Can you believe this is my last week in Salisbury?!
Time is a’flyin!!!!!
Were in the office today preparing for two days of nutrition education tomorrow and Wednesday.
Lucky me, Lynn made a pot of coffee and I had a mug with some skim milk Amy had in the fridge. Perked me up!!
I had a steady build of hunger that peaked at 11:30 when we all broke for lunch.
I brought in Super Bowl leftovers – Kate’s salad that she sent home with me!! It had feta, spinach, tomatoes and croutons and I added 3 of Kelsey’s goat cheese balls and some almonds.
Plus pineapple wedges from the cafeteria of North Ellie! ‘TWas a big, fun salad!
On the side I brought in a day expired pumpkin yogurt…
Thanks for lunch Kate!!!!
Special Dark for a special day
Have a great Monday afternoon!

I perked right up when I saw those goat cheese balls in your last post – they look soooo good – and a perfect little topper for your salad.
Have a great Monday afternoon yourself!
Those looks like such thick and juicy slices of pineapple – wonderful! And while that pumpkin yogurt is all well and good, I”m still waiting to hear what you think of the caramel oikos
Wow, time is really flying by! that’s great! Before you know you’ll be done with your internship
I eat expired yogurt all the day, it holds up for weeks afterward. I use my nose as my guide.

I can’t believe how quickly time is flying either! I use expired products all the time…it’s ok.
The salad and pineapple looks so yummy and pretty!
Wow, time really is flying by!
I love salads of leftovers. They always seem to fill me up.
And special dark is a nice treat. enjoy!
Ooooh goat’s cheese, I just had some for my afternoon snack – it’s easily the best cheese out there! Equally, almonds are the best nut – you had a great lunch!
Pineapple really makes a salad doesn’t it? Yours looks really good!!
We are going to be all about leftovers for lunch and dinner too. I’ve got about two pounds of dip to eat. Crikey!
That looks totes delicious. Doesn’t help that I’m starving and didnt bring enough snacks…Sigh.
Wow, that is going by quickly!
I’m all about the leftovers this week; we have tons!
Time is flying! What is the next step in your internship?
Wow that did go by really fast!
Salad looks great; nothing wrong with a little expired yogurt either!
looove the pineapple in the salad. all i have leftover from the superbowl is a biiiiiig hunk of pudding pie. thinking that might not be such a good choice for lunch…
What a great lunch! Isn’t it amazing how quickly this year is going?
expiration date? what expiration date?
That is one of my favorite yogurts!!!! YUM!
Mmmm – Kate is a good friend! Haha. That salad looks AMAZING! And I can’t believe they’re still selling the pumpkin pie yogurt! That’s awesome!
Hey (: Was your title in reference to Full House? The morning show the dad works in.
Of course!
Great looking lunch Kath! I love pineapple too
Amazing salad! Goat cheese balls sounds like heaven!! Yum
that salad sounds amazing to me…in fact, i think i’m making spinach salad for dinner tonight! can’t wait
That is a great (and healthy) superbowl leftover!
Those are some healthy lookin’ super bowl leftovers!
And just so you feel better, I had a Chobani for breakfast today that had supposedly expired in mid-January!
Time is flying by for sure! I just realized Valentine’s Day is Sunday! Special dark chocolate, yes please
I still haven’t seen that pumpkin Stonyfield anywhere — wonder if it’s a regional thing…?
I find mine at Harris Teeter
Goat cheese balls??? Sounds amazing. Superbowl leftovers are the best. We’re going to be eating ours for a week.
I love that pumpkin yogurt, sadly they don’t sell it in CA:( I bet you’ll be glad to be done with the commute, but it sounds like you’ve been doing some really cool work the last few weeks. can’t wait to read about the next rotation!
I eat expired stuff a good bit and it’s usually fine, hopefully yours was ok!
That is the best yogurt flavor! Good luck with getting everything wrapped up before you are on to your next adventure!
I am so happy to know that I am not the only one who will eat expired foods (within reason, of course). If my husband reads that something expired the day before, he would toss it. Because, apparently, the second the day changes to the date of an expiration that product turns into something that will boil your insides and make you sick for a month.
Really, that’s his thinking.
I wish we had that pumpkin yogurt in Canada! You guys are so lucky.
K
Wow I can’t believe you’re almost done! Seems like you just started! Enjoy your last week!
Special Dark Chocolate is SO very good. Have a great last week
That salad looks great. And time is really going by so quickly!
Thanks for reminding me its been way too long since I’ve had pumpkin flavored anything!
I had salad in that tupperware today!!!!
That salad sounds incredible!!! Aw pumpkin pie yogurt…
I miss it!
Pumpkin pie yogurt looks sooo yummy!
Ahh, that salad looks awesome — especially the pineapple…there’s really nothing quite like juicy, fresh pineapple!
