Green, Orange + Flapjack

So excited to report that KODIAK CAKES are now in my Open Sky store!!!!! And this week – from 3.17 – 3.24 – they are 15% off. No coupon or rules – just fun! $14.65 gets you two boxes and a free bottle of raspberry syrup (all natural + hand-made with berry purees!)

So of course I featured a Kodiak cake for breakfast. These are the best whole grain pancakes I’ve ever had because they are so light and fluffy. If your husband/kids/YOU don’t like the density of whole grain pancakes, you will love these.

Today’s Mix

I made a 1/3 cup pancake portion (you just mix with water to activate) and topped it with a mixture of pumpkin (~1/3 a cup) and Organic Valley cottage cheese (~1/3 cup) and cinnamon, which I had heated in the microwave. Plus banana slices, chia seeds and a nice PB2 sauce spiked with a little Nuttzo!!

EarthFare coffee in my Bodum glass. Not much froth because I didn’t use any Fresh Market coffee. It has the best froth.

Workout

Ah yes, the GYM! I did 30 minutes of Stairmaster climbing today plus – you’ll be proud – a really hard core set of heavy weights! I even made it through two sets of 15 reps with the 17.5 lb weights. Feeling a little tired! I ended my workout with some foam rolling. I read this post by Shiela at LiveWell360 and figured out that I am doing it RIGHT! But I think I was going too fast. Today I slowed it down and it felt soooooooo good. I think I had a knot in my outer left thigh that I crunched out!

Another gourmet breakfast presentation and outstanding workout. Great start to a St. Patty’s day!

I forgot to wear any green at all today. You and Jenna both make that kodiak mix sound so good! I always make pancakes from scratch though…I found an awesome recipe to make a homemade mix with whole wheat flour and oatmeal, so I tend to use that.

It’s funny, people talk about loving “light and fluffy” pancakes, but for me, the denser, the better! I guess it’s because I love that chew of whole grains :-)

I need to find a foam roller for my tight quads! There are definitely some tender spots I could work out. :D

Just had to let you know that I’ve been reluctant to try OIAJ because I just thought it’d be too peanut-buttery but this morning, I looked at that almost empty pb jar and couldn’t resist. I like it a LOT – I think it helps get the pb mixed in with each bite a little easier. Thanks for this tip and all the others that keep me intrigued in the kitchen:)

How do you have a healthy appetite at breakfast? I’m usually making myself eat and choking it down, unless for some reason I’m starving, which is rare. Just wondering. I’d love to be able to eat such a great meal early in the day! Is it preference, maybe?

I always wake up hungry – unless I overeat the night before!! That’s a sign I overdid it at dinner. It’s a cycle and if you eat less at dinner, you might be hungrier for breakfast. That said, it may be a little genetics and preference as well.

And remember I went to the gym for an hour first!!

Thanks for the mention Kath! Foam rolling is so great, I really noticed a difference in both how my muscles felt and looked after I added it to my fitness routine – especially in my quads and calves! They used to be sooo tight and tender, now they are loose and long. :-)
