		<description>Ok, Kath. So I read your blog ALL the time but have never commented:) Here are my two favorite Crock Pot Recipes:

Vegetable Kale Soup
Ingredients
2 Tbl EVOO
1 yellow onion (chopped)
2 Tbl chopped garlic
1 bunch of kale (roughly chopped)
8 c water
6 cubes chicken bouillon (vegetable if you&#039;re wanting vegetarian)
1 15 oz can of diced tomatoes &amp; chiles
6 white potatoes (cubed)
2 15 oz cans of white beans (drained &amp; rinsed)
1 tbl italian seasoning
2 tbl dried parsley
salt &amp; pepper (to taste)

*Just throw it all in the crock pot on low for 6 +/- hours, and it&#039;ll be good to go by dinner time! Major yummage!!!

The next one was from Rachael Ray but I converted into a crock pot dish that my hubby and I devour in the winter months.

Chicken &amp; Leek Stoup (not a typo - it&#039;s thicker than a soup but not quite a stew)
Ingredients
2 Tbl EVOO
2 medium leeks (washed and cut in crescent moons)
Handful of parsley (fresh or dried)
1-2 bay leaves
3 carrots (sliced or 1 c. shredded)
3 Tbl fresh thyme (or 3 tsp dried)
6 cups chicken stock or broth (whatever&#039;s on hand)
Salt &amp; Pepper 
1.5 cups instant rice

*Just put everything in the crock pot except the rice. Leave it on low for the day and by the evening, your kitchen will smell heavenly! (Mine does right this moment :)) For the last 30 minutes or so, add the rice - it should cook up pretty quickly. We usually go with brown rice around here but this is one that we sometimes allow for white rice because the starch makes the soup a little thicker. Either way, though, it&#039;s AMAZING and what we&#039;re eating tonight!!

Set on medium and allow to cook (it&#039;s usually all day for me - so 6-8 hours). I&#039;ve made this with both hot and sweet salsas, and they&#039;re all wonderful!</description>
