Great morning.

Great Sculpt workout with Victoria. [Tendon feels back to normal - whew.]

Great lunch!!!

I came home craving a Hugh Jass salad and found leftovers from Matt’s dinner last night. We had gotten a coupon for a free pound of shrimp at EarthFare and had an eggplant and I told him to make something. I have no idea what exactly he made, but it was sooooo good!! I’m pretty sure he sauteed the eggplant because this is the second time he’s made incredible eggplant pillowy marshamallows. I heated up the mixture and put it on top of a big salad

The base is green leaf lettuce with carrot and green pepper, drizzled in the usual: some EVOO (1/2 a tsp?) and agave (1/2 a tsp?) and a bit of Krazy Salt. Then I heated up the shrimp + eggplant and put that on with a small packet of Delta peanuts!!

Dessert #2. Healthy Apple Amie sent me a holiday card with a few treats – including this vegan cookie. I gave it a try after lunch – just a taste. It wasn’t bad, but it was definitely missing ze buttah!! Thank you Amie!!!

Video crew for Open Sky product project will be here any second. Gotta run!! Can’t wait to relax after a busy week that wasn’t supposed to be that busy!

I have been making chocolate chip cookies with grapeseed oil per Elana’s Pantry and find it to be a really nice sub. I don’t really miss the butter at all (I don’t eat dairy but not vegan) and even my “regular” eating friends like them. Give it a try sometime!

I love topping salads with warm things, especially in winter.

I tried whipped banana oatmeal this morning for the first time, and it was so good! I’m not a huge banana person unless I’m eating an actual banana so I was a little worried the taste would be too strong, but it actually didn’t taste like banana at all! Just mildly sweet and creamy. I’ll definitely be trying it again! Thanks for all the great tips!

It’s funny; I actually left your recipe for the whole wheat yoghurt pancakes open on my browser last night, thinking that pancakes would be a yummy Christmas breakfast this year, and the ones that you had this morning look even easier. I realise it’s probably awhile since you made the yoghurt pancakes, but did you have a preference in the recipes? And do you have any idea what the nutritional stats were for the ones you made this morning? The other recipe you said came in at around 80 calories or so per pancake, which seemed great.

I’d go with these. I haven’t made the yogurt pancakes in ages, and I might have made them only once. Today’s are simpler and more classic pancakes. But from what I said, the yogurt ones did sound good!

When I was home over Thanksgiving, I was reading one of your posts about a Hugh Jass salad. I asked my unsuspecting mom to read that part out loud to me and it cracked me up! Ha. I always call them mountain salads…mine are huge, too.

EGGPLANT: Don’t be scared to try it! It’s actually quite neutral in taste compared to some other veggies. I just love it!! The easiest way to cook it, I think, it to just cube it and sautee in some oil until it beings to brown. I’m pretty sure that’s what Matt does to get marshmallow pillows :)

Gorgeous salad!! I can’t get enough salads, simply LOVE them! I made eggplant last night, too. SO GOOD! Marshmallow-y goodness is the perfect description because they get so soft and sweet. :)
