I headed downtown for a multi-level yoga class this morning to meet my friend Amy, who is expecting! The class was slow-and-steady style, but that’s exactly what I was in the mood for this morning. It was one of those “stretch out between the joints” classes, and I really enjoyed it. It was fun to catch up with Amy too! Afterwards I finished up a Real Simple on the elliptical and walked on home. It’s a gorgeous Saturday here!
Lunch was a mix of foods hidden in our fridge…A cup of Imagine Sweet Potato Soup stirred together with a half cup of leftover lentils and some sharp white cheddar
And a springy salad of green leaf lettuce, honey (love honey as a dressing!), sliced apple and spiced pecans + walnuts.
The spiced nuts made it! Need to find a good recipe for homemade spiced nuts soon – they take salads to a whole new level.
Luscious lemon to sip!
Whoever the kind soul who anonymously sent me this adorable glass storage container is – thank you!! I love it
Have a great afternoon friends!

Looooved the class and so good to see you! I am still feeling the stretch.
Mmmm that salad looks so crisp and fresh! Apples are one of my favorite toppers!
i have been looking for a spiced nut recipe too! if you find a good one, please post it!
So simple and delicious! I love apples and pecans together with blue cheese yum
I think the best part of salads is the nuts!!!
Ohh, that soup looks amaze!
I’ve made them as a part of this salad recipe before. It’s from a restaurant that I went to in nova scotia! The walnuts (and the whole salad) is absolutely delicious!! http://www.edining.ca/1175/recipes/Charlotte_Lane's_Mesclun_Salad_with_Caramelized_Garlic_&_Spicy_Walnuts
Thanks Jamie!
That is a cute little glass container.
So I just tried the Chia Charger Nut Butter that came to my house. It was a little dissapointing because the buffalo dirt doesn’t really taste like it has much coffee in it, just peanut butter really. The Manhattan Mud is a bit better as it tastes how it is advertized; with a hint of chocolate. I like the consistency of the nut butters I just wished the coffee one tasted at least a little bit of coffee. I probably wouldn’t get it again though. I’m off for a hike today, so excited! Have a great weekend
Thanks for your feedback Lorin. Sorry you didn’t like the buffalo as much, but I’m hooked on the mud!
No worries! In the end, it’s still peanut butter and still tasty. Yes, the Manhattan Mud is definitely my fave!
Did Karen make that placemat? I love it.
Nope, my mom sent it to me!
Cool. I asked if Karen made it because it has the name “Karen” written on it.
Omg really!? I missed that!
I love the Imagine Tomato Soup! So good. I usually chop up vegetables and throw in with it as a side. I’ll have to try the potato and butternut squash kind now.
Lunch looks great Kath! Jealous of your nice weather!
I love putting apple in my salad too!
That’s what I love about yoga, it’s good for relaxation, deep stretch. Whenever I do it, it calms my mind so much! Well, depending on the class it could be VERY intense too..
As is in life, salads are so much better with fruit and nuts!
I am currently making the softly spiced nuts from the Eat, drink and be vegan cookbook. They smell good!
i love the flavor of sharp white cheddar with lentils! when i had lentils in the fridge for a long run, i would top a baked potato with lentils and super sharp cheddar.
Spiced, even toasted nuts can take dishes to a new level. Your salad look crisp and fresh!
I love how you combined the Sweet Potatoe Soup with lentils…sounds hearty and delish! At lunch out yesterday, my spinach salad had sliced almonds sprinkled on top…oh so good!
Hey Kath!
Mama Pea at Peas and Thank You has an egg nog spiced nut recipe on her blog currently. I’m thinking of giving those a try myself!

Kath, I was convinced it got lost in the mail. I’m glad to see that it got to you. I thought you might make ONO in it. I use mine as bowls because I find the shape so pleasing:)
Sam thanks so much!!! I’m sorry I haven’t blogged about it until now – it’s been doing good use storing my nuts, but you’re right I should eat out of it soon!
Looove spiced nuts.. gorgeous little jar too

I have the stuff for Mama Pea’s Eggnog Spiced Nuts on my grocery list. So excited to try them!
I need some glass containers like that! I’ve been using old peanut butter or applesauce jars, but they just don’t do the trick!
I don’t think I’ve ever tried spiced nuts, but I love candied almonds on salads! Especially with pear or apple and a sharp cheese.
I really need to start eating more salads again! Yours looks so delish! It’s just tough to wrap my head around the idea on chilly December days, haha!
lemon is just so refreshing! I haven’t been using it enough lately!
I notice you always have leftovers for lunch, thats an awesome way to save money and avoid waste. Have a great holiday.
just because I’m curious, how do people know where to send things when they mail goodies? I assume you don’t post your address anywhere for privacy purposes.
Things get sent to the bakery : )
Imagine seriously makes the most magical easy heat-up soups. I also like their butternut bisque. Much love.
They’re not as sugary sweet, but I have a spiced pecan recipe linked below that I use for my morning breakfast “sundaes” as a topping, as a snack or on salads. If you try them, I hope you like them

Thanks!!
Love nuts on salad, especially candied!
