Gorgeous afternoon!!

2012-05-30 16.55.41

The skies opened up into Simpsons clouds and we had a perfect afternoon for a beach walk!

2012-05-30 17.12.53

Followed by an even prettier evening!

For cocktail hour we had guac and chips. Matt made this guac with 3 avocados and about 1/3 a cup of greek yogurt – it was incredible! Love the yogurt twist. [Plus salt, southwestern seasoning, lime]

Our final night was a hybrid between home food and beach food: Whole Wheat Pasta with Zucchini, Tomatoes and Fresh Clams in a White Wine Butter-Garlic Sauce

This clam is going “homph gomph gomph” on those veggies!

I saved room for a final ice cream sundae!

And now, we unwind.

I am so happy that you got some nice weather and enjoyed your walk, I must say that those clams with veggies look incredibly tasty, honestly this is the best photo of photo I saw in a few months, I want to recreate it pretty badly, can you please post the recipe?

The White Wine Butter sauce — I can almost smell it from here…wow, I bet that dinner was amazing! And the view at sunset; the sky is almost lavender. Beautiful!

This pasta looks divine! (or better the clams-tomatoes-zucchini ‘sauce’) :-)

6 Sana May 30, 2012 at 8:48 pm

Pretty sure I have never had clams…what part do you eat?

7 KathEats May 30, 2012 at 8:58 pm

Guacamole is my favorite! It is the perfect way to start off a meal. :) Your dinner looks absolutely amazing! Do you have a recipe to share?

25 Fran@ Broken Cookies Don't Count May 31, 2012 at 7:17 am

Sounds like you’ve had a very enjoyable vacation!

26 Katie May 31, 2012 at 7:31 am

Did you dig the clams yourself? We dug almost 100 when we went to Mexico in March, the kids had a blast! Made some yummy clam chowder and a seafood & veggie pasta with a wine and butter garlic sauce. Your dinner looks delicious, as does the guac and sundae! The last day and night of vacation are always difficult, it’s hard to leave but I always look forward to getting back home.

27 Angel7 May 31, 2012 at 8:10 am

Your dinner looks wonderful! Love the pic. of the clam eating the veggies — a healthy clam :)

28 Cait's Plate May 31, 2012 at 8:37 am

HA. I love that you said “the sky opened up into Simpsons clouds” – that was a perfect visual :)

29 JennieM May 31, 2012 at 8:38 am

Love the vacation pictures…but how did you get the words (hat/t-shirt) backwards? Software function?

30 KathEats May 31, 2012 at 9:11 am

That’s just what my phone does with self photo

31 Johanna B May 31, 2012 at 8:46 am

Great combo on the guac. I love using Greek yogurt in recipes. Also, I’m trying to add more avocados to my life. So good.

32 chris May 31, 2012 at 9:10 am

That is the hubbies’ favorite meal but I won’t let him order it in public. He’s a slurped :-) Safe trip home y’all!

33 FactFinderSteph May 31, 2012 at 9:12 am

That last night meal looks ah-mazing! and the unwinding afterwards must have been the icing on the cake :)
