After a trip to Winthrop and back, Anna and I went to visit Karen, hung out and made a yummy lunch: sardines (ewwwwwww!!), kale chips, toast + apple.
I whipped up a sardine salad with my usual tuna ingredients (minus the red curry powder): 1 can lemon olive oil sardines, 1 carrot, 1/2 a bell pepper, capers, mustard, hot sauce + S&P. She LOVED it!
But she REALLY loved kale chips!!
We also had some toasted Great Harvest High 5 bread –
And an apple with Barney Butter –
I also found this lovely package of ProBars on my doorstep!!!! They’re 100% real food – can’t wait to try ‘em out!
The mail truck just drove by – gotta go check it!

I bought a beautiful bunch of kale last week at my farmer’s market with the intention of making kale chips, but within a day in my fridge, it went completely wilted. No chips for me. Has this happened to anyone? I know it can wilt, but it happened so incredibly fast!
Oh wow Pro Bars…I haven’t heard of them before!
Did a special person deliver them to you?
I haven’t tried Kale yet but I have it on my list. Kath you have inspired me to try out many new foods! Thank you!

Betsy: I bought bunch of kale that I had for over a week and a half that was still chip-make-able, and turned out quite nice. Must have been something amiss with your bunch!
And funny, I only have known 2 other Betsy’s ever!

This isn’t the first/won’t be the last time I say that but I can’t help it–I looove it and always get great ideas from it…your future clients will be SO lucky to have you as their dietician!
That being said, any tried-and-true recipe ideas for italian vegetarian dishes? The people I work with are FASCINATED with my vegetarianism and therefore, I get many questions about it / meal ideas.
Thanks!
Amy
