I’m Late, I’m Late!

August 27, 2008

No time to type today, somehow the time got away from me. Probably because I decided to make an oatmeal pancake!

We don’t have any egg whites or instant oats. I sort of gave up keeping them on hand since I mostly just used them for pancakes anyway, so I exchanged them for a whole egg and rolled oats. The pancake was quite different with these changes – much wetter.  I’m not sure if I liked it that way….

  • 1/3 cup oats
  • 1 whole egg
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1 mashed banana (in batter and on top)
  • PB on top

Plus a glass of milk – I was thirsty!

But 2 minutes after sitting down I moved to the computer realizing my time crunch to blog. Bummer because I definitely didn’t focus on eating and it was gone before I knew it!

Today is going to be REALLY busy. I might not get to questions until tomorrow evening.

Just wanted to say I got the new SHAPE last night, and was so surprised by a certain reader success story. Ahem…

Sorry for the rushing! See you when you can!

hey kath are you flooded? i heard it was terrible in Charlotte.

as a side note, i think that unless you’re a registered RD or MD then advice on eating disorders should not be given (just going off the comment from last night about bingeing.)
kath has already made this disclaimer

Aw the video of your hubby is just way too cute!
Your morning sounds as rushed as mine. There must be something in the air today making time go quicker than we intended:)

The title of your post reminded me of that famous song from “Alice in Wonderland,” that the white rabbit sings 😉

11 Kate August 27, 2008 at 9:15 am

Wait, is Kath in the new Shape? That would be so cool!

Hope you made it in time! I hope you enjoy your classes!

p.s. If you have the time next time you make an oatmeal pancake with rolled oats, you could grind the oats in the blender/food processor to improve the texture!

Hope your day goes well!

13 Heather August 27, 2008 at 9:19 am

Good luck today, Kath! I always end up eating and blogging- probably not the best idea.

Off to buy the new Shape… that’s awesome!

14 Caroline August 27, 2008 at 9:30 am

Kath, can you post a URL or PDF for the Shape article?

I have a recipe for a great pancake…it is equal parts of oats (not instant), egg beaters, and low fat cottage cheese. I blend that up wiht a stick blender and it is a thick batter. I also throw in some cinnamon and nutmeg and just a pinch of salt and splash of vanilla. Cook it up in a non stick pan and then put on some PB and sugar free jam…yum. I think I will make that this morning!

Good Luck today!

17 Tina August 27, 2008 at 10:39 am

Ooooh, I haven’t had an oatmeal pancake in so long. Thanks for the reminder!

18 Tracy August 27, 2008 at 10:41 am

I just paged through my new issue of SHAPE and didn’t find Kath. Where is the article?

19 Sara August 27, 2008 at 10:52 am

I love your oatmeal pancake recipe! But I didn’t realize that I should be using instant oats in it…I only ever buy rolled oats, so that’s what I’ve always used! Oh well, still tastes delicious to me. :)

Aww, I see no Kath either. I have the September issue, but maybe they’re already onto October?

23 Biz August 27, 2008 at 12:26 pm

I went to Quinn’s link and it looks like its the Shape Magazine with Brooke Sheilds on it, not sure which month though! Hope that helps!

24 Kath August 27, 2008 at 12:39 pm

Re: Shape,
I hadn’t seen it yet – until just now, thanks to Quinn’s photo on her site!! The photo of me isn’t that flattering 😳 I had no idea which one they’d choose and took about 50 of them – running, push-ups and more. But it’s so weird to see me in that format. Hopefully my issue comes today and I will scan it for you all.

25 JENNA August 27, 2008 at 12:49 pm

thats cool kath you are in shape! congrats! did you know they were doing an article on you??

26 Jo August 27, 2008 at 12:51 pm

Yes Kath, you must scan the article as I can’t get Shape in the UK!!! Unless can i see it online?

27 Shalane August 27, 2008 at 12:52 pm

Wow! An article in Shape?! Fabulous!

28 Angie August 27, 2008 at 12:54 pm

Hi Kath,
It’s funny you had this pancake today because I just made one this morning using the recipe and tips given to me by Jenna over at Eat, Live, Run blog. It was so tasty and I had a glass of milk too.
