Make A Pizza

LOVE THIS WEATHER!!!!!! I cannot wait for springtime to be here for real!

I went on a glorious walk this morning downtown and then to a coffee shop for an interview. Then to the gym for just a little magazine cardio. It was a great relaxed morning!

On my walk home, I began to think about what to make for lunch. I knew I had one tortilla left and some tomato paste and came up with a tortilla pizza.

But moldy tortilla pizza didn’t sound too good (had to toss the 2 week old tortilla). Phase II: Bread!


It worked like a charm. I toasted up some Whole Grain Goodness and then topped it with some tomato paste, red pepper strips and smoked gouda. Tasted like pizza!


On the side I had a mixed salad with sunflower seeds and dried cherries, olive oil and honey.

Matt got home right when I was getting ready to eat and we got to enjoy our first meal on the new porch!!!!

Love those little pizzas!
It is amazingly warm here today, too! After the pooch wakes up form his nap, we are going to go for a nice long stroll! Enjoy your afternoon and the sunshine!

It’s beautiful. And seriously, this weather? Even in Upstate NY it feels like springtime. I stinkin’ love being able to wear my Sperry’s around in January.

I am partial to tomato sauce. Tomato paste tastes so funny to me! I literally can’t do it. But spending the morning in town (especially to do an interview — both stressful and fun) is a wonderful way to start the day. Especially in C-Ville. Your downtown reminds me of back home!

I’m the same way about tomato paste. I love the sauce but the paste is…bitter or bland? I didn’t want to throw out the can that I opened before though so I mixed it with leftover sauce ,spices – and cheese – and then it was better. Kinda defeated the purpose but whatever works! :)

Hey Jen,

My mom taught me a neat trick for leftover tomato paste…store it in a small container and put it in the freezer. Hope this helps :)

Thanks, I thought it would just get freezer burn or defrost weirdly…like pumpkin does, ick :( . What I was getting at though is that I don’t really like the taste of the paste just on its own. But when it’s “doctored” up a little – it works :)

Also, if you add a pinch of sugar or even honey it helps with the taste.

Adore smoked gouda (perfect with mash cannellini beans and apple on pizza…though a doorstep of bread is always a good option!)

Pizza Bread…we used to make that as kids, when my grandmother was making sauce. The porch looks great. I am going to sit outside and enjoy the sunny 60+ degree day and have a cup of coffee on my porch!

Dontcha just love a quickie pizza?! I make grilled mozzarella cheese sandwiches for the boys and they dip them in pizza sauce. Fun pizza eats! Have a great afternoon Kath!

english muffin pizzas were one of my absolute favorite foods when i was little. come to think of it, they still would be, if i could keep red sauce and mozzarella cheese around my apartment long enough to think about them.

This weather is incredible! We just enjoyed a 12 mile bike ride along the C&O towpath, with a 3.5 mile hike to Harpers Ferry in between. It was nice to come home and make a big lunch and enjoy it out on the patio in the sunshine. I could get used to this!

Red peppers and melted cheese go so well together. That little pizza melt looks tasty.

And so glad you’re enjoying the nice weather. It’s been unseasonably awesome in San Diego the past week but I know that winter will be back yet. I want spring and summer, always!

Mmmm I love pizza and could probably literally eat it the rest of my life. But GOOD pizza! Gouda + whole grain goodness definitely sounds like it would fit that bill :)

Beautiful here in my area of Southern Ontario…just out in my warm sweater and scarf…even saw a guy in shorts! My favourite is toasted tomatoe and cheese when the tomatoes are at their peak…as that would not be now, tomatoe paste and roasted peppers sounds delish!

Oh man, gouda! My absolute favorite cheese. I’ve never used it on homemade pizza though, definitely something to try! That porch is beautiful :)

smoked gouda is so stinking good – that little faux pizza looks incredible.

Also, it’s snowing like crazy pants over here in Colorado, so I kind of hate you a teeny bit for your weather. No, not hate…jealousy. πŸ˜‰

What a healthy way to make pizza. I would be way to scared to use straight tomato paste but adding the red pepper is awesome. Thanks for such a great idea!!

i love homemade pizza. My current fave is a pita topped with hummus (instead of tomato paste) smoked chicken and feta. Yum yum!

You could send some of that weather my way. It is supposed to be summer here and it has stopped raining twice in 3 weeks! I want a refund on summer this year!

That is seriously my dream meal, right down to the sparkling water! I love making pizzas on non-pizza things- bread, tortillas, crackers, salads- anything tastes better if you call it pizza πŸ˜‰
