Jennifer + Jessica: Keep It Simple Foods

I love this simple and healthy lunch.  The bright colors and zesty flavors make for an exciting meal.  I love Mediterranean flavors and this one highlights my favorites- cucumbers, olives, balsamic vinegar and feta that rev up the tastebuds!  Feel free to add your favorite olives or plump tomatoes to this lunch.

I used Israeli couscous in this dish- for the first time and I loved it! It has a much more chewy texture than your standard couscous and works perfectly in this cold salad dish as regular couscous, for me, tends to clump up when served cold.

For this salad, I used 1 cup of garbanzo beans, feta, cucumber, red bell pepper, red onion, chopped olives, 1 cup of cooked israeli couscous, about 1/4 teaspoon of dried oregano, generous drizzle of good balsamic vinegar, generous drizzle of EVOO, and a sprinkle of course salt.  I placed the couscous on the bottom and piled on the veggies, garbanzo beans, and feta!  Quick and easy and great to take to work!

That salad looks delicious! What a great Mediterranean dish. I love how flavorful it looks, but still healthy :D

This looks a lot like my lunches from the past 2 weeks. MMM! The only change is that I add lots more fresh tomatoes, and use Manchego in place of Feta. Delish!

So pretty! I love Mediterranean dishes. I’m definitely going to try Israeli couscous sometime soon. I think I’d like it more than the regular kind.

Nope, just 1 cup of the garbanzo beans. The rest of the proportions are up to you!
