Hello!!!!!!!!
Having a great time so far. I think I’m going to like clinical nutrition a lot
Have I mentioned I love filling out forms!? And I love my white coat and all its pockets
I feel like I’m in the movies walking around the hospital. Just getting started though so I don’t want to speak too soon!
Stopping for a quick bite to eat with the RDs. Except I won’t be dining out in the green as I was when I did this photo shoot packing my lunch yesterday. I’m in the cafeteria.
A smoked salmon + Laughing Cow + caper quesadilla –
Love the chewiness of these Food For Life little tortillas I picked up at EarthFare. They’re pretty small so I did a double layer instead of a foldover kind. I love smoked salmon so much!!
[That would be Matt's big thumb - not mine!]
Plus a beauty of a salad.
- Red leaf lettuce
- Celery
- Carrot
- Bell pepper
- Pecans
And a homemade mix of balsamic + Simply Orange Mango + dijon mustard in a little jar.
Gourmet on the go.
Hope Monday is a Funday wherever you are!

that looks like such a fresh lunch in the sunshine!! yum!
i spent about 10 years in lab coats…they get a little old, but enjoy the novelty!
I have a question–I have seen the Walden Farms no calorie, no sugar, no nothin’ condiments avaliable at my health foods store. The have dressing, maple syrup, even peanut butter and ketchup that boasts no cals, sugar, gluten, etc. They only thing they really have is a minimal amount of sodium. Have you ever seen these products? What do you think?
Im not sure about Kath, but I do know that a little fat is good for you! Your body processes all the nutrients better with fat.
Have you ever tried the Peanut butter? I bet its pretty yucky, and doesnt taste like anything! LOL
I haven’t tried the peanut butter, but I will say that I was very intrigued! I have tried the maple syrup–which is amazing, and the dijon vinaigrette–which is moderate. I much prefer lemon and olive oil, but at work, a bottle is more convenient. I know the maple syrup has sucralose and the dressings are primarily composed of vinegars and spices.
Sounds just like a bunch of artificial sweeteners to me
Sounds kinda weird, but condiments (like mustard + hot sauce) often don’t have much to them other than spices.
Wow Kath! As always, looks wonderful! When are ya’ll planning to head to c-ville officially? I cannot wait to visit great harvest!
August!
lovin that salad! so colorful! and what a CLEVER homemade dressing! i’ll have to try that- thanks
I think that has to be the best lunch idea ever. Mine is so boring now!
Sounds like you’re having a blast! I remember from my shadowing experience that there are indeed LOTS of forms to fill out as an RD. Glad you’re enjoying yourself:)
Yay – glad you are loving it! That salmon quesadilla looks fab.
That salad looks so delicious Kath!
Glad you’re having a good time, that’s all that matters
that looks delicious! i <3 smoked salmon! it always reminds me of tropical hotel breakfast buffets for some reason…
Smoked salmon is one of my favorite foods! That looks sooo good
I’ve never had Smoked Salmon…the “smoked” part scares me because I don’t like things like “smoked” turkey breast, etc. Think I should still try it?
Doesn’t Matt know he should get a MANicure for your photo shoots?
I love those Ezekiel wraps. They are awesome toasted too!
I love filling out forms too! I thought that was just MY nerdy thing
Also, I want your lunch.
Oh yum! I just ate an entire (200g) jar of Italian gianduja spread (it was just hazelnuts, cocoa powder, sugar, so not that bad fpr me… right?
), so am feeling that the saltiness and healthfulness of smoked salmon would work a treat right now!
And never fear saying you love something – positive thinking all the way, and maybe clinical will just get better!
That lunch looks so colorful and delicious. I always forget about smoked salmon, but definitely need to add it into my diet Also, canned works well too for sandwiches!
looks delicious. glad to hear you are enjoying rotation!
So glad to hear that everything is off to a good start! LOVE the smoked salmon!!!
I love filling out forms too! So few people like school that it’s refreshing to hear someone genuinely enjoy it. How do you keep a quesadilla like that from getting soggy when you make it the night before?
Dunno? I haven’t had that problem with wraps.
the dressing sounds killer to me…mango yumminess at it’s finest! and pecans in the salad?! girl after my own heart
i’m so glad you’re liking clinical so far!
I’m glad that you’re having fun!
I am jealous at your lunch, as always:)
Mmmm, yes– I LOVE the Ezekial wraps for their chew!! So hearty!
Aww how sweet that Matt knows how to take your food blogger pictures for you
He didn’t take them! I did. He just helped me hold it up.
Wow that quesadilla looks awesome!
That quesadilla looks too good!
Mmm that quesadilla looks amazing!!! I’ve just recently discovered how much I like smoked salmon, it’s delicious!
So glad you are enjoying your day!
Yum, fun lunch! Glad you are having a great day!
Cool!!! Do you think you want to work in a clinical position? Your lunch is such an R.D.’s lunch by the way.
I think I might have if my life hadn’t taken other turns towards bakery + blogging.
Mmm- smoked salmon and laughing cow! Yummmmmmmy:)
Your lunch looks like summer
As much as I love salmon, I’ve never had smoked salmon! Am I missing out?
Definitely.
smoked salmon quesadillas, what a great idea! I can’t wait to try it =]
‘in the movies’ ohh you’re so cute
love that you have such enthusiasm for your rotation!
i hate wearing my white coat anymore — i almost never do (it scares the kids plus then . . . no one can see my outfit =D
filling out forms is another secret pleasure of mine that i have gotten to put to good use during residency
i’m glad someone else shares my passion . . .
ps: we were in hillsborough this past weekend!!! thought of you . . .
Yum! Smoked Salmon + Laughing Cow = Delicious! Try it on a whole wheat english muffin too
your salad looks delicious!!! I’m going to have to try the Simply Orange mango that everyone is raving about
I love salmon, but I just don’t care for smoked salmon. Weird texture and too salty to me.
Salad is so pretty.
Jenn
WOW! That’s a mama of a salad! Glad to hear you are liking Clinical.
I love filling out forms too! That was my go-to childhood game, I would take blank forms from post offices, banks, you name it and just fill them out, haha. Glad to know I’m not alone in that…
What’s your position on smoked salmon? Do you only buy wild or is farmed Atlantic ok in your opinion?
I did that too – with the farms
Farmed salmon is NEVER ok!! Always wild Alaskan. Even smoked!
Well, I take that back. Sometimes I do get farmed salmon in restaurants. But I’ve tried to be more mindful of that too these days.
looks great! I’ve been thinking fo trying smoked salmon but wasn’t sure how to do it. Now I know!
I am so glad you are enjoying your first day of clinical. I would feel like I was in the movies too
Your lunch looks absolutely delicious and filling. Hope the rest of your day goes equally as well!
I’ve never seen a tortilla that color before, what are they made of? I love smoked salmon too! Can’t ever resist it’s deliciousness.
Love those Zeke tortillas! It’s great when you can find the big ones; I also use them as quesadillas when they’re small.
the salmon quesadilla looks great! it sounds better than the leftovers I’m having right now.
oooh i’ve never combined LC + capers! but they are two of my favorite things–so i’m on it!
Smoked salmon & capers = childhood favorite combination of mine
Happy belated Easter, dear Kath!
GORGEOUS lunch! Don’t even get me started on the fabulousness that is smoked salmon…it’s one of my all time favourite foods
I hope your day continued to be good!
That’s great you like clinical so much:D Hope it continues that way!
Hey! Well today I walked up to 23rd street to buy the Coconut Chai drink you wrote about… and it is yummy. A bit expensive, but worth it.
I am happy that you like clinical! It is great to love what you do or study!
Lab coats are the best.
I won’t complain though, I love my scrubs!!
Cute lil dressing jar. I need one of those that size!
I love your blog and I love the looks of that quesadilla! I’ll be making that for sure!
Believe me.. you’ll be filling out tons of forms! Every hospital is very different in their charting methods, but I felt during some of my clinical rotations last year that more time was spent at the computer charting, and less time with patients. It frustrated me. But you’ll learn a ton! Always keep a pocket notepad in the lab coat, I was always finding things that my preceptors did/said that I wanted to write down. Best of luck!!
Such a creative ‘dilla!
Those wraps looks so delicious!
that looks like the best lunch!!!
Hey,
monday was most definitely not a funday but it was ok. I’m a nursing student here in germany and the first time I was on a ward I felt just as weird sometimes…but then I got back to work and had so much stress that I frogot about that quickly…
Now here I am 3 years later and close to the end of my nursing school at the ER over the Easter holidays. Gosh, am i glad that today was the last easter holiday day (yes, we get 4 days off in Germany –> Friday through Monday) but the next two days I’m off work.
So good luck with your clinicals and a lot of fun..keep us updated on how it’s going!
Stef
oooh that lunch DOES look lovely
Oh my gosh… I have had two salads with that dressing sense the last post you used it in and I am in LOVE!!!! (I don’t have simply orange with mango juice so I just squeeze some juice from an orange)
Your internship posts make me so excited for my own (less than 2 years away, finally!) Can’t wait to hear more. I also wanted to let you know that after the great coffee comments on one of your posts last week, I had a grande nonfat misto this morning which was excellent, and much less expensive than a latte. Great way to start a week-
I love the use of the smoked salmon. So good for you with that protein and omega 3′s.
I love smoked salmon on bagels, but never thought of the idea of quesadilla-style. Will be trying soon!
Your salad is so pretty! I love how you pack your dressing in little jars. So clever.
This inspired me to pick up smoked salmon today! I am definitely excited for lunch tomorrow already!
Hi Kath!
Clinical anything requires a ton of forms and note taking so I am sure you are in heaven!
I think it is sooooo funny that you love filling out FORMS!! haha
Your lunch looks fantastic! I may have to replication, with the exception of a vegetarian filling instead of the salmon:).
yum, smoked salmon quesadilla sounds good!
