Having had oatmeal for breakfast everyday for quite some time, I was quite distraught when I discovered that oats are high in phytic acid (a mineral inhibitor) and that even after soaking them 12 or more hours, the level of phytic acid is only reduced a little bit.  Which means when eating oats, you can absorb iron, manganese, magnesium, etc.

I have to follow a gluten free and dairy free diet .. and might I add that I am also iron deficient. I always loved eating oats as a main source of fiber, vitamins, carbs, and iron.  But now after finding that oats are so high in the mineral inhibitor, I have had to change my breakfast .. and sadly leave my favorite food.

I switched to Amaranth!  You can make all your fantastic oat recipes with amaranth as well!  It is just as versatile and very yummy! The great thing about amaranth is that if you soak it 12 or more hours, than the phytic acid is greatly reduced and allows the body to absorb all the fabulous minerals from the amaranth, nuts, chia seeds, or whatever else you might add.

I thought I would point this out to you or other oat lovers. If you have problems absorbing iron, this would be something important to look at. : )</description>
