Life In A Box

June 12, 2010

Lots and lots and lots of packing. But we made GREAT progress!!! 2 weeks to go!

IMG_4848 (640x427)

Big Styrofoam boxes that deliver yogurt to food bloggers make excellent fragile frame containers!

IMG_4849 (640x427)

And Kodiak Cakes brownie mix is awesome!

IMG_4842 (640x427)

My make out session:

IMG_4844 (640x427)

Cooling – they’re for our belated Mother’s Day picnic tomorrow (and you can still get the mix along with cookies + pancakes here! It’s whole wheat but also made with butter and eggs for good flava.)

IMG_4850 (640x427)

IMG_4888 (640x427)

After a looooooong day of sweating, Matt declared we have some Barleywine he’s had for ages.

IMG_4859 (640x427)

Barleywine is kind of like a high-alcohol beer that’s sweet and malty. It’s much more beer-y than wine-y.

IMG_4861 (640x427)

Our garden has a single flower. Reminds me of Alice In Wonderland.

IMG_4869 (640x427)

Covered in sweat from packing without AC on (I wanted to turn it on but Matt vetoed!)

IMG_4885 (640x427)

IMG_4883 (640x427)

IMG_4886 (640x427)

I never got that hungry for dinner – lunch was late and big. But luckily we had something easy and light planned.

IMG_4882 (640x427)

We used our classic recipe except we left out the corn/chickpeas and used different types of tomatoes. I never order gazpacho in public because it always has onions, but it’s awesome made from scratch!

Put everything in blender and chill.

IMG_4839 (640x427)

IMG_4843 (640x427)

IMG_4872 (640x427)

Served with homemade Great Harvest High Five Fiber croutons!

IMG_4878 (640x427)

Holy moly!

IMG_4880 (640x427)

IMG_4874 (640x427)

Not long after dinner Karen arrived to take us out for a treat!

IMG_4892 (640x427)

White chocolate mousse, coffee, tart + pistachio with all the goods

IMG_4895 (640x427)

Plus a few brownies for nibbling!

IMG_4896 (640x427)

Crumbled on top

IMG_4899 (640x427)

We were joined once again by Sarah and Diana!

It’s been a long day – I’m off to read and snooze!

I used to eat TCBY’s white chocolate mousse at LEAST once a week one summer when I lived nearby one. It is SO good!

2 teenagehealthfreak June 12, 2010 at 9:49 pm

mmm..that gazpacho sounds delish!..especially in hot weather…looks good too! and nice pics! :)

3 Hannah June 12, 2010 at 9:53 pm

Aaaaah, frozen yogurt envy strikes again! Pistachio and coffee are two of my favourite dessert flavours in the world…. at least I can live vicariously through you 😀

4 Cynthia (It All Changes) June 12, 2010 at 9:55 pm

I love to reuse boxes like that. But now that we move around so much we have totes.

And gazpacho is one thing I never really got into even when in Spain…cold soup is not my thing. But it always looks refreshing.

5 Amanda @ Vegacious June 12, 2010 at 10:01 pm

I know what you’re going through with moving! We just moved just a few weeks ago. It’s hard work, but worth it in the end (hopefully!). :)

6 Jessica @ How Sweet It Is June 12, 2010 at 10:01 pm

My husband and I were just talking about TCBY tonight. They all went out of business around here, but I loved the white chocolate mousse!

7 Diana June 12, 2010 at 10:06 pm

I got pistachio and white chocolate mousse too! Thanks again for the brownies – they were the perfect froyo topping! And hubby has already enjoyed his brownie, too! :)

8 Samantha June 12, 2010 at 10:11 pm

Random thought…You know, it surprises me you never have oats for dinner. I will forgo the rice or grain in my dinner just so I can finish up with some cinnamon oats:)

9 Kath June 13, 2010 at 9:08 am

That’s because I usually have them for breakfast. I used to eat them as a snack a lot.

10 Samantha June 13, 2010 at 9:46 am

I will eat them for breakie and dessert…and maybe an oat bran pancake too. Love!

11 Sarena (The Non-Dairy Queen) June 12, 2010 at 10:23 pm

Gazpacho…Perfect! I love it…so tasty and refreshing! Nice ending to the day too! Frozen yogurt will always have a special place in my heart. Sleep well…I am heading in that direction now!

12 Mary @ Bites and Bliss June 12, 2010 at 10:35 pm

I don’t know if I’ve ever seen a whole wheat box brownie mix! That’s awesome!! Maybe Pillbsury wil catch on :) You guys are champs for not turning the air conditioning on in this heat. There’s no way I could handle it but props to you!

13 Ginna June 12, 2010 at 10:43 pm

I too am moving to VA in a few weeks. Thankfully we are having people pack us to move the some 1500 miles from Texas! The horrible part is the unpacking and cluttered/disorganized part that will ensue!

14 claire June 12, 2010 at 10:46 pm

Wow, that gazpacho looks and sounds like the perfect dinner on such a warm night!

15 Camille June 12, 2010 at 10:50 pm

I love Kodiak Cake Brownies!
Yay for licking the bowl :)

16 [email protected]:// June 12, 2010 at 10:58 pm

What a good finish to the day, brownies and fro yo.

17 Amber K June 12, 2010 at 11:04 pm

I might actually eat at TCBY if it looked like that! They have sad looking fruits and just plain crazy-sugar candy. I miss Red Mango! FRESH fruit and nuts. Ahh…sounds great right now!

18 lynn (The Actors Diet) June 12, 2010 at 11:05 pm

wow tcby really has changed from when i was a kid!

19 Michelle @ Give Me the Almond Butter June 12, 2010 at 11:22 pm

TCBY is definitely an excellent treat for packing so much! I hope you have a good night Kath :)

20 Marilou @ Mostly Healthy June 12, 2010 at 11:26 pm

21 lauri Watson June 12, 2010 at 11:36 pm

I also ordered the Kodiak Cakes package (Brownies, Pancakes, + cookies)!! Super excited! KC really do make the BEST pancakes! Thanks for sharing!

22 A Teenage Gourmet (Sami) June 13, 2010 at 1:05 am

Haha, “make out session.” :)

23 Kaz June 13, 2010 at 2:03 am

Hah! I just watched Alice in Wonderland tonight.

Packing is hard work. Mmm, gazpacho and froyo! Sounds like the perfect dinner for a hot evening after a hard day’s work. 😀

24 Wei-Wei June 13, 2010 at 2:14 am

Brownies look awesome! I’ve heard many good things about Kodiak Cake products. I’m definitely trying that Gazpacho today! It’s so hot, we definitely need something refreshing…

Keep packing on! You’re doing brilliantly 😀

25 Freya @ Brit Chick Runs June 13, 2010 at 2:21 am

Your gazpacho looks so much thicker and nicer than ones I’ve ever seen; the ones I’ve seen were so thin and watery looking, they totally put me off :s but now I want some again!
Have a good sunday :)

26 lynn June 13, 2010 at 2:39 am

My favorite gazpacho EVER was in the cafeteria of the Prado in Madrid!! (Not sure if it really was that awesome or the fact that I was finally there!!). Will be making some tomorrow to include locally grown zucchinis, tomatoes, and such.

We’re going to be so glad to have you in Virginia! (Even if you are too far away – we’ll make a special trip.) Blessings!

27 Anna @ Newlywed, Newly Veg June 13, 2010 at 3:06 am

No AC for packing in the South in June?! Y’all are hardcore!!!!

28 Annie @ stronghealthyfit June 13, 2010 at 3:37 am

I LOVE Barleywine, but you have to be careful, it’s strong stuff like you said. Good luck moving! You guys are SO organized.

29 maxinthegym June 13, 2010 at 4:16 am

I could totally use some gazpacho right now! It is burning up over here!

30 Simply Life June 13, 2010 at 5:11 am

oooh your frozen yogurt always looks so good!

31 Marina June 13, 2010 at 5:20 am

I never had gazpacho, but it’s a great idea for a summer meal. It’s so hot that I can’t figure out what to eat :99

32 Sarah (Running to Slow Things Down) June 13, 2010 at 5:52 am

Packing is intensely tiring!!

I helped my sister move last year (she was on the third floor of an apartment,) and I felt so sore the following days. It’s cardio and strength rolled into one.

33 Kaci Higgins June 13, 2010 at 6:09 am

Congrats on getting so much packing done! You always make the prettiest, mouth-watering looking ice cream blends. 😛

34 CaSaundra June 13, 2010 at 6:59 am

I’ve always wanted to try those brownies! And you are SO SO lucky to have TCBY near you–it’s by far my favorite! :-)

35 Jil @ Peace, Love & Munchies June 13, 2010 at 7:29 am

That Kodiak brownie mix looks fantastic.

36 Kelly June 13, 2010 at 7:41 am

OMG they still have White Chocolate Mousse at TCBY?? I used to get that ALL the time and then all the TCBYs closed around here :( SO good, I am jealous!!!

37 Angie June 13, 2010 at 7:43 am

Good luck with your move! So exciting – but can be stressful I know.

Oooh – I’ll have to try your gazpacho recipe – I love gazpacho….and TCBY white chocolate mousse?? You’re taking me right back to my high school days!

38 Gabriela @ Une Vie Saine June 13, 2010 at 7:46 am

I’ve heard such amazing things about Kodiak mixes, but have yet to find them anywhere. Those brownies look scrumptious though! And White Chocolate Mousse froyo? Delicious! Hope you’re having a wonderful weekend!

39 Chelsea @ One Healthy Munchkin June 13, 2010 at 8:20 am

I’m so jealous of that fro yo! I’ve looked everywhere, but I’ve yet to find a fro yo shop in my city. :(

40 Kristine June 13, 2010 at 8:22 am

Hi Kath,
I am just wondering if you have sold your home yet! I know someone looking in the Charlotte area!

41 Kath June 13, 2010 at 9:08 am

45 Joanna June 13, 2010 at 9:10 am

46 Kel June 13, 2010 at 11:41 am

I am SO going to make some High 5 FIber croutons for my salad tonight!! Thank you for the idea!

47 Chelsea June 14, 2010 at 12:20 pm

We’ve had a VERY similar weekend only I have to keep all my decor up as the realtor is coming TODAY to take pictures for our listing. My house looked like a BOMB went off the majority of the weekend but now it looks very similar to yours + decor 😉

We’re about 90% done, how ’bout you?

48 Hollt-Claire June 14, 2010 at 8:19 pm

Hey Kath,
How does Matt make his croutons? I know you have put it on here before, but I couldn’t find it.
Thanks :)

49 Kath June 15, 2010 at 4:44 am

Toss in a bit of EVOO and bake for 10 minutes.
