed to catch up from his work week, so we didn’t budge for about 9 hours. We had planned to go running first thing, but you know, I am always stiff and hungry when I wake up and whenever I have the option to eat first, exercise second, I always take it. I asked Matt what he wanted to do and his response was: "Oatmeal!" so that’s what we did. We’re planning our run when the big hand gets on the 6 again :mrgreen:

Today’s oat varietal was muffin, muffin and more muffin!!

  • 1/3 cup oats, milk, water, pinch salt
  • 1 tbsp chia seeds
  • 1/2 extra, super ripe banana
  • ~the top of a Carrot Raisin Walnut muffin from GH
  • Spoonful Plum Jam
  • Spoonful Maranatha AB

I always thought cake-y products on oats looked like a gross combo – until I tried it!! Something about the crumbly cake mixed with the creamy oats and the sticky nut butter is pure texture heaven.

We’re meeting some blog readers for lunch and then for dinner – CROCK POT! Excited :) It’s probably gonna be another low-key night, but I am all for it :)

[May I please have permission to say it again? My new computer makes blogging SO MUCH EASIER!! What used to take a whole 30-60 seconds to do because the screen would freeze now takes split seconds. Woo. Hoo.]

I love Saturday mornings because they = time spent making hot breakfasts! I like to make and take smoothies to work during the week so it saves time in the morning and when Saturday comes, I ‘m really craving hot oatmeal so I totally agree with Matt. Enjoy your day!

I am so excited to FINALLY get the MacBook that I ordered last week. It seriously is going to rule, because right now I have a crap PC that takes AGES to upload stuff. I love the peacock feathers, it reminds me of home. Have fun crockpotting.

That’s so funny you’d talk about not thinking you’d like oats + cake-y products before b/c I thought the same thing too! Until this week I tried a slice of pumpkin bread crumbled on top and I was pleasantly suprised with how much I not only liked it, but LOVED it! :)

Hey Kath!
Ok so I have totally random things to say as always! I LOve that you are organized! I think it is so fun to be organized I love it! But, anyway I was wondering about Barney Butter and MaraNatha nut butters. Both theses nut butters are super healthy, Right? Meaning they contain natural and organic ingredients and no bad oils like hydrogenated oils? And what nut butters are your favorite’s? I know you love nut butters! Me TOO!

Beautiful photos today, love the lighting!

Once I had part of a homemade cinnamon roll crumbled on top of oatmeal, and it was SO good. Bet those muffins ARE a really good oatmeal topper!

Enjoy your laid-back Saturday. You probably need it after your trip. :)

mmm crockpot meals are always so hearty! Gotta love them :) Sorry to hear about the SELF situation— I can’t believe they did that! Kinda makes me upset at them.. who does that kind of stuff?? You would think it would draw more readers to their magazine if you were in it. They don’t know what they’re missing. Oh well, more KERF for us!!! :)

Yes, both are natural with no trans-fats. My favorites are Barney Butter, Costco PB, Maranatha, and anything Naturally Nutty, esp. the almond butters.

It was hand-made by my parents’ neighbor when she was in high school and was about to be thrown away before my mom claimed it!

Looks delicious! I was just wondering WHERE exactly you find your chia seeds in the supermarket. I have been searching the aisles lately and have not been able to find them! They are not by the nuts or frozen fruit and I am out of ideas! Do you have any idea? Haha thank you!

I haven’t found them in stores. I got mine from Navitas Naturals, and I now have them in my Open Sky Store, which I believe has free shipping!
