Just when I thought life was calming down – new opportunities land on my plate that I can’t turn down. I just need everything to wait until July 1 please! Ahhhh!
After work, I swam.
I went straight to the gym to save time. First I did some ellipticallying ( <– that’s just how it came out) for about 15 minutes and then hit the pool. I had to get in there fast before swim team could take over! I did 52 laps (lengths) again – and it took me about 28 minutes with a few goggle and water stops. I swam hard and fast to maximize my time in there. Then showered and raced home.
Dinner tonight was low key – Thursday Egg Night is becoming a tradition!
A sunny-side-up fried egg over two small slices of Great Harvest Flax Oat Bran (sooo doughy!)
And a huge pile of collard greens that Matt cooked in 2 slices of bacon and melted with smoked bleu cheese. Fantastico!!
Coconut water + water with ice + lime to drink!
Vacation in 24 hours. Need to go re-pack for rain

YaAAAY vacation!! It looks like we have the same swim speed…wish we could play together =( i.love.eggs. mmmm I’m currently cooking local organic wheat berries, YUM!
Bacon makes everything better. I bet even Jessica would eat those greens
What a tasty looking dinner!!!!
I really wanna try coconut water. It looks so yummy, and nutritious!!
Oh yum, I miss collard greens! Can’t get them in Australia, and it’s almost impossible to find kale. But I can get blue cheese and eggs, so I’m halfway there
Can’t wait to hear about the opportunity!
Awesome swim! And hey, Thursday egg night sounds like an alright tradition by me!
Today was a great day to be in the pool. It was HOT and HUMID up here in DC. I got completely soaked without even getting in the water.
I love a simple dinner!
Hey Kath! I have my bachelors degree in dietetics but I didn’t get an internship. I was wondering if you could give me some tips for getting a internship (unless your school has a coordinated program)? I have good grades and quite a bit of nutrition experience and don’t know what else I can do to stand out as an applicant next year. Help please!
Thank you,
Amanda
Amanda,
) I would suggest getting a part time job at a hospital as a diet tech if you can. Or perhaps just working with an RD in any area of practice prior to applying.
My school had an internship so I only applied there. That said, the strongest candidates have diet tech experience (I didn’t, but I had good grades and prof. experience
Good luck!
K
Wow your egg looks delicious! I made eggs for dinner tonight, too…but in frittata form. I think eggs might become a staple for dinner for me
Any and all exercises make everything seem THAT much less stressful.
And seriously, that egg looks almost fake it’s so perfect!
I love the color of that yolk. So pretty! My eggs never have that kind of coloring to them. I think it’s because I never eat them when they’re freshest. Whoops….
Eggs are one of my favorite dinner staples. I never crave them for breakfast (unless it’s the weekend for some reason), but I could have them everyday for dinner. They are just so fast and so easy…and above all, delicious!
I love eggs for dinner! Your sunny side up looks perfect!
Enjoy vacation
No fair!!! You have to tell us about the opportunity!!
All your GH breads sound and look so amazing, I need to get some soon! It sounds like a great swim too!
I LOVE doughy bread!!
Sorry it’s supposed to rain during your vacation!
Coconut water is so refreshing! I love the idea of adding lime to it
Enjoy the vacation for a bit of rest!
I’m super excited for July 1st as well. I can’t wait to read about your new life!
Thanks for the idea on how to cook/eat collard greens…also been scared of them. But looks yummy!
Deja vu!! I had a fried egg and kale tonight for dinny. Am I right that you swam 52 laps because it’s 26×2??
Obviously
I really do need to learn how to cook collard greens… I’m craving them like mad lately! And I hope everything works out for you so you can get some time to relax soon!
On the bright side, at least it will be semi-warm in Asheville! We’re actually leaving for a Nashville/Asheville vacation this weekend, and are looking forward to the weather since it’s been unusually rainy and COLD in Northern California this May…50s/60s instead of 80s/90s. Brrr…I think I’ll have to move to the South if it keeps up.
Yay for vacation though!! even if it might be a rainy one. That bread looks so awesome. As does the egg…and the collards…okay EVERYTHING! haha
Dinner looks great. Have fun on vacation!
What a great dinner! Hope you have a great vacay

I love how you can take such a simple dinner and make it look gourmet. Congrats on the new opprotunities! Even though it may seem all overwhelming right now, I’m sure it’ll be well worth it once things calm down.
Have so much fun on your trip!!! and you have some serious skills cooking an egg like that! Mine always break haha
Whew!! That’s a lot of swimming I’m training for a sprint triathlon and have been doing 8 laps (16 length) at a time.
Can’t imagine doing as many as you!!
I adore breakfast for dinner!
I have to say eggs give me the creeps. I’ll cook or bake with them, but don’t eat them as “eggs”. If that makes sense!!
eggs. perfect any time of day!
Eggs are a pretty great meal, right?! I am sure you will have a great time this weekend regardless of the rain! Congratulations on all the good stuff! Send some of that karma my way…please!
omg that dinner looks sooo good! Eggs are always a great meal at any time of the day!
Dontcha hate that…just when you settle into something and are less stressed, something else pops up. I can’t wait to hear about your new ‘opportunity’ though.

Do you ever get hungry later at night?
Yeah, sometimes. I will often note if I do have a snack, or if I have a lighter dinner I wait to post if I think I’ll be hungry. Like last night’s watermelon!
Ah! I want to hear about these new opportunities!
If you guys are looking for good coconut water without having to go through the hassle of finding a coconut and cutting it open, I really recommend picking up some Vita Coco, it’s absolutely delicious.
