Mom’s Cookin’

March 13, 2010

My second mom, that is :)

I got a chunk of work done this afternoon, but still have an article and an Open Sky thing to do tomorrow. Hopefully I can knock those out before my run and can enjoy the whole afternoon! What I really love about long distance running (which I’m sure will/would also be a hate too!) is that the runs are an EVENT. One must plan a whole day around the run and recovery time. It makes it more fun!

I got a bad headache this afternoon. I think I was drinking enough water because – not to be too indelicate – but my fluids were clear. But maybe I had an electrolyte imbalance? That yoga class this AM was that tough!

Emily and I also had insatiable hunger! (Thirst?!) I swear I was drinking water. I had tea to start…

IMG_7892 (640x427)

And then decided I was hungry and broke into the Bora Bora bars

IMG_7888 (640x427)

Paradise Walnut Pistachio was my first try. It was good!! Sweet, chewy and nutty. Sadly it didn’t make a dent in my hunger, but I blame my exercise and not the bar!

IMG_7891 (640x427)

Mail time, mail time, mail time!

You won’t BELIEVE what came in the mail today!!! Addressed from Mr. Andrew Monson (Matt’s brother) was an RSVP to our wedding!! THREE YEARS LATE!! He must have just found it in his belongings and sent it in :) Totally fun!!!

IMG_7885 (640x427)

My headache peaked right before we left for Karen’s and I took 2 IB profins. They knocked it out within 30 minutes. I always hesitate to take drugs. They just don’t feel right. But they sure make me feel right…

I also had an orange at Karen’s in an attempt to make myself more hydrated

IMG_7893 (640x427)

And then once my headache was gone…..I dehydrated myself!!

Well, I felt totally better and Karen got us our favorite pinot so I had just a small glass. ‘Tis a Saturday night!

IMG_7897 (640x427)

Next into my mouth:

IMG_7906 (640x427)

Karen’s Best Vegetable Lasagna.

IMG_7903 (640x427)

Made with cottage cheese (I don’t really care for ricotta) and sun-dried tomatoes, you won’t miss the meat! The sun-dried tomatoes are super meaty and chewy and this lasagna is packed with veggies. She altered the recipe a bit this time, but the one I linked to above is a winner!

IMG_7910 (640x427)

She also made a fresh navy bean salad to go on the side

IMG_7908 (427x640)

Yummy!!

IMG_7915 (427x640)

IMG_7914 (640x427)

IMG_7920 (640x427)

And to make sure my glycogen stores are in tippy top shape for tomorrow’s run: Great Harvest Bread Pudding!

[She used a standard recipe but used GH bread. This was not low-fat! I don't have the recipe, sorry.]

IMG_7924 (640x427)

Topped with a wee bit of vanilla ice cream! We enjoyed dessert while watching the movie Hachi with Richard Gere. It was pretty good! Hachi was so cute.

IMG_7930 (640x427)

Karen also brewed some decaf coffee. I’m not one for coffee after dinner. It just seems like the wrong time of day (even being decaf) but I enjoyed this SO MUCH!! Like oats + coffee!

IMG_7927 (640x427)

Thanks for the fun night Karen!

Going to bed and sleeping in LATE!

Holy YUM that dinner looks fantastic!!! Lasagna (veggie lasagna) is one of my most favorite things ever and that version sounds to die for. And bread pudding to top it all off?!
I don’t generally have coffee at night but I have to say it goes excellent with dessert.

I also love runs for that reason (among others). I’m so happy for you that you love it!!! I was going to be running in the half that you are running in Charlotte in April but I won’t be able to now because of my stress fracture. That is REALLY hard for me to admit but it is what it is. In any case, I’ll be rooting for you!!!!

Wow, that was a nice meal! I am not hungry, but it kinda made me hungry!!! Glad you got rid of the headache. I had one earlier today and I swear it is from the pressure outside…it has rained for 3 days straight. I am also fighting another cold, I think, that has gone straight to my chest this time…ugh! Oh well. Definitely hydrate and have a great run tomorrow!!!

Oh wow, Karen’s dinner looks great!!
I don’t care for ricotta either. I think it has an awful texture which ruins everything.

Looks like a delicious dinner! And that bread pudding…yum!

I really like coffee with dessert, but I do try to get decaf if it’s after 3pm. :)

Looks like a delicious lasagne dinner! I’m really curious abou the movie Hachi, after seeing commercials for it, I can’t really picture Richard Gere in it!

Seriously, that dessert looks outta this world! I’ve been dying to try hot yoga, but I can’t find anyone that offers it around my small city. :(

Yum, Karen’s lasagna looks amazing! I actually don’t care for meat in lasagna. My family has only made it with ricotta + mozzarella. I think it tastes best that way, especially after it settles.

Do you think Karen would be willing to share that navy bean salad recipe? I love bean salad for lunch on top of a big green salad!

It was just navy beans, red pepper, celery in some avocado oil, lemon juice, salt and pepper

Hope you have a great run this morning and were able to sleep in!
I feel the same way about pills – I don’t like taking them, but sometimes they are the only thing that helps. You tried everything else first, so I wouldn’t worry too much about it. It could just be tiredness after several busy weeks or stress trying to get things done.

Hi Kath!! I’ve been a long time reader and absolutely love your blog! Yesterday, my husband and I woke up with horrible headaches (no alcohol was consumed the night before… surprisingly). Later in the day we stopped by CVS and overheard multiple people complaining about severe headaches, so we asked the pharmacist who said there was a change in the pressure along with the release of a new allergen that most people react to. She said the first day is the worst. Just a little FYI, not sure how much stock to put into it, but interesting none the less. Hope your headache is gone today!!

You are such an inspiring, beautiful person. Thank you for all you do! Also, (matt will be pleased to know) I just got a job at Great Harvest Bread in Raleigh. Start Tuesday and can’t wait!!!!!!!!!!!

Sorry so long. First time commenting….guess I had more to say than I thought :)

I love lasagna because I don’t feel too pressured to use noodles (type 1 diabetic here)–and as a bonafide Italian, everything’s better drowned in a good tomato sauce.

It is unheard of for you to not have already posted something by the time I get to my computer on a Sunday morning. You actually DID sleep in!! bravo!!!

Also, I find it so amazing how you are able to make all your food look so good. For example I could eat and shoot the exact same items and they would look much much less appetizing.

Did you take any lessons or is it just all the practice you have had from the blog?

Happy Sunday to you and Matt!!

That lasagna looks incredible. What a wonderful idea to replace meat with the textural and delicious sundried tomato. Also, I love navy beans. They’re so cheap and nutritious. Wonderful to include in simple soup or salad recipes.

That bread pudding looks out of this world fantastic. Yummmm.

Have a wonderful run!

I’m a new (I think?) commenter. Sorry to hear about your headache! At some point could you write about how you properly hydrate yourself so that you’re able to (usually :) ) avoid dehydration after hot yoga classes? The most ill I can EVER remember feeling was after I did a free trial Baptiste yoga class last summer. I thought I had hydrated enough before, during and after the class but went to sleep with a splitting headache that was still with me the next day and then ended up throwing up. Yuck. It was a truly horrible experience and scared me away from yoga for a loooong time. I tried again a few months ago at a studio that has just-barely-heated beginner classes (and now I love it :) ) but am nervous to try the hot classes, even though I know I’m much more prepared this time around. Anyway, sorry for rambling, but I’d be interested in learning about your hydration routine if you have a moment.
Thanks and have a great Sunday!

37 Kath March 14, 2010 at 10:28 am

Hey Sara,
Sorry you had a bad experience! I don’t have any routine other than I sip water when I wake up and all through class and am sure to keep drinking afterwards. I would just double up the day before so you don’t wake up dehydrated and don’t drink alcohol the night before either.

I’ve never heard of those Bora Bora bars. It looks so good! I’ll have to see if they have them at my store, where did you buy them? I have a whole foods and trader joe’s in my town.

Good luck on your long run! I’ve run 2 marathons, and the long runs were always Saturday mornings on the Chicago Lakefront at 7:00 a.m! So by 10 or 11 or noon depending on how far the run was it was so cool to be out there, but even better to come home, make a huge breakfast and relax the rest of the day!
