Lots of fun things going on this afternoon!
First off was a frozen treat meet-up with Sarah! We met at Splendora’s for a gelato. On the way there, I just wasn’t in the mood for a dessert on a hot afternoon – but after seeing the flavor offerings – I changed my mind.
ROSE + WHITE CHOCOLATE LEMON was maybe the best ice cream combo I’ve had all year. It’s up there with Jeni’s Salted Caramel and the Blueberry Lemon Kohr Bros custard of recent trips! I’ve been so into rose since those Rose #31 products I had in Seattle!
Also totally impressed and happy to see that they use free-range grass-fed cow’s milk and cream in their gelato!
Next stop was a walk to Meade Park to meet Matt at the market!
I helped out for a bit and then headed back to the house to work on dinner.
And a good one it was!
These were supposed to be quesadillas, but I turned them into tostadas when I figured they would be too hard to pick up and eat with all the veggie layers.
I started with Whole Foods whole wheat tortillas, followed by lentils, then leftover roasted peppers, tomatoes, salt and southwestern seasoning and finally – the cheese!
Matt showed me that I had not made tostadas but in fact, they were soft tacos!
We ate them folded over and they were so good! I think it was the summer tomatoes and the super sharp white cheddar!

After dinner, Matt convinced me how fun it would be to accompany him to Beer Run for a Lagunitas Tap Tussle!
I kid, he was right – it was fun! Just talking about beer is fun : ) We reminisced about our visit to Lagunitas in 2010. Matt can remember every beer he’s ever tasted and every beer I’ve ever tasted so he was able to describe the ones we tried at the brewery.
Just a few more weeks till I’m tasting again!
We just walked home and my feet are hurting so much from lack of proper walkable footwear. I feel like a nerd when I wear my running shoes on outings, but I really should be wearing them given all this extra weight in ma belly!

Surprisingly, I was totally underwhelmed by Jeni’s Salted Carmel, but the Brambleberry Crisp flavor is amazing!! I would spend 9 dollars on that pint on a regular basis!

When I was training in Petaluma, I loved Lagunitas!! That’s right, I lived in Sonoma County for 6 months on the government’s dime. I want to go back and get stationed there.

Kath, I recently took a trip to Dublin and visited the original Guinness Brewery. I think it’s something Matt has to put on his bucket list… a real Irish Guinness is nothing like the Guinness we have here in the States. It’s pretty incredible, plus, he’d love the tour!!! (birthday/anniversary idea?

Ugh!! The footwear debate kills me! I feel like such a dork wearing my sneakers everywhere, but I love the comfort. I’m really on the lookout for a pair of comfy but cute shoes!
Never had or seen Rose flavor. I’ve been loving salted pretzel caramel. Dinner looks fabulous….summer tomatoes are the best!

So many comments that I want to make on this post. I don’t know what other flavors they had but I think I would have ordered exactly what you did. For my birthday dessert I had mango-tangerine and ameretto white chocolate. It has been so hot here that ice cream almost always sounds good. Dinner looks delicious, I always fill my tortilla way too full so it usually gets eaten with a fork or it just becomes more of a salad. Talking about beer and alcohol is fun, but being able to drink it whether you choose to or not is more fun. My kids are a year apart so I didn’t have a drink for about 2 years and I didn’t miss it that much, maybe during the hot weather. I say wear the running shoes for the support during the last few weeks. Are your feet or ankles swelling much? I was lucky that mine didn’t and my shoes were comfortable but I know some woman can only wear flip-flops. My kids are 5 and 6 and I wear my running shoes all the time, I need the support and most flip-flops and sandals are not comfortable to unless we are at the pool.
You should check out the “Blvd” shoes that Keen makes. I always wear them when I walk around town and don’t want to look like a nerd wearing tennis shoes. They are really supportive and comfortable (I do five miles in them totally fine, even without socks) and the Blvd styles are really cute. I have “Paradise Ballerina” in grey/pink. The “Crested Butte Slipons” are also super adorable.

I know, and seriously, they are SO comfortable. I wear mine to work every single day, but also when my husband and I go on long walks around town. I’m much bigger than you too and seem to always have feet issues, but these ones are great for me.
I second the Keen recommendation. I wear them when I’m on my feet all day in the lab and they’re seriously the only shoes that stay comfortable for hours and hours.

Dang, those tacos sound REALLY good. I’m a big lentil lover (they pretty much were used in the dinners I cooked for myself the entire 4 months I was studying abroad this past semester), yet somehow I never thought to use them with taco seasoning in tacos. Definitely trying that out. Any excuse to eat Mexican inspired food is welcome

I don’t cook lentils very often but I’m trying to use them more often. I bought a big bag of organic sprouted mixed lentils and I’m looking for something to make with them other then kale and lentil salad, this looks perfect!
