Hour Of Rest

April 18, 2009

This was one of the best hours of the semester!! Reading in our Mexican hammock without a care in the world –

We realized it was 7pm and we hadn’t even thought about dinner yet! (Well, that’s not true – I had a few ideas in mind, but we hadn’t started to think about preparing dinner!) I used up the rest of the veggies in our fridge to make this Asian peanut dish

We roasted brussels, a carrot, a tiny bit of zucchini + pepper, tempeh and kale on a baking sheet. The veggies went in first (tossed in olive oil at 425* for 20 minutes), then we added the tempeh for about 5 more, then for the last 5 we added the kale to slightly wilt.

Tossed with whole wheat spaghetti, EarthFare Peanut Satay sauce, coconut and salted chopped peanuts –

Oh, and sriratcha!

Our entertainment this evening was The Kite Runner compliments of Netflix. We both read the book a few years ago, and both enjoyed the movie. Hassan was so cute!!

I was still a little hungry (thirsty? I’m feeling the effects of my long workouts in the sun) after dinner and was craving fruit because I missed out on some at lunch/snack. I chopped up this delightful ripe little pear and nuked it with some vanilla soy milk and topped that with a few tbsp of AgavePlus granola.

Now I’ve moved on to water :)

My mom sent me a little spring shopping $$ (yahoo!!) in this cute card! She said the frog “wanted to be on the blog.” Thanks mom!

I’m sleepy and am off to bed. Hope the rain holds off long enough tomorrow to get in a little more time outside!

The first picture is sooo cute. :) Aww.. (And peanut satay sauce sounds like it’d be delicious on top of anything.)

I think you stayed so long in the hammock because you were afraid to get out! Tandem hammocking is DANGEROUS!

Awh, horray for resting. And love the card!

9 Run Sarah April 18, 2009 at 10:13 pm

Love the hammock photo! Great dinner idea too, I usually stir fry my veg but roasting looks like a wonderful alternative.

That is the sweetest picture in the hammock… should TOTALLY be framed! 😀

Glad to hear you enjoyed your day! What a great dinner too. So healthy and yummy!

Love the snack! I’ve gotta try the whole nuking fruits sometime… I bet some cinnamon would go PERFECT on that too!

The Kite Runner was such an amazing film. It was shockingly raw – I loved it. I hope you enjoyed it, too!

I have just got the book Kite runner from the library, after hearing good things about it from my cousin.

Dinner looks awesome.

oooh, I want a hammock so bad! All I asked for for my birthday was a hammock and a microplane, and I only got the microplane (cheap hubby!!)

Dinner looks delicious, as always. What kind of flowers are those that you always have on the table? They’re so fun!

28 Kath April 19, 2009 at 10:15 am

LK- Healthy Delcious,
They are Spider Mums. My favorite flower!

Every time I look at your site I’m amazed at how good the food looks in your pictures. The pictures are really a big part of your site and I think they would encourage anyone that doesn’t already eat healthy meals to give it a try!

Keep up the good work,

30 MaryBe April 19, 2009 at 12:11 pm

I am still afraid to try kale (it’s so umm ruff-ly!) but I think I’m going to have to cave soon! You make it look so good! Better than Fresh Flies for a nickel
