Karen did great!! She’s been in a jolly ole mood since we left the hospital – I think she is very relieved to have the surgery behind her.
I had to eat a Green Monster Muffin in the recovery room – I was starving and we were in no rush to leave! My gosh it was sooooo good!!
Once home I fixed Karen a snack including Oatmeal Squares and nibbled on some myself. Also "soooo gooood."
While we were out, Matt was making the most amazing soup EVER!!!!!!!!! (Yes, I’m in a dramatic mood tonight
)
It’s called Summer Herb Soup and was worthy of its own recipe page –> Summer Herb Soup
Served with Trader Joe’s cornbread mix. Nothin’ healthy about it, but damn it’s good!!
So good I had a small portion of seconds of both!!
And after dinner –> a small piece of chocolate.
I have to blog quickly because my computer must be packed!!!!

Good luck packing
That soup looks DELICIOUS! Gonna check out that recipe asap!
Glad Karen is jolly!
Hope you can relax a bit after packing!
Glad the surgery went well! I’m totally dying to try Diana’s green monster muffins – YUM!
Oatmeal Squares AREEEE sooooo good—there ain’t nothing exaggerated about that statement!
Glad Karen is doing well! Don’t you know, you justify the bad by accentuating the good in it…like there are food groups in there…like egg, milk, corn! Have a great night!
It doesn’t even matter corn bread isn’t healthy. It’s made with wholesome natural ingredients, so in my book… there’s nothing wrong!!
Looks like a perfect meal!
I’m so intrigued by the GM muffins, going to take a look at them now! Glad Karen’s surgery went well!
Mmm. That looks so good! Especially the chocolate. I’ve also been making chocolate a daily part of my dinner.

How funny, I made something very similar for dinner…including cornbread! So goood!
Yay for Karen!!!

I can’t wait to try those green monster muffins! What a great way to sneak in more spinach
Those green monster muffins don’t necessarily look good but I could see their potential. lol
Soup looks great – I’m the odd one who craves hot soup in summer!
And cornbread need not be healthy. It is perfection in any form.

Wow that soup (and cornbread!) looks amazing!
So glad to hear Karen is recovering well.
Nice one, Matt! The soup looks FAB.
Good luck with your last bits of packing before your big adventure!
Just the topping on that soup makes it probably the best soup I’ve seen in a while! Yummy! I love summer themed foods.
Fast recovery to Karen! So glad the surgery is finished.
Cornbread is healthy enough… it’s got corn, which is vegetable, surely?
Hooray! So glad you liked my Green Monster Muffins. But especially I’m glad to hear Karen is doing well. Good luck tomorrow!
OMG!!!! A green-monster muffin!!!! Oh heavens…. MUST MAKE, MUST MAKE!!!!
First off, I totally agree with Kacie–making green monster muffins just moved to the top of my to do list
Second, Trader Joe’s cornbread mix is THE BEST! And so easy to make too! Which reminds me, I think I need to go to TJ’s soon…
That soup looks great! I was thinking about veggie chili + cornbread, but this will work.
Jenn
Surely there has to be sommmething healthy about cornbread, no!? It looks darn delish!!
Yay that everything went well for Karen!!
I’m so glad Karen’s surgery went well – such a relief! My mum had to have surgery a few years back and I was SO scared for her!!
Green monster muffin?! I never knew such a think existed. I need a little something to use to take a break from my actual green monsters. I drink those at least once a day, sometimes twice!
I’m not a big soup fan, but I make an exception for chunky vegetable soups. That one looks delicious!
Oh man! Thanks for the recipe. I can’t wait to try this one!
Glad Karen did well – and that soup sounds delicious!
That cornbread looks so fresh and crumbly..x
Glad Karen’s surgery went well!
That soup looks really good! And great idea to have some cornbread on the side!
Glad Karen is out of surgery. Your food looks fab and you’ve made me remember cornbread! Loves it.
I am so glad that you’re mother-in-law is ok! Good luck with the packing and moving! Having just moved recently, I know how hard it can be to get everything together.
