Yee-haw! Rebecca and I finished our video project on caffeine. It’s cute – nothing fancy! But we worked hard into the evening and hit quite a snag when the videos uploaded as .MOV files and Windows Movie Maker wouldn’t accept them! We ended up using the software that came with my Kodak camera, but it didn’t let us do much. You’ll be able to see the video the week that it is due!
We were so frustrated with technology that Matt poured us a little of his homemade pumpkin ale -
It was pretty good, but a tad sour and lacked carbonation. So we then split a Cottonwood Pumpkin Ale 3 ways:
Ahhhhhhhhhhhh.
My hero of a husband cooked dinner tonight while I worked again.
On the menu:
Spaghetti Squash Spaghetti
First he roasted a spaghetti squash (click here for the video!!!) and then sauteed some zucchini and green peppers
And he made a homemade sauce with:
- A can of crushed tomatoes (28 oz)
- A can of diced tomatoes (14 oz)
- A can of tomato paste (6 oz)
Plus
- Garlic (3 cloves)
- Lots of sherry (~1.5 oz?)
- Herbs like oregano
- Red pepper flakes to taste
He simmered it down until it was nice and thick. Then added more sherry. We love our sherried tomato sauces!
Hello hungry!
I had some Black Box Wine with dinner – tried out the Sauv Blanc. I so wish this had been a red wine instead of white
It’s past the season for white. It was just OK. Y’all know I like boxed wine, so I don’t have anything again the box, but the wine itself just wasn’t strong enough for me. I prefer chardonnays and of course, reds.
Love my new glasses Larbs + Matt!
Ambiance:
After dinner we watched The Office and 30 Rock. Love those shows!! Turns out our DVR missed an Office!!!! When we were in Montana. I assumed that there hadn’t been an episode that week, but we saw the ending on the beginning of the 30 Rock! Gotta check HuLu.
Tomorrow we’re celebrating my birthday – I’m turning 26 again
– with our friends in a mid-day brewery outing! Better get my beauty rest. Too bad it’s going to rain. Bummer.
Have a wonderful perfect fall weekend!

WEIRD BECAUSE MY DVR DIDN’T PICK UP THAT EPISODE EITHER!!!
Wonder if it was some sort of glitch?
That a go Matt! nice dinner all around.
zest!
Great dinner by the chef!
hey kath! for those of us that aren’t so experienced in the kitchen like you guys- can you add directions to the ingredients list of the sauce matt made for dinner?
Your dinner looks delicious
I have never had spaghetti squash before
I love pasta sauce, though, and anything that acts as a vehicle for a good pasta sauce is wonderful
aww it’s so sweet you’ve got a husband who cooks!
My bday is in 2 wks, and I will also be turning 26 again. How odd.
That pasta sauce looks really good… and super easy to make!
Happy early Birthday!!! Hope you have a great day tomorrow
Gosh that dinner looks AMAZING!
Did you hear Hulu is going to start charging a fee for their videos?? It is the saddest thing ever.
I watch all of my shows on their because I don’t have a TV at school… such a sad day for us Hulu users.
Here’s a link to the article: http://gizmodo.com/5387909/hulus-glorious-free-days-are-officially-numbered
are you reading my mind, or am i reading yours? that’s what i’m having for dinner tonight too (minus the zucchini) –i actually was inspired to try it for the first time this season from your blog a while back…(and thanks for the cooking instructions post — i was pretty sure i knew what i was doing but it was helpful to confirm with someone else!)
Looks like a yummy dinner. I heart spaghetti squash. Happy Birthday Eve!
Happy early birthday!! It’s almost my big 2-7 … er…. 26 x 2…. as well!
Mine missed it, too… it’s a conspiracy
Stacy,
I didn’t give more specific instructions because it’s really just a “put everything in the pot and simmer” recipe
The only thing you might want to do first is brown the garlic in some oil, then dump on the maters, dump in the seasonings and simmer on low until it thickens up.
Thanks for asking!
K
Happy Birthday Weekend!! It’s mine as well-the big 32 for me. I am celebrating by running a 10km race dressed up as a bat
Hope you have fun this weekend as well!!!
Take Care
spaghetti squash is my favorite. will be having it for dinner tomorrow, and i’m already pumped.
i think you’re right about it being past “sauv blanc” season – that is truly a hot weather wine for moi! chard however, is an “any weather” wine for me – gahhhhh love it
yummy din, husband to the rescue again!
Your hubby is awesome – I need to show my boy what he can do so he can get some inspiration! Congrats on finishing the video, I love crossing things off of my list – especially assignments.
Glad it all got done and that you had a great dinner too
Homemade pumpkin beer AND din? What a kind husband! Have a great Friday night!
The Office and 30 Rock are part of our regular Friday night happenings around here, too. Recently we’ve started watching Community and Parks and Recreation–they are also a lot of fun! I recommend them if you like 30 Rock/The Office.
I think I’ll have to try the spaghetti squash recipe again. I used to eat it a lot and I think I overdosed. Plus, it’s really good in its own right, but it is really not the same (other than the shape) as actual pasta. I think I have to think of it as its own good thing.
Enjoy your weekend!
Congrats on finishing the project! Can’t wait to see it!
Aww, how sweet of Matt! Men can be so helpful when they make an effort.
sweet matt! haha.. hopefully we get to see the vid soon!
wow! matt is quit the chef, looks great!
have a great birthday tomorrow
jenna
Gotta love husbands who step up to the plate when you are too busy. Mine is the best about that!
amazing looking dinner! yay matt
I’ve seen every episode of The Office (obviously) and last night’s was the FUNNIEST EPISODE ever. You have to find it on Hulu. Or come visit us…I’ve still got it on the DVR and I’ve also got half a loaf of GH apple crunch bread in the kitchen. See you for French toast in the morning?
What a nice, simple dinner! Looks great!
Happy 26th Birthday Version 2.0!
Aw, I hope you have an awesome birthday!
I can see what you mean about it being past white wine season, however, I’m completely enamored by the Sauvignon Blanc’s from New Zealand. They are some of the best white wines I’ve ever had and definitely converted me to a white wine drinker (I’ve always preferred red).
I haven’t tried the Black Box brand yet but maybe I’ll give it a try to see how it compares.
The Highfield Estate Sauvignon Blanc is my current favourite white wine, in case you feel like trying it sometime.
I agree with Mama Pea – Thursdays episode of the office was the funniest ever!!! I laughed out loud the entire time. You have to hulu it!! I highly reccomend parks and recreation too, it’s quite funny.
Hoooray for turning 26 again. I’m hope today is wonderful for you in spite of the rain!!
spaghetti sauce looks delicious! might have to give that a go today.
were you using a sony camera to do your filming? every time i take videos on my camera, i have to go through this file conversion process before i can work on my editing in imovie. it’s annoying. wish i’d known that before i bought my camera
What a guy! I have to teach my husband to cook. He’s very nervous in the kitchen! I love spaghetti squash and had an almost identical meal a couple night ago. Mmmm!
Thanks for that great video on how to cook spaghetti squash! I’m hosting a cooking workshop next month on fall cooking and one of the ingredients I’m going to use is spaghetti squash, hopefully everyone will like it!
Have a great Birthday weekend! I keep reading about all these delightful spaghetti squash recipes, it’s time to give it a try. That dish looked delish. Glad you put your new stash of wine to good use!
Oh your husband is always so sweet. This week I’m full up trying to get some studying done and my bf is working major overtime . . . usually it balances better so one of us can take care of the other. This week has been insane.
That’s so nice of your husband! He seems like a great cook. I can’t wait til I get my first spaghetti squash of the season!
Have a great birthday weekend! Once fall hits I usually want to drink red wines over white
HBD Amy!!
Mama Pea,
I AGREE!! It’s all about Dwight
haya,
It was a Kodak. Which converter did you use? We couldn’t find a free one that didn’t put a watermark.
Kath
i think i had the opposite problem. camera filmed in .mpeg and i wanted .mov (i use imovie on my mac for editing). the software i found, which was free was called mpeg streamclip but i guess that probably doesn’t help you. i wish for universally compatible file types!
i love spaghetti squash. next time im going to try it with zuchinni and peppers for a kick. looks delicious!
whew – thank goodness for hulu!
That husband of yours is definitely a great catch! My husband will cook, but could never dream of making something out of (gasp!) VEGETABLES!
I had the Black Box Sauv Blanc also and didn’t care for it. Too light or something. Anyway, we ended up tossing it out after it expired from sitting so long.
I am also a huge fan of boxed wine and I’m so grateful that finally some very good wines are becoming available in a box. I don’t drink often, so buying bottles was always out of the question because I would end up wasting them.
Hope you are having a totally fabulous bday weekend!
PLEASE let me know if you figure out how to edit .mov files!! I recently bought a camera and am so annoyed that i can’t used Movie Maker anymore, I loved that software! =(
