I’ve been a ball of nervous energy all morning – no news on Karen yet.
But we did take out the tree!
These guys are much happier now that they don’t have to be angels!
I burned off some more energy on a conference call and then I biked to the gym and back while Matt babysat the phone.
I returned, no news, showered and we sat down to a great lunch.
Smoked Salmon + Cuc Pitas with side salads and fruit
The WW pita was stuffed with wild Alaskan salmon (a post-holiday treat to make healthy eating extra fun!) plus cucumber, capers, dijon mustard, jalapenos. All was baked for 5 minutes to warm it up
Side salads were made of spinach drizzed in olive oil and cherry vinegar plus espresso salted nuts, rosemary salt and goat cheese (another treat!)
Citrus for me, apple with PB for him
Served in a ginko mug!
More Match!
All these wonderful colors are part of a new line in OpenSky – KERFy colored and perfect for blogging : ) I’ve been requesting more unique dishware products and was very excited to find these -
The set of four ginko mugs is $32
Also the similar floral mugs from today’s breakfast
And the fun TAG plates – a set of 6 in every color. These just went through a 30% off flash sale via my OpenSky newsletter this week – hope all of you who bought them are pleased!!
Check out my Green Smoothie recipe in Volleyball Magazine!!
We’re getting the crockpot going with this recipe in anticipation of being at the hospital this evening and needed someone thing to cook for us!
Adios!

Enjoy your new crockpot, too…I just got one about 3 mos ago and it’s been fun to play with.
Fingers crossed for Karen’s speedy recovery!
I thought you would have news…I am on pins and needles here. Hopefully you will hear soon!
All best to Karen. I hope you hear soon.
And what a nice lunch
The smoothie sounds great..what can I use instead of milk and are rolled oats the same as quaker old fashioned oats?
Andrea, when I make mine I use almond milk…I’m not a huge milk fan
Yeah, use any kind of milk alternative you like and any kind of oats!
All the best for a speedy recovery! Do y’all really sit on the same side of the table? Looks like a lovely and colorful lunch.
aww. I love sitting next to my husband. I know that some people find it strange, but we always do!
Cute pics! Lunch looks so professional!
I hope everything went well with Karen. I had plans of starting to take down my Christmas decorations, but a fever is getting in my way.

I immediately regretted my decision to not buy smoked salmon at the g-store after reading this. Major craving now.
Kath,
I am so glad that I have discovered your blog! I love all the recipes and LOVE your tribute to Oatmeal! I made the whipped banana and it was yummy! I can’t wait to make Almond Butter!
Thanks for blogging!
Welcome!!
The best way to get through the day is by staying busy…hope you have good news soon!

I had a pita sandwich for lunch too
Tasty, huh!?
Keeping Karen in my thoughts!
And sidebar: That shot of you and Matt side by side is adorable!
Still praying for you guys! I know the waiting is so hard.
I’m really curious to see how your blogging changes once your Great Harvest opens. I anticipate a lot of meals to go?
Maybe at first I will spend a lot more time there, but my ultimate goal is to continue my work as a blogger and writer while working part time doing the marketing / PR / website for the business. My hours are better paid off at the computer, if you know what I mean. So I will make every effort to keep KERF going as it is – with perhaps a bit more stress and pre-planned meals in the mix.
I understand completely – and I am selfishly really glad KERF will stick around like it is now. You are really good at what you do!
Haven’t had salmon in a sandwich for ages! Smoked salmon on brown soda bread is a big Christmas thing in our house though. I love the smoothies recipe too. I can’t imagine my house without my Christmas decor now! It’s going to look so boring! X
I’m so glad the Bears are out of the tree. It didn’t seem like a very productive way for them to spend the holidays.
The pics/smoothie look great for the mag, but will it improve my volley?
Random question – do you happen to have a grandmother who lives at the Elks Home in VA? I just returned from visiting my grandmother who lives there and was chatting with another resident who mentioned that her daughter was a dietitian in Charlottesville. I wanted to ask if her granddaughter had a blog, but wasn’t sure if they would known what a blog was
Haha, no, that’s not my grandmother unfortunately!
Green Smoothie Recipe looks great!

Aw, I love the new dishes! They’re so bright and cheerful.
love the side by side seating arrangement, so cute!!
I love the photos of you two! My thoughts are with you guys. Fingers crossed that you get (good) news soon!
It’s terrific that you will be able to cook for her! You may already know this, but some pain killers can be VERY constipating, so keep that in mind for your menu planning. Another thing you can do is rearrange some of her things so that they are easier for her to get to herself. It’s nice to have help, but nicer to be able to do things for yourself. Ask her what her coziest comfy clothes are and put them in a drawer that is easy to reach. My fingers are crossed that the news will be good and Karen will have a quick recovery.
Sending good wishes for Karen!! Hopefully things go smoothly for her.
Love your collage of you and Matt at the table– very cute!

These house and lunch looks great.
