Getting up was hard this morning because somebody wanted to sleep with the ceiling fan and I woke up too frigid to take my arms out of the covers! So I laid there for 25 minutes
Then I finally got up because I visualized myself working out later and knew as much as I wanted to stay in bed, going to the gym in the afternoon would hang over me all day. So I went! 30 minutes on the Stepmill (at an easier pace than usual – 95 steps per min on the new machines), 10 mins on the bike and some lifting: bipeps, shoulders, push-ups, a few squats until I got bored.
Last night I mixed up some overnight oats:
- 1/3 cup oats
- 1/3 cup Stonyfield low-fat plain yogurt
- 1/3 cup vanilla soy milk
- 1/3 cup strawberries
- 2 tbsp wheatberries
And this morning I added:
- 1/2 a cup Uncle Sam’s (loved it!!!)
- The last of the Aztec Crunchy Corn
- 1 tbsp blueberry preserves
‘Twas crunchy and filling.
English Breakfast –
I’m very glad the sun is out today, but read my latest Gather post for some Gray Sky Blues.
Last day of early morning class EVER!! (Cause in the fall I have all afternoon/evening classes – which I am not happy about!)
Bye!

Oh no, your fall schedule isn’t going to work to well with Matt’s schedule, is it? Soak up lots of time with him this summer!
I’m still waiting for my gym buddy to get out of bed!
Your overnight oats look good – have you posted before about how to make them? (sorry if I missed it!) Do you cook them the night before & eat them cold? Or is there no cooking involved?
Yeah for your last day of classes!
Love your overnight oats!
What a gorgeous bowl! I love great dishes. The mixture inside looks very tasty as well. Soy milk is my new best friend.
Overnight oats? What’s that? Looks great – your breakfasts are my favorite posts of the day!
Yummy breakfast! Looks fabulous!!
Have a great last day of early class!
Ahh…the temperature debate of the marital bed. Maybe there is something positive about sleeping on the living room floor!
Enjoy your last day of class! I always liked getting my classes out of the way…evening classes are not the way to go, I definitely agree with you!
enjoy your last morning of classes! How exciting
You guys should get a cat – instant alarm clock. Ours jumped up in my face at 5:30 this morning wanting food. It’s hard to fall back asleep after that!
Enjoy!
And great morning start.
Have a great last day of class!
Summah time is right around the corner!
Enjoy your last day of morning classes
I love all the different textures in your oats… the Aztec Corn looks fab!
delish looking oats! lovin the cearl mix-ins!
Have a great day!
Congrats on the last morning class!
I always forget about overnight oats… it’s so nice to have breakfast taken care of when you wake up in the morning!
lovely breakfast, way to get yourself out of bed and too the gym!
ah, late classes. welcome to grad school. it really f-s with your schedule, doesn’t it?!? ;-P
congrats on finishing. it’s a good place to be.
oh…. I really need to try the overnight oats now!!! It’s summer time!
Enjoy your final morning class and the sunny weather!
That is so funny – I had overnight refrigerator oats for the first time this morning! I got the idea from Pam Anderson’s book, The Perfect Recipe for eating great and losing weight. I’m not a huge oatmeal fan, but leaving them in the fridge overnight gave it a nice consistency – not “gluey” which is what I always hated about oats!
You use motivation to your advantage REALLY well.
Can you remind us how to make the overnight oats? Do you just mix everything together and put it in the fridge?
great breakfast! enjoy your last class!
I am loving your blog – love reading (and more importantly, seeing) what you’re eating….I try to eat mostly healthy foods and your blog has given me some new ideas (garbanzo/avocado mash = delicious!). I tried ‘pea shoots’ from Trader Joe’s this weekend, and those were great (not that I saw them here, just felt like mentioning!).
I had a question – wheatberries – I bought some after reading about them here (I also have been making some great oatmeal lately thanks to you!) – what do I do with wheatberries? Are they for either savory or sweet dishes? Do you just cook them like rice?? Thanks!!
Woo hoo! Enjoy the last day of morning classes!
I think you need to do a one time, big, step by step tutorial after exam week on how to make hot oats and overnight oats! I’m getting into oats, but I always use instant and yours (though I know there is a big difference between instant and oats) look so much better!
If someone told me how to do it (esp. with pictures) I think I’d have the patience to do it in the morning.
Great bowl of oats!
Yay for your last class!
You’re overnight oats look so good! I love overnight oats.
OK, hands-down, best overnight oats I’ve ever, ever seen! I just bought wheat berries because of you! I have no idea how to make them though
Research must be done.
HOLLAAA to the last day of morning classes! That sounds fab!
I’m definitely with you on wanting to get workouts out of the way before the rest of the day. I don’t like it looming over everything else that has to be done!
Enjoy the day!
Congrats on your last day of morning classes..that’s so exciting…Check out my blog PB2 Giveaway and enter for your chance to win!
Best,
The Heathy Apple
I have EVENING classes and would much rather have them in the early day hours!
Kath, those oats look spectacular! Seriously
And, I am sure you have answered this question- but where is your table from? I am in LOVE with. Every time I see it on your blog I mean to comment and ask where you got it. It is SO cute!
Happy Monday!
I’m a morning class lover as well. I had to switch my schedule last year to evening and it drove me crazy! Sorry about the schedule change
I always want to try Uncle Sam because it’s so inexpensive! Glad you like it, I’ll have to give it a try.
I had evening/night classes all this past year and I was NOT a fan! I thought it would be great to have the days off, but I really missed my relaxing evenings at home. I feel for you! Enjoy your last a.m. class!
Yeah for classes being over today – it’s a great feeling, but, not as good as when all your finals are done!
My BF is always hot and I’m always cold. So when we sleep, he has a fan on his side of the bed, blowing directly on him, and I have an extra blanket on my side only. He sleeps in boxers and I’m in full PJs and sometimes a sweatshirt too. But that way we’re both happy! (Not very romantic though…but oh well!)
Men, what can you do with them? I think they have it in their minds that it’s a GOOD thing to be freezing at night… crazy!
Sorry about the not-so-nice schedule next year. I suppose that’s going to be hard with Matt’s baker hours. At least it will switch things up for you, and you and Matt will just have to plan some extra time together!
Ben tortures me with the AC in the car! But then again, I do crank up the heater every night
I love overnight oats!
Monday is always a tough day to get up. Being cold sure doesn’t help. Good job on getting there and getting it done.
Your breakfast looks so bright and “happy” and colorful. That should be a FRIDAY breakfast
Oatmeal Folks,
Check out the Tribute To Oatmeal page for all things oatmeal. There’s a video there with ALL the info on how to make whipped banana oatmeal. There’s also a link to the overnight oats page, which I just updated with a little more info. It’s a totally raw breakfast – just combine and stir the night before.

Hey Kath!
I’ve been a reader for a while, and I truly admire your creativity with food and the presentation, it is so beautiful.
I have a question, which might sound silly: how do you prepare overnight oats or muesli? What do you do?
If you could let me know, thanks!
Hannah
Cereal- gotta be one of my favs…. along with many other favs lol
Kath,
