My favorite meal that I’ve made on my own so far has gottttt to be my baked egg cups.
I used the following ingredients & baked them in a muffin tin:
- 2 slices whole wheat bread, flattened a bit with a rolling pin
- 1 slice of cooked bacon
- 2 eggs
- Kosher salt and freshly ground pepper
- 2% milk
- Chopped fresh green onions for garnish
- Shredded low-fat cheddar
- Pam spray
I got the idea off Tastespotting and just modified it to be healthier. I love breakfast. It’s my favorite meal of the day and I love finding new creative ways to redo my boring ol’ breakfasts for blogland. Blogging has definitely broadened my horizons with the creativity & even though I go back to the basics most days, I enjoy posting new things. Trial & error… and as long as you don’t overcook these, they’re AMAZING! =]

Can you give us more details? Where do the bacon cheese and milk come in? How long do you cook them for?
What a great idea – I’ve never thought of using bread as “dough” to flatten with a rolling pin!

I <3 eggs. I’ve been meaning to make some eggs in a muffin pan (mini omelet) but I like this idea, too!
