My stomach felt kind of queasy this morning! Maybe I am getting used to US water again!? Or maybe I have turned against oatmeal….But I recovered after noon and we went out running. It’s a gorgeous day here – sunny blue skies and warm. My run was a little slow, but it sure felt good to get out there and go again. I asked Matt all about his week – what he ate, his exercise schedule and social activities
Then we spent the rest of the run discussing methods to save up for a trip to London + Paris this Christmas! We think we can make it work, but still aren’t sure if we’re ready to commit. At least we’ll start saving! We also want to go to Boston this summer to visit Larbs + Matt.
We got back from our run at 2:30! Late lunch alert. We quickly showered and decided on smashed grilled cheeses and big salads.
We used this Kerrygold cheese which was sent in BOGO free coupon form from FoodBuzz’s Tastemaker Program. It was delish. Very tangy + creamy.
The salad ingredients.

On Rice Bread with some pimentos –
The salad:
- Spinach tossed in balsamic
- Cuc
- Carrot
- Celery
- Broccoli (nuked until tender)
- Sprouts
- Strawberries
- Melon (the same melon I left last week!! It was still good and ripe)
- Capers
- Avocado
- Walnuts
- Cottage Cheese
Outdoor dining
Matt has a surprise dinner he has planned, and Karen is joining us. Until then I”ll be catching up on school work – the list is growing

it took my husband and about 2 weeks to feel “normal” after our trip to Honduras a few years ago.

I love Kerrygold Cheese! They always hand out sample of Dubliner at the Race for the Cure in Chicago and we always manage to grab multiple handfuls.
Jealous of your outdoor dining. It is sunny here, but not quite warm enough to enjoy the balcony chairs.

Great videos. Glad to hear you have gotten over the jet lag. My stomach is out of sycn for about a day after these long trips.
London and Paris 2 of my favorite walking cities.. Let me know if you need info on Paris. We go each July to see the final stage of the Tour. I lived in London for 6 years, will be going back in December as well (beer research)

HELP ME MAKE PERFECT GRILLED CHEESE! I have tried and tried, but can’t seem to master this very easy skill. Can you give me step by step instructions? Oven temperature? Broiler? I need help! I asked Matt in the comments the other night when he made it, but I don’t believe he answered me….thank you so much!

Welcome home! I showed the classroom video to my kids – 1st and 4th grade – and they were in absolute awe. My 1st grader wanted to know if the kids have their own seats and desks in another room. My 4th grader said, “Mama! They could be in advanced math!” Thanks again for sharing all of this.
