“The Tale of the Missing Husband”
I left Matt at the bakery at 5pm [still working on the oven and cleaning up lots of dust] and headed back home on my bike. He said he’d be home around 6 or 6:30. I piddled around for a bit and then decided to start on dinner so it would be ready when he arrived.
I texted him at 6:45 and said dinner would be ready in 10 minutes, while I grilled up some broc + eggplant doused in olive oil, salt, pepper and smoked paprika.
At 7:00 there was no sign of him.
I worked on our whole wheat spaghetti flavored with Pestos with Panache – Smoked Almond + Prosciutto – and topped with a pretty egg and parmesan
I poured him a beer to make his arrival even more exciting.
No show.
At 7:20 I moved his beer to my side of the table.
At 7:21 I drank it.
I 7:22 I decided to start eating.
At 7:26 I proclaimed [out loud] eggplant as my favorite vegetable. Especially when grilled!
By 7:45, I was all done eating.
At 8:37 I received a text: “On my way”
And at 8:40 he walked in the door.
Guess I need to go pour another beer!

Haha. that’d be SO me. Where is he?? Oh well, I’ll eat/drink his! HA. Glad he is home safe. Love grilled eggplant too!
Oh no!
The same kind of thing happened to me tonight too. Steve’s busy with work, and I thought he’d be home around 8pm. No sign of him, but then I got a call just after 8:15pm, saying he’d be home in 15 minutes.
Now we’re home together…but no beer for me tonight. I’m way too tired!
This story sounds very familiar to my own experiences! I feel like everytime I put forth A LOT of effort to make a fabulous dinner and atmosphere for my boyfriend, it fails miserably due to scheduling conflicts..

LOL!! Matt got carried away tinkering!! Sometimes that happens with my husband too. What a yummy looking dinner.
haha! When I used to manage a gym it was the same way except my poor husband was at home waiting for me. You two are wonderfully supportive of one another and it’s so great to see how you work together when you’re juggling so many commitments.

I have so been there! I love that you drank his beer and ate dinner before he got home. I have a friend that will wait for hours and hours for her husband to come home, get off the phone, or stop playing games, and I always feel like the bad wife for eating if my husband is later than 8:30. My food has to digest, darn it!
that dinner looks fab, especially with the egg on top and the beer! I eat lots of things with eggs on top (and beer) as a college student, you make it look so gourmet!

I love your play-by-play of what happened. Sounds similar to what I would do – when my bf is in busy season, I just give up all together and put his dinner in the fridge and chow down!
My husband does that all the time. Except it can be DAYS…sometimes. Like, he is supposed to be on a trip and get home Monday and all of a sudden, 17 meetings later, he’s home Wednesday. Not really a huge deal if I didnt have a FT job, child, and life stuff to juggle

MMM your pasta looks so yummy. Question how do you cook your eggs to get them to look so perfect specific oil? specific pan? mine always break and they get tough on one side.
I stick ‘em in a Circulon pan with some Misto-sprayed oil and set ‘em sit for 3 minutes or so
My boyfriend does that sometimes. It both amuses and drives me nuts how he loses track of time when he gets locked into a project. The newest thing involves fruit flies—just so long as he doesn’t bring any home it’s all good. Looks like a great dinner! I love topping a veggie & grain dish with an egg. It feels so…rustic…or something. Haha clearly my brain is fried from this week!
Aww, sorry work had to get in the way tonight. I know my dad was often late getting home, and I could always tell my mom never liked eating without him. Hopefully once things calm down and get settled with the bakery it will be back to the normal dinners with Matt!
Awww, well at least your dinner looks delicious! Expect many nights like this… I grew up in a small business with my parents and now my own. Enjoy the peace and quiet while it lasts! haha

Ah I know how you feel! I live with my boyfriend and he is a car salesman. The dealership “closes” at 8:30, but it’s always later. I often end up giving in to hunger and eating alone!

I know how you feel being the “lonesome dove”. My hubby usually gets home between 7:30 and 9:00. I hardly ever get to eat dinner with him.

Ah! Eggplant is another weird texture thing. I need you to cook it for me! The skin is so rubbery and tough + the inside is so mushy. It’s one veggie I can’t get right!

Poor Matt – working late!
This used to be a regular occurance with my husband. I finally told him that it realllllly annoys me to make dinner and he come 2 hours late, but I guess he felt bad being late. Now he always gives me a more realistic time of when he will be home. Soooo, much better.
I think I would have gotten worried that the giant oven gobbled him up!
