I Swam.

May 27, 2010

Just when I thought life was calming down – new opportunities land on my plate that I can’t turn down. I just need everything to wait until July 1 please! Ahhhh!

After work, I swam.

I went straight to the gym to save time. First I did some ellipticallying ( <– that’s just how it came out) for about 15 minutes and then hit the pool. I had to get in there fast before swim team could take over! I did 52 laps (lengths) again – and it took me about 28 minutes with a few goggle and water stops. I swam hard and fast to maximize my time in there. Then showered and raced home.

Dinner tonight was low key – Thursday Egg Night is becoming a tradition!

A sunny-side-up fried egg over two small slices of Great Harvest Flax Oat Bran  (sooo doughy!)

And a huge pile of collard greens that Matt cooked in 2 slices of bacon and melted with smoked bleu cheese. Fantastico!!

Coconut water + water with ice + lime to drink!

Vacation in 24 hours. Need to go re-pack for rain :(

YaAAAY vacation!! It looks like we have the same swim speed…wish we could play together =( i.love.eggs. mmmm I’m currently cooking local organic wheat berries, YUM!

Oh yum, I miss collard greens! Can’t get them in Australia, and it’s almost impossible to find kale. But I can get blue cheese and eggs, so I’m halfway there :P

Today was a great day to be in the pool. It was HOT and HUMID up here in DC. I got completely soaked without even getting in the water. ;)

Hey Kath! I have my bachelors degree in dietetics but I didn’t get an internship. I was wondering if you could give me some tips for getting a internship (unless your school has a coordinated program)? I have good grades and quite a bit of nutrition experience and don’t know what else I can do to stand out as an applicant next year. Help please!

Amanda,
My school had an internship so I only applied there. That said, the strongest candidates have diet tech experience (I didn’t, but I had good grades and prof. experience :) ) I would suggest getting a part time job at a hospital as a diet tech if you can. Or perhaps just working with an RD in any area of practice prior to applying.

I love the color of that yolk. So pretty! My eggs never have that kind of coloring to them. I think it’s because I never eat them when they’re freshest. Whoops….

Eggs are one of my favorite dinner staples. I never crave them for breakfast (unless it’s the weekend for some reason), but I could have them everyday for dinner. They are just so fast and so easy…and above all, delicious!

On the bright side, at least it will be semi-warm in Asheville! We’re actually leaving for a Nashville/Asheville vacation this weekend, and are looking forward to the weather since it’s been unusually rainy and COLD in Northern California this May…50s/60s instead of 80s/90s. Brrr…I think I’ll have to move to the South if it keeps up.

I love how you can take such a simple dinner and make it look gourmet. Congrats on the new opprotunities! Even though it may seem all overwhelming right now, I’m sure it’ll be well worth it once things calm down.

Whew!! That’s a lot of swimming I’m training for a sprint triathlon and have been doing 8 laps (16 length) at a time. :) Can’t imagine doing as many as you!!

Yeah, sometimes. I will often note if I do have a snack, or if I have a lighter dinner I wait to post if I think I’ll be hungry. Like last night’s watermelon!

If you guys are looking for good coconut water without having to go through the hassle of finding a coconut and cutting it open, I really recommend picking up some Vita Coco, it’s absolutely delicious.
