Last Night In The Queen’s Kingdom

July 26, 2010

Karen did great!! She’s been in a jolly ole mood since we left the hospital – I think she is very relieved to have the surgery behind her.

I had to eat a Green Monster Muffin in the recovery room – I was starving and we were in no rush to leave! My gosh it was sooooo good!!

Once home I fixed Karen a snack including Oatmeal Squares and nibbled on some myself. Also "soooo gooood."

While we were out, Matt was making the most amazing soup EVER!!!!!!!!! (Yes, I’m in a dramatic mood tonight 😉 )

IMG_8233 (640x427)

It’s called Summer Herb Soup and was worthy of its own recipe page –> Summer Herb Soup

IMG_8234 (640x427)

Served with Trader Joe’s cornbread mix. Nothin’ healthy about it, but damn it’s good!!

IMG_8237 (640x427)

So good I had a small portion of seconds of both!!

And after dinner –> a small piece of chocolate.

I have to blog quickly because my computer must be packed!!!!

Oatmeal Squares AREEEE sooooo good—there ain’t nothing exaggerated about that statement!

7 Sarena (The Non-Dairy Queen) July 26, 2010 at 6:50 pm

Glad Karen is doing well! Don’t you know, you justify the bad by accentuating the good in it…like there are food groups in there…like egg, milk, corn! Have a great night!

8 Chelsey July 26, 2010 at 6:54 pm

It doesn’t even matter corn bread isn’t healthy. It’s made with wholesome natural ingredients, so in my book… there’s nothing wrong!! :)

9 Simply Life July 26, 2010 at 6:56 pm

25 amanda July 26, 2010 at 8:07 pm

Those green monster muffins don’t necessarily look good but I could see their potential. lol

26 Rachael July 26, 2010 at 8:26 pm

Soup looks great – I’m the odd one who craves hot soup in summer!
And cornbread need not be healthy. It is perfection in any form.

27 lynn (The Actors Diet) July 26, 2010 at 8:37 pm

yummy! i made a very similar soup to matt’s – only i used different seasonings:

28 Chelsea (Chelsea's Chew and Run Fun) July 26, 2010 at 9:13 pm

Glad to hear Karen recovered well! Also, thank you for sharing that summer herb soup recipe! It looks phenomenal.

29 Chelsea July 26, 2010 at 9:21 pm

31 Artemis @ t.a.p.e.s.t.r.y July 26, 2010 at 9:36 pm

Nice one, Matt! The soup looks FAB.
Good luck with your last bits of packing before your big adventure!

32 Diana @ frontyardfoodie July 26, 2010 at 9:38 pm

Just the topping on that soup makes it probably the best soup I’ve seen in a while! Yummy! I love summer themed foods.

33 Mom July 26, 2010 at 10:00 pm

Fast recovery to Karen! So glad the surgery is finished.

34 Hannah July 26, 2010 at 10:14 pm

Cornbread is healthy enough… it’s got corn, which is vegetable, surely? 😀

35 Diana July 26, 2010 at 10:41 pm

Hooray! So glad you liked my Green Monster Muffins. But especially I’m glad to hear Karen is doing well. Good luck tomorrow! :)

36 Kacie (Nonexistent Colors) July 26, 2010 at 11:31 pm

OMG!!!! A green-monster muffin!!!! Oh heavens…. MUST MAKE, MUST MAKE!!!!

37 [email protected] July 27, 2010 at 12:30 am

First off, I totally agree with Kacie–making green monster muffins just moved to the top of my to do list 😀

Second, Trader Joe’s cornbread mix is THE BEST! And so easy to make too! Which reminds me, I think I need to go to TJ’s soon… :)

38 Jenn (Jenn's Menu and Lifestyle Blog) July 27, 2010 at 12:34 am

That soup looks great! I was thinking about veggie chili + cornbread, but this will work. :)

39 Hillary [Nutrition Nut on the Run] July 27, 2010 at 1:07 am

Surely there has to be sommmething healthy about cornbread, no!? It looks darn delish!!

40 Jackie (Peaces of Earth) July 27, 2010 at 2:05 am

Yay that everything went well for Karen!!

41 Freya @ Brit Chick Runs July 27, 2010 at 2:16 am

I’m so glad Karen’s surgery went well – such a relief! My mum had to have surgery a few years back and I was SO scared for her!!

42 Joanna July 27, 2010 at 6:55 am

Green monster muffin?! I never knew such a think existed. I need a little something to use to take a break from my actual green monsters. I drink those at least once a day, sometimes twice!

43 Chelsea @ One Healthy Munchkin July 27, 2010 at 7:35 am

I’m not a big soup fan, but I make an exception for chunky vegetable soups. That one looks delicious!

44 Becca July 27, 2010 at 7:36 am

Oh man! Thanks for the recipe. I can’t wait to try this one!

45 Jil @ Peace, Love & Munchies July 27, 2010 at 12:33 pm

That soup looks really good! And great idea to have some cornbread on the side!

48 Stacey @ Tipping the (Kitchen!) Scales July 27, 2010 at 4:27 pm

Glad Karen is out of surgery. Your food looks fab and you’ve made me remember cornbread! Loves it.
